1 pkg. (7.5 oz.) OSCAR MAYER CARVING BOARD Applewood Smoked Turkey Breast, coarsely chopped
1/2 cup coarsely chopped roasted red peppers
1 tsp. dried basil leaves
1 egg
1 Tbsp. water

Steps:

  • Heat oven to 375ºF.
  • Unroll pizza dough on lightly floured surface. Roll out or pat into 12-inch square; top with cheese, turkey, peppers and basil, leaving 1/2-inch rim around all sides. Roll up; pinch seam and ends together to seal.
  • Place, seam side down, on foil-covered baking sheet. Beat egg and water; brush onto dough.
  • Bake 22 to 25 min. or until golden brown. Cool 10 min. before slicing.

8 slices stone-milled rye artisan bread, about 1/2-inch thick
5 to 6 tablespoons unsalted butter, softened
1/4 cup store-bought apple butter
1 pound sliced fresh roasted deli turkey
1/2 pound brie cheese, thickly sliced
1 bunch arugula, stems trimmed

Steps:

  • Spread each of 4 slices of bread with 1/2 tablespoon of butter. Now spread each with 1 tablespoon of the apple butter. Top each slice of bread with a couple of slices of turkey, cover that with 2 to 3 slices of brie (enough to cover the turkey), and finally, arrange 2 to 3 arugula leaves on top. Spread the remaining 4 bread slices with 1/2 tablespoon of butter and lay them, buttered sides down, over the cheese; press gently.
  • Heat a large cast-iron or other heavy skillet over medium-low heat. Add the remaining 1 tablespoon butter and let it melt to evenly coat the bottom of the pan. Add as many sandwiches as will comfortably fit (either 2 or 4) and cook 2 to 3 minutes until the bread is golden brown and the cheese begins to melt. Flip and cook 2 to 3 more minutes to brown the bread. (Add another tablespoon of butter and cook the remaining sandwiches, if you need to.) Cut the sandwiches in half and serve hot.

1 teaspoon water

  • In a large nonstick skillet, saute mushrooms and onion in oil until tender. Stir in mustard; set aside., On a floured surface, roll dough into a 15x10-in. rectangle. Four 1-inch cubes of Brie cheese, 1/2-inch thick
1 tablespoon olive oil
Salt and freshly ground pepper
Salt and freshly ground pepper
11 large granny smith apple, cored and sliced 1/2-inch thick crosswise
1 tablespoon vegetable oil

Steps:

  • To prepare the burgers:
  • Shape the meat firmly into 4 round uniform patties about 1 1/2inches thick. Make a small indentation in the center of each patty and place 1 cube of the cheese in each. Knead the meat slightly to cover the hole. Brush both sides of the burgers lightly with the olive oil and season with salt and pepper to taste. Heat a large cast iron skillet over medium high heat until just smoking. Cook the burgers to your liking. Brush the apples on both sides with the vegetable oil. 1 lb bulk pork sausage
1 (12 ounce) can Pillsbury refrigerated classic pizza crust
1/2 cup orange marmalade, medley
1 small Granny Smith apples, cored, sliced 1/8-inch thick
8 ounces brie cheese, cut in 1/4-inch slices
5 tablespoons chopped pecans
5 tablespoons dried sweetened cranberries

Steps:

  • 1. Heat oven to 375°F. Line 15x10-inch nonstick pan with sides with parchment paper. Spray parchment paper with Crisco® Original No-Stick Cooking Spray.
  • 2. In 12-inch nonstick skillet, cook sausage over medium-high heat 10 to 15 minutes, stirring frequently, until sausage is no longer pink; drain.
  • 3. Unroll dough in pan. Press dough almost to edges of pan. Spread 1/3 cup of the marmalade down center of dough in 4-inch-wide strip. Top with apple slices, half of the cheese slices, the sausage, remaining half cheese slices, 3 tablespoons of the pecans and 3 tablespoons of the cranberries.
  • 4. Using kitchen scissors or sharp knife, make cuts 1 inch apart on long sides of dough to within 1/2 inch of filling. Fold strips of dough diagonally over filling, alternating from side to side, stretching dough as needed. Bake 15 minutes.
  • 5. Meanwhile in small bowl, mix remaining marmalade, 2 tablespoons pecans and 2 tablespoons cranberries. Spread marmalade mixture over top and sides of partially baked stromboli. Bake an additional 10 to 15 minutes longer or until golden brown. Loosen stromboli from parchment paper; let stand 5 minutes.
  • 6. Serve with additional apple slices, pecans and cranberries, if desired. Serve warm.

4 green onions, thinly sliced

An original centrepiece that's great for entertaining - swap beef for turkey, and add fruit sauce and stuffing to your pastry roll

2 x 500g blocks all-butter puff pastry
plain flour, for dusting
1 egg, beaten
2 tbsp butter
1 leek, finely sliced
100g gammon, chopped
4 sausages, skins removed
5 sage leaves, chopped
85g fresh breadcrumbs
2 turkey breasts
200g brie, sliced
4-5 tbsp cranberry sauce

Steps:

  • For the filling, trim your turkey breasts: you want to create a long tube of meat in the middle of your wellington, similar in shape to a fillet of beef. You can use the trimmings in the stuffing, so don't worry about wastage. Once you have the correct shape, slice a pocket into the breasts deep enough so that the brie and cranberry sauce will stay inside, but don't cut all the way through. Divide the cranberry sauce and brie between the two turkey breasts, then chill while you make the stuffing.
  • For the stuffing, heat the butter in a frying pan and gently cook the leek for about 5 mins. Meanwhile, finely chop the turkey trimmings and add to the pan with the gammon. Cook for about 5 mins, then remove and allow to cool slightly. Mix with the sausagemeat, sage and breadcrumbs, then season.
  • Roll out the first block of pastry on a floured surface to about £1 thickness: you want a long thin shape that is about 5cm wider than turkey breast width and 5cm longer than length of turkey breasts placed end to end. Gently lift this onto a baking sheet and put the turkey breasts on top, followed by the stuffing. Roll out the second block of pastry, brush the edge of the bottom sheet with egg and lay the top one over. Trim edges to neaten, then crimp together. Can be made up to 1 day in advance and chilled.
  • Heat the oven to 200C/180C fan/gas 6. Brush the wellington with more beaten egg and, with a sharp knife, score a criss-cross pattern, but don't cut all the way through. Cook for 30 mins, then cover with foil and cook for 30-45 mins more. After 1 hr, check that the middle is hot by inserting a skewer for 5 secs - it should feel hot to the touch. Leave to rest for 15 mins, then slice to serve.

3 cups turkey, shredded
2 cups prepared stuffing
2 cups aged white cheddar cheese, shredded
2 tablespoons extra virgin olive oil
2 tablespoons sesame seeds
2 cups gravy

Steps:

  • Preheat oven to 400ºF.
  • Remove the pizza dough from the container, roll the dough out onto a floured worksurface, strech it slightly.
  • Cut the dough lengthwise and across, so that there are 4 sections.
  • Spread a spponful of cranberry sauce diagonally across each section of dough.
  • Layer the turkey, stuffing and cheese diagonally across the sections of dough. Don't overstuff the stromboli or they won't wrap up!
  • Wrap the two corner edges over the filling, so that the turkey mixture is running down the middle with some filling exposed at each end.
  • Brush with EVOO then sprinkle the sesame seeds on top and pat them into the dough. Place onto a baking sheet and bake for 20-25 minutes, until evenly golden. Serve with leftover hot gravy alongside.
