3 cups canola oil
Twelve 6-inch corn tortillas, cut into sixths
Kosher salt
1/4 cup canola oil, plus more for oiling
4 ears corn, shucked
3 tomatillos, papery outer skin removed
4 scallions, thinly sliced
2 cloves garlic, smashed and finely chopped
One 15-ounce can black beans, drained and rinsed
1 jalapeno, seeded and chopped, optional
1/4 to 1/2 cup white vinegar
Kosher salt
1/2 bunch fresh cilantro, leaves roughly chopped

Steps:

  • For the chips: Heat the oil in a Dutch oven set over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Drop the tortillas in batches into the oil, being careful not to overcrowd. Fry until golden brown, a couple minutes total. Remove to a paper-towel-lined sheet pan and sprinkle liberally with salt. Repeat for the remaining tortillas.
  • For the salsa: Preheat the grill to medium. Use a wire grill brush to loosen any crud or soot from the grate. Wipe the grate down carefully with an oiled towel to remove any loosened crud.
  • Grill the corn and the tomatillos until they char and blacken on all sides. Remove from the grill and cool.
  • Cut the kernels from the cob and scrape any residual bits of corn off the cob. Scrape any really charred bits of skin off the tomatillos and then cut them into 1/2-inch chunks.
  • In a large bowl, combine the corn, tomatillos, scallions, garlic, black beans and jalapenos if using. In a small bowl or measuring cup, combine the vinegar and oil. Pour over the salsa and season with salt. Taste and adjust the seasoning, if needed. Toss in the cilantro and serve.

2 tablespoons Dijon mustard
6 (8 inch) whole wheat tortillas
1 ½ cups finely shredded iceberg lettuce
12 slices thinly sliced deli turkey
¾ cup shredded Swiss cheese
1 large tomato, seeded and diced
1 large avocado, sliced
6 slices bacon, cooked and crumbled

Steps:

  • Mix together the cream cheese and Dijon mustard until smooth. Spread each tortilla with about 2 tablespoons of the cream cheese mixture, spreading to within 1/4 inch of the edge of the tortillas.
  • Arrange about 1/4 cup of shredded lettuce on each tortilla, and press the lettuce down into the cream cheese mixture.   • Steam you veggies so that they are to your liking.

1 cup water
4 whole wheat tortillas (8 inches)

8 cups torn romaine (about 1 head)

  • Preheat oven to 400°. In a large skillet, cook and crumble turkey with pepper, celery and green onions over medium-high heat until no longer pink, 5-7 minutes. 4 turkey breast steaks (about 500g/1lb 2oz in total)
1 tbsp olive oil
330g can sweetcorn , rinsed and drained
1 red chilli , deseeded and finely chopped
zest and juice ½ lime
8 flour tortillas
150ml pot soured cream and salad leaves, to serve

Steps:

  • Sprinkle the spice mix evenly over the turkey. Heat the oil in a large pan, add the turkey and fry for 4 mins on each side until cooked through. Rest for 2 mins before thinly slicing.
  • Meanwhile, mix the sweetcorn with the chilli, lime zest and juice to make the salsa. Set aside until ready to serve.
  • Warm the tortillas following pack instructions. To serve, assemble each wrap by spreading with a little soured cream, if liked, then pile on some sliced turkey and add a spoonful of salsa. Roll up and serve with crisp salad leaves.

1/2 cup finely crushed tortilla chips (crushed in resealable plastic bag with mallet)

1 tablespoon chili powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 cup purchased chunky salsa
1/3 cup fresh corn kernels

Steps:

  • Oil grill rack. Prepare barbecue (medium-high heat). Combine turkey, crushed chips, 4 tablespoons cilantro, chili powder, salt, cumin, and pepper in large bowl. Using fork, mix together. Form 6 patties, each about 3 1/2 inches in diameter.

1/4 cup red pepper
1/4 cup onion
1 lb ground turkey
3/4 cup salsa
1 teaspoon chili powder
1 teaspoon garlic powder
6 corn tortillas
1 -2 cup monterey jack cheese

Steps:

  • Chop the red pepper and onion.
  • Brown the chopped red pepper and onion in some olive oil for about 5 minutes. Add the ground turkey, breaking up as you brown it.
  • Add the salsa, chili powder and garlic powder mixing til seasonings are combined.
  • Place some of the mixture down the middle of soft corn tortilla, top with some of the shredded cheese and roll up.
  • I used a George Foreman grill for the next step, I imagine you could use a frying pan but the grill works nicely to seal up the tortilla. Spray some cooking spray on a preheated grill and grill the rolled tortilla until slightly crispy and cheese has melted.
  • You could serve this with sour cream and additional salsa if you wish.
