1/2 medium onion (grated)
3 garlic cloves (minced)
1/4 cup minced flat-leaf parsley
1/4 cup whole wheat breadcrumbs
1 egg

2 teaspoons olive oil
1 small onion (chopped)

1 28 ounce can crushed tomatoes
1 14 ounce can crushed tomatoes

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat a baking sheet with cooking spray.
  • In a large bowl, stir together the ground turkey, onion, garlic, parsley, breadcrumbs, egg, oregano, salt and pepper.
  • Divide the mixture into 8 portions, form into balls and place on the prepared baking sheet.
  • Bake until the meatballs are firm to the touch and cooked through, 15 to 20 minutes.
  • Heat the olive oil in a large nonstick skillet set over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Stir in the garlic, oregano, salt and pepper, and cook for 1 minute.
  • Add the crushed tomatoes, bring the sauce to a boil, and then simmer for 10 minutes. Stir in the parsley and basil.
  • Nestle the meatballs into the sauce and spoon sauce over to coat the meatballs.
  • Serve over pasta or rice, or on their own.

Steps:

  • Combine parsley, onion, garlic, and red pepper paste in the bowl of a food processor; process until finely blended. Transfer to a large bowl. Add turkey, basil, thyme, cumin, cinnamon, allspice, salt, and pepper; mix until thoroughly combined. Form mixture into uniformly-sized meatballs.

1/3 cup Italian seasoned breadcrumbs
1/3 cup grated Parmesan

Steps:

  • Bring a large pot of lightly salted water to boil. Add the pasta and cook according to package directions. Drain.
  • Meanwhile, combine the turkey, breadcrumbs, Parmesan, egg, oregano, thyme and salt in a large bowl and mix thoroughly. Form into 1 1/2-inch meatballs; a small ice-cream scoop makes short work of forming the meatballs and prevents the mixture from getting overworked.

2 medium onions, chopped
3 celery ribs, chopped
1 red bell pepper, stemmed, seeded and chopped
2 cloves garlic, minced
1 (28-ounce) can crushed tomatoes, with juices

12 ounces whole wheat spaghetti (recommended: Barilla Plus)

Steps:

  • 1. Bring a large pot of salted water up to boil for the pasta. Heat the oil in a skillet with lid, over medium-high heat. Add the onion, celery, and red pepper and cook, stirring often, until soft, 3 to 4 minutes. Add the garlic and cook 1 minute longer. Transfer half of the vegetables to a large bowl.
  • 2. Add the tomatoes to the skillet and bring to a boil over high heat. Reduce the heat to medium-low and cook, stirring often, until thick and pulpy, 5 to 7 minutes. Season with salt and pepper. Transfer to a food processor and process until smooth (or use an immersion blender to puree). Return sauce to the pan. You should have about a quart of sauce.
  • 3. Meanwhile, add the turkey, spinach, oatmeal, and parmesan to vegetables. Season with 1/2 teaspoon salt, 1/4 teaspoon pepper, and 2 dashes Worcestershire. Mix well and form into 12 large meatballs. (The meatballs can be made several hours in advance and kept covered in the refrigerator). Add the meatballs the sauce, cover and cook, turning once or twice, until meatballs are firm to the touch, about 10 minutes.
  • 4. Cook pasta until al dente, about 12 minutes. Drain well and mix the pasta with about a third of the sauce. Divide evenly among 4 serving bowls and top with meatballs and additional sauce. Serve with grated Parmesan on top.

Serve them over spaghetti or polenta, or stuff them into a hero roll for a sandwich. Try to use ground dark meat turkey here if you can, it has a deeper, richer flavor than ground white meat.

