This recipe has been in our family for years. We like turnips with turkey, so my mother used to serve this side dish with our turkey dinner at Christmas. Then I served this dish, and now my daughter, who has taken over preparing Christmas dinner, is carrying on the tradition.

3 medium turnips, peeled and cubed
4 tablespoons butter, divided
2 large eggs
3 tablespoons all-purpose flour
1 tablespoon brown sugar
3 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon pepper
Dash ground nutmeg
1/2 cup dry bread crumbs

Steps:

  • Preheat oven to 375°. Place turnips in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 10-12 minutes or until tender. Drain. , In a small bowl, combine turnips, 2 tablespoons butter and eggs. Combine flour, brown sugar, baking powder, salt, pepper and nutmeg; add to turnip mixture and mix well. Transfer to a greased 8-in. square baking dish. , Melt remaining butter; toss with bread crumbs. Sprinkle over top. Bake, uncovered, 25-30 minutes or until a knife inserted in the center comes out clean. Serve immediately.

For those of us watching our calories and carbs, turnips make an excellent alternative to potatoes. A 4 ounce turnip has only about 40 calories and a negligible impact on blood sugar levels. Turnips are available year round, but the best ones are available from late summer thru mid autumn.

2 large turnips
1 tablespoon olive oil
2 tablespoons light sour cream
2 teaspoons spice hunter poultry seasoning
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 400 degrees. Cut the stem end from turnips. Rub each with olive oil and wrap tightly in aluminum foil. Bake for approximately 90 minutes or until insides are soft enough to scoop out.
  • Scoop out insides of each turnip, leaving the shell intact. Mash & whip the insides with the sour cream, spices and seasonings. When the insides are a creamy consistency, carefully spoon them back into shells. Reduce oven heat to 350 degrees and bake the stuffed turnips for 20-30 minutes until heated thru.

4 large baking potatoes, scrubbed
8 tablespoons (1 stick) butter
2 teaspoons salt
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne
1/4 cup milk, or as needed
2 egg yolks, beaten
1 cup shredded sharp Cheddar

Steps:

  • Preheat the oven to 400 degrees. Bake the potatoes on a rack for 1 hour or until soft. Allow them to cool slightly.
  • Cut the potatoes in 1/2, scoop out the pulp, and place in a mixing bowl, setting the skins aside. Add the butter, salt, black pepper, and cayenne. Mash well, adding enough milk to make a fairly stiff mixture. Add the beaten egg yolks and stir well.
  • Spoon the mixture into the potato skins and top with shredded cheese. Place on a cookie sheet and bake for 20 minutes, until well browned.

1 1/2 tablespoons milk
1 1/2 tablespoons butter
1 cup sour cream
5 ounces sharp Cheddar cheese, grated (about 1 1/4 cups)
1/2 tablespoon garlic salt
Salt and pepper
3 slices bacon, cooked and crumbled
1/4 cup finely chopped green onion

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash the potatoes and pierce them with a fork. Rub the potatoes with the olive oil and place them on a jellyroll pan or a large cookie sheet with a rim. Bake the potatoes for 45 minutes to an hour, or until done. Remove the potatoes from the oven and cut them in half lengthwise. Set aside. Reduce the temperature of the oven to 350 degrees F.
  • When the potatoes are cool enough to handle, scoop out the potato flesh into a large electric mixing bowl. Add the milk, butter, sour cream, cheese, garlic salt, and salt and pepper to taste. Mix until creamy. Divide the mixture evenly and spoon it back into the potato shells. Return the potatoes to the oven for 15 minutes. Remove from the oven and garnish with the bacon and green onion.

I make these often, they are very good, and the ingredients can easily be doubled for more potatoes, when I make these I always double the recipe, what I don't use I just freeze them on a tray, I just defrost in the fridge overnight and pop them in the oven when I am ready to use them, they freeze well. I have also added in some finely chopped cooked bacon to the potato mixture.

