2 tablespoons vegetable oil
1/4 cup vegetable oil
1 large onion, chopped
2 garlic cloves, minced
2 tablespoons chili powder
1 1/2 lbs ground turkey
1 (28 ounce) can crushed tomatoes with liquid
1 cup low sodium beef broth
1 (15 ounce) can kidney beans, drained and rinsed
3/4 cup all-purpose flour
3/4 cup yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, beaten
3/4 cup milk
1 cup grated cheddar cheese

Steps:

  • Mist slow-cooker insert with cooking spray. Warm 2 tablespoons oil in large skillet over medium-high heat. Add onion and cook until soft. Add garlic and chili powder and saute until fragrant, about one minute. Stir in turkey, mixing well and breaking up large clumps of meat. Stir in tomatoes and broth. Add beans, bring to a boil and pour into slow cooker.
  • In a large bowl, combine flour, cornmeal, baking powder and salt. Mix well, then stir in egg, milk, 1/4 cup vegetable oil and cheese. Pour batter over chili in slow cooker and gently spread to cover. Cover slow cooker and cook on low until chili is hot and crust is lightly browned and cooked through, about 5hrs.

This is a simple yet delicious tamale pie dish that will satisfy even the hungriest people. My whole family loves it. You can use beef instead of ground turkey if you want too. Tastes great with ground turkey though. Enjoy!

1 cup yellow cornmeal
1 teaspoon sugar
1 cup cheddar cheese, shredded
1/3 cup milk
1 egg
2 teaspoons vegetable oil
1/2 lb ground turkey breast
1/2 cup green bell pepper, chopped
1/2 cup onion, chopped
1 teaspoon garlic, minced
1 teaspoon jalapeno pepper, finely chopped
1 (8 ounce) can tomato sauce
1 cup whole kernel corn, drained
2 teaspoons chili powder
1 1/2 teaspoons cumin, ground
1/8 teaspoon cayenne pepper
1 cup cheddar cheese, shredded
sour cream
salsa

Steps:

  • Heat oven to 350°F
  • Combine cornmeal and sugar; stir in 1 cup of cheese, milk, egg and oil. Stir just until moistened.
  • Press mixture on bottom and up sides of 9" pie plate sprayed with non-stick cooking spray.
  • In 10 inch skillet, cook ground turkey, green pepper, onion, garlic and jalapeno pepper over medium heat until turkety is no longer pink. Drain. Stir in tomato sauce, corn, chili powder, cumin and cayenne pepper.
  • Spoon turkey mixture into cornmeal crust.
  • Bake at 350F, 30-35 minutes.
  • Remove from oven; sprinkle with 1 cup cheese. Return to oven and bake until cheese melts.
  • Let stand 5 minute before serving.
  • Serve with sour cream and salsa if desired.

1 1/2 pounds lean ground beef
1 large onion, chopped
1green bell pepper, chopped
2 tablespoons chili powder
4 large garlic cloves, chopped
1 15-ounce can chili beans
1 8-ounce can tomato sauce
Cornmeal Mush

Steps:

  • Preheat oven to 350°F. Heat oil in large ovenproof skillet over medium heat. Add beef, onion, bell pepper, chili powder and garlic. Sauté until vegetables are tender and beef is no longer pink, breaking up beef with back of spoon, about 10 minutes. Add beans and tomato sauce and simmer until chili is slightly thickened and beef is cooked through, about 10 minutes. Spoon Cornmeal Mush over chili, covering completely.
  • Place skillet in oven and bake until topping is golden brown and chili is bubbling at edges, about 40 minutes. Let pie stand 10 minutes. Spoon onto plates and serve.
