EASY CHEESY SPINACH



Easy Cheesy Spinach image

2 tablespoons unsalted butter
1 medium white onion, finely chopped
1 cup (8 ounces) cream cheese, softened
2 (10-ounce) boxes frozen spinach, thawed and squeezed dry
1 teaspoon freshly grated nutmeg
Kosher salt and ground white pepper

Steps:

  • Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
  • BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

1 tablespoon olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese
½ cup shredded mozzarella cheese
¼ cup shredded Cheddar cheese
2 dashes Worcestershire sauce
salt and ground black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese.
  • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.

This is a quick and easy side dish I made up to complement any fish or chicken dish with spinach, diced tomatoes, and that rich Roquefort cheese (any blue cheese will work).

1 small yellow onion, sliced
1 (14.5 ounce) can diced tomatoes, drained
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 pinch salt and pepper to taste
3 ounces Roquefort cheese

Steps:

  • Heat the olive oil in a skillet over medium high heat, and saute the onion until tender. Stir in the tomatoes and spinach, and continue cooking until the spinach is wilted. Season with salt and pepper. Stir in the Roquefort cheese, and allow to melt slightly before serving.

2 large eggs, lightly beaten
1 cup whole milk
1/4 cup butter, melted

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cups shredded Monterey Jack cheese

Steps:

  • In a large bowl, whisk the flour, eggs, milk, butter, onion, Parmesan cheese, garlic, salt and cayenne until combined. Fold in spinach and Monterey Jack cheese. Transfer to a greased 1-1/2-qt. baking dish., Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Serve immediately.

Fresh mint and lemon peel are combined with feta and chevre in this topping. Can be prepared in 45 minutes or less.

Yield Makes about 1 1/2 cup

Number Of Ingredients 6

1 garlic clove, peeled
1 10-ounce package frozen chopped spinach, thawed, drained, squeezed dry
8 ounces soft fresh goat cheese (such as Montrachet)
6 tablespoons crumbled feta cheese (about 2 ounces)
2 teaspoons chopped fresh mint
1 teaspoon grated lemon peel

Steps:

  • With machine running, drop garlic through feed tube of processor and finely chop. Add all remaining ingredients and process until well blended and almost smooth. Season to taste with salt and pepper. Transfer spread to bowl. (Can be prepared 2 days ahead. Cover and refrigerate. Let stand at room temperature 1 hour before serving.)

  • Melt the butter over medium heat & when bubbly add onion& garlic.
  • Saute for 2 minutes.

  • Add spinach, & nutmeg.
  • Cover with remaining cheese.

1 unbaked pie pastry (9 inches)
1/2 cup finely shredded Swiss cheese
1/2 cup chopped fresh spinach
1/2 cup sliced fresh mushrooms
1 can (5 ounces) fully cooked ham, flaked
3 eggs
1 cup half-and-half cream
2 teaspoons all-purpose flour
1/2 teaspoon salt
1/4 cup shredded cheddar cheese

Steps:

  • Line the unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil. Bake 5 minutes longer. Remove from the oven; reduce heat to 350°. Combine Swiss cheese, spinach, mushrooms and ham; sprinkle over crust. In a bowl, beat eggs, cream, flour and salt until smooth; pour over spinach mixture. Sprinkle with cheddar cheese. 2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Process spinach, oil and garlic in food processor until well blended. Add next 3 ingredients; process until well blended.

1 dash hot pepper sauce

Steps:

  • In food processor while running, add all ingredients and process until well blended.
  • Let stand at room temperature 1 hour before serving.
  • Spread can be made one day ahead. Cover and refrigerate if so but make sure it stands out for 1 hour before serving.
  • Serve on crackers, baguette slices or vegetables that you can dip with.