1/2 cup grated Parmesan cheese, more for serving, if desired
1/2 cup panko or other plain dried bread crumbs
1/4 cup minced onion
1/4 cup chopped chives or basil
2 garlic cloves, grated on a microplane or minced
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
Pinch red pepper flakes (optional)
1 1/2 pounds ground turkey, very cold
1 large egg, beaten
3 tablespoons extra-virgin olive oil, more as needed
3 cups marinara sauce, more to taste

Steps:

  • In a large bowl, combine cheese, bread crumbs, onion, chives, garlic, salt, pepper, oregano and red pepper flakes, if using, and mix well. Add turkey and egg and blend with your hands until well mixed. If you've got time, cover mixture and chill for an hour or up to 24 hours. These are easiest to form into balls while very cold. Form into 28 meatballs, each about 1 1/4-inches in diameter.
  • Heat 2 tablespoons of the oil in a large sauté pan. When hot, add enough of the meatballs to fit in one layer without crowding, and brown on all sides, 5 to 8 minutes. Transfer to a plate, add another tablespoon of oil to pan and brown another layer of meatballs, transferring them to the plate as they brown. Repeat until all meatballs are browned, adding more oil to the pan as needed.
  • When meatballs are all browned, add marinara sauce to pan and bring to a simmer, scraping up the browned bits on the pan bottom. Return meatballs and their juices to pan, shake pan to cover the meatballs with sauce, and lower heat. Partly cover pan and simmer until the meatballs are cooked through, 15 to 20 minutes.
  • Serve hot, drizzled with more olive oil and sprinkled with more cheese, if you like.

1 medium onion, chopped
40g/1½oz white breadcrumbs
50ml/2fl oz milk
250g/9oz turkey mince
1 small apple, peeled and grated
1 tsp fresh thyme leaves
½ tsp salt and freshly ground black pepper
1 tbsp flour, for dusting
2 tbsp sunflower oil
1 tbsp olive oil
1 medium onion, chopped
1 clove garlic, crushed
400g/14oz tin chopped tomatoes
100ml/3½fl oz water
1 tbsp tomato purée
2 tsp sugar
¼ tsp dried oregano
pinch dried chilli flakes
salt and freshly ground black pepper
250g/9oz dried spaghetti
chopped fresh parsley or basil

Steps:

  • For the meatballs, heat the oil in a pan and fry the onion for about 10 minutes until softened.
  • Meanwhile, soak the breadcrumbs in the milk for 10 minutes in a large bowl.
  • For the sauce, heat the oil in a pan and fry the onion for about 10 minutes until softened. Add the crushed garlic and sauté for one minute.
  • Add all the remaining ingredients and simmer, covered, for seven minutes.
  • For the meatballs, add the turkey mince, grated apple, thyme, sautéed onions, salt and freshly ground black pepper to the soaked breadcrumbs and mix together.
  • Using floured hands, form teaspoons of the turkey mixture into small balls.
  • Heat the sunflower oil in a frying pan and brown the meatballs. Transfer the meatballs to the pan of tomato sauce and simmer, uncovered, for 8-10 minutes.
  • Cook the spaghetti according to the instructions on the packet. Drain and toss with the sauce. Sprinkle with a little chopped parsley or basil and serve.

3 tablespoons olive oil
1 onion, chopped
One 16-ounce can San Marzano diced tomatoes
One 16-ounce can San Marzano tomato sauce

1 loaf Italian bread, chopped
1 cup milk
1 cup grated Parmesan
1 bunch fresh basil, large stems removed, chopped
1 bunch fresh parsley, chopped
Vegetable oil, for frying

Steps:

  • Preheat the oven to 350 degrees F. Halve the squash lengthwise and remove the seeds.
  • Place on a baking sheet, cut-side up. Roast the squash until softened, 30 to 40 minutes depending on size.
  • Heat a large, deep skillet over medium heat and add the olive oil. Saute the garlic and onions until translucent. Add the tomatoes and simmer on low heat, about 45 minutes. In a large bowl, combine the turkey, bread, milk, Parmesan, basil and parsley and mix well. Form into 2-inch meatballs.

Add tomato paste, tomatoes, chipotles, oregano, rosemary, and salt. Bring all the ingredients to a low boil, reduce heat and cook for approximately 15 minutes, until liquid has evaporated slightly.   • Meanwhile, remove rosemary sprig from sauce and add fresh basil. You'll be busy, but not frantic, and rewarded not only with the twirling of pasta in half an hour, but with the satisfaction that you made every second count.