6 large russet potatoes, baked (purchase the largest potatoes you can find!)
1/4 cup milk
1/4 cup butter
1 small egg, slightly beaten
1/4-1/3 cup parmesan cheese
2 green onions, finely chopped
salt and pepper
1 pinch nutmeg
parmesan cheese, for topping
grated cheddar cheese, for topping

Steps:

  • Set oven to 350 degrees.
  • Grease a baking sheet.
  • Bake the potatoes for about 1 hour, or until soft; cool slightly.
  • Cut off the tops of the potatoes, spoon out the pulp, discard the tops.
  • Scoop out the pulp from the potatoes, leaving about 1/4-inch of potato around the skin.
  • Place the pulp in a mixing bowl.
  • In a saucepan (or the microwave) combine milk and butter, heat just until the butter has melted and the milk is warm.
  • Pour the milk/butter mixture over the potato pulp; beat until very smooth (I use a stand mixer for this).
  • Add in egg and 1/4 cup grated Parmesan cheese, chopped green onions and a pinch of nutmeg; mix well to combine, season with salt and pepper.
  • Stuff the potato shells with the mixture.
  • Sprinkle about 3 tablespoons grated Parmesan cheese on top.
  • Place the potatoes on a well greased baking sheet.
  • Bake for 15 minutes, then remove from oven, sprinkle with cheddar cheese and place back in the oven for 5-7 minutes, or until the cheese has melted.
  • *NOTE* use only 1 egg for a doubled recipe, do not use 2 eggs.
  • Delicious!

1/4 to 1/2 cup milk

½ pound bacon
4 tablespoons butter
1 large onion, chopped

½ cup shredded Cheddar cheese

3/4 cup warm water
3/4 cup milk
1/3 cup sugar
2 1/4 teaspoons salt
1/4 cup melted shortening
4 1/2 cups sifted flour

Steps:

  • Scald milk and cool to lukewarm.
  • Dissolve yeast in warm water.
  • Stir in milk, sugar, salt, shortening, and 2 1/2 cup flour.
  • Beat until smooth.
  • Stir in remaining flour until it makes a soft dough that leaves the sides of the bowl.
  • Knead 4 minutes.
  • Put in greased bowl and turn greased side of dough up; cover and let rise until doubled, about 1 1/2 hours.
  • Punch down and divide into 24 pieces of equal size.
  • Shape into rolls.
  • Place about 3 inches apart on greased baking sheet or in greased muffin tins.
  • Cover and let rise until doubled, about 45 minutes.
  • Bake in a very slow oven (275°F) 20 to 30 minutes.
  • DO NOT LET ROLLS BROWN.
  • Remove from baking sheet and cool at room temperature.
  • Wrap rolls in plastic wrap or aluminum foil and store in refrigerator for several days or in freezer for 2-3 months.
  • To serve: Brown rolls in hot oven (400°F) 7 to 10 minutes.

These are easy to cook and assemble and can be frozen to be used as needed. I use large potatoes, so 1/2 stuffed potato shell is one serving.

1/2 cup sour cream
1/4 cup milk
4 tablespoons butter
1/2 teaspoon refrigerated minced garlic

2 green onions (to garnish)

Steps:

  • Bake potatoes in a 375 degree oven 1 to 1 1/2 hours until done.
  • When potatoes are done let them cool 10-15 minutes.

  • Using a spoon carefully scoop out the potato, leaving a little on skin so they don't break. Save the skins.

At its simplest, a twice-baked potato is creamy, cheesy mashed potatoes cradled in crisp, salty skin. That's the recipe you see here: comforting, satisfying and pretty much ideal. But if you dream of other flavor combinations, like bacon, scallions and sour cream; blue cheese and chives; or cauliflower and Parmesan, just follow the recipe below and stir in any additions (reserving some for garnish) after the dairy in Step 3. Shower the top with more grated cheese if you like, then bake, garnish and dig in.

2 tablespoons canola or other neutral oil
Kosher salt
1/2 cup whole milk
1/2 cup sour cream

  • Position racks in the top and middle of the oven, and heat oven to 400 degrees. Take the butter out of the refrigerator to soften. Scrub the potatoes clean and pat them dry.   • Mound each potato skin with a quarter of the filling. Bake the potatoes until warmed through, about 10 minutes. Serve immediately.

  • 1. Bring a large pot of water to a boil. Cut off root ends of turnips so they lie fl at. Peel, then scoop out insides of turnips to a depth of about two inches. Chop into small pieces and place in a small bowl.
  • 2. Boil turnip shells for 10 to 15 minutes or until just tender. Drain. 3. Meanwhile, sauté the chopped turnips, garlic, and jalapeño in olive oil until tender. Remove from heat. Mix in the cheese, yogurt, sour cream, and seasonings. 4. Place whole turnips on a lightly greased baking sheet. Scoop turnip mixture back into turnip shells. Broil for four to five minutes or until bubbly. 5. Remove from oven and garnish with chives.