2 tablespoons olive oil
12 ounces ground beef
6 ounces Parmesan, or about 1 1/2 cups
1 bunch fresh parsley
1/4 cup bread crumbs
1 egg
Black pepper
1 large onion
3 garlic cloves
6 cups canned crushed tomatoes (a little less than two 28-ounce cans)
3 bay leaves
1 pound spaghetti

Steps:

  • Bring a stockpot of water to a boil and salt it. Put the olive oil in a large skillet over medium heat.
  • Put the ground beef in a medium bowl. Grate the cheese, put 1 cup over the meat and reserve the rest, about 1/2 cup. Chop 1/2 cup of parsley and add all but 2 tablespoons to the meat mixture; save the rest of the parsley for another use. Add the bread crumbs, crack in the egg, and sprinkle with salt and pepper. Gently mix until everything is just combined.
  • Raise the heat to medium-high; use 2 teaspoons to drop rounds of the meatball mixture into the skillet without touching one another if you can help it. Adjust the heat so the meatballs sizzle but don't burn and cook undisturbed until they're lightly browned on the bottom, 5 to 6 minutes.
  • Meanwhile, trim, peel and chop the onion; scatter it around the meatballs. Peel and mince the garlic and put it on top of the onions.
  • When the meatballs are browned on the bottom and the aromatics begin to soften, add the tomatoes to the skillet, along with the bay leaves and a sprinkle of salt and pepper. Adjust the heat so the mixture bubbles gently but steadily, then cover the skillet and cook until the meat cooks through, about 8 minutes. Remove the lid and let the sauce bubble vigorously to thicken for another 5 to 10 minutes, essentially while the pasta cooks. Stir only as needed and carefully if you do.
  • Add the pasta to the boiling water and stir. Start tasting after 5 minutes. When the pasta is tender but not mushy, drain it, reserving some cooking water. Return the pasta to the pot.
  • Move the meatballs to one side of the skillet with a spatula and stir the sauce; taste and adjust the seasoning. Discard the bay leaves and spoon about half the sauce into the pasta pot. Toss the pasta over low heat, adding a splash of cooking water to make it saucier if you like.
  • To serve, divide the pasta among 4 plates or bowls; top with the meatballs and the remaining sauce, and sprinkle the remaining Parmesan and parsley over the top.

12 ounces ground turkey
4 ounces turkey sausage, casings removed, crumbled
6 tablespoons grated Parmesan cheese
4 tablespoons chopped fresh parsley
4 garlic cloves, minced
2 teaspoons chopped fresh thyme
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons olive oil
1 cup chopped onion
1 28-ounce can crushed tomatoes
10 ounces spaghetti

Steps:

  • Mix turkey, sausage, 4 tablespoons cheese, 2 tablespoons parsley, 2 garlic cloves, thyme, salt and pepper in medium bowl. Using moistened hands, form mixture into 1-inch balls. Heat oil in large nonstick skillet over medium-low heat. Add onion; sauté 5 minutes. Add 2 garlic cloves; stir 1 minute. Add tomatoes; bring to boil. Reduce heat to medium and simmer until sauce thickens slightly, about 12 minutes. Season with salt and pepper. Add meatballs to sauce. Reduce heat to medium-low, cover and simmer until meatballs are cooked through, about 15 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta; return to pot. Add some of sauce to pasta and toss to coat. Transfer pasta to bowl; top with meatballs and remaining sauce. Sprinkle with remaining parsley and cheese.

1/4 cup egg substitute
1/2 cup seasoned bread crumbs
1/3 cup chopped onion
1/2 teaspoon pepper
1/4 teaspoon salt-free seasoning blend
1-1/2 pounds lean ground turkey
SAUCE:
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 small zucchini, chopped
1 medium green pepper, chopped
1 medium onion, chopped
1 can (6 ounces) tomato paste
2 bay leaves
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1 package (16 ounces) whole wheat spaghetti

Steps:

  • In a large bowl, combine the egg substitute, bread crumbs, onion, pepper and seasoning blend. Crumble turkey over mixture and mix well. Shape into 1-in. balls; place on a rack coated with cooking spray in a shallow baking pan. Bake at 400° for 15 minutes or until no longer pink., Meanwhile, in a 4- or 5-qt. slow cooker, combine the tomato sauce, tomatoes, zucchini, green pepper, onion, tomato paste, bay leaves, garlic and seasonings. Stir in meatballs. Cover and cook on low for 6 hours. Cook spaghetti according to package directions; serve with meatballs and sauce.
