BUTTERCRUST PASTRY DOUGH
I used a food processor for this tender, flaky pastry dough as it makes it so much easier to achieve the gorgeous 'breadcrumb' texture as you add the ice water. If you use the dough for a savory recipe, I'd cut down the sugar a bit, but not omit it entirely. The most important thing to remember is to use frozen butter and ice cold water.

Steps:
- Place blade insert into bowl of food processor. Add 1 cup flour. Sprinkle frozen butter cubes over flour. Add remaining 1 cup flour, sugar, and salt. Cover. Pulse in short bursts on and off until butter is broken into small pieces and looks crumbly, about 1 minute. Drizzle in ice water. Pulse with longer pulses, on and off, until mixture turns pale yellow and looks like crumbs, about 10 to 12 seconds. Scrape down sides with spatula. Pulse once or twice more.
- Transfer mixture onto a work surface. Bring pieces together to form a tight round ball of dough. Flatten slightly and wrap in plastic wrap. Refrigerate at least 1 hour or overnight before rolling out.

Steps:
- Blend together flour, butter, sugar, and salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Drizzle 3 tablespoons ice water evenly over mixture and gently stir with a fork (or pulse) until incorporated.
- Squeeze a small handful of dough: If it doesn't hold together, add more ice water, 1/2 tablespoon at a time, stirring (or pulsing) until incorporated. Do not overwork dough, or pastry will be tough.
- Gather all dough together with pastry scraper. Press into a ball, then flatten into a 5-inch disk.
- Wrap dough in plastic wrap and chill until firm, at least 1 hour.
- If you're making two desserts that call for this pastry dough, you can make a double batch.
- Pastry dough can be chilled up to 2 days or frozen, wrapped well, up to 3 months.
FLAKY PASTRY DOUGH

- Add the flour and salt to a large bowl and stir to combine. Add the butter and toss to combine. With your fingers, begin to "smush" the butter into flat pieces. Continue smushing until all the butter is flattened but none of the pieces are larger than a quarter. The flour will look like coarse cornmeal.
- Add the water, quickly folding it in with a wooden spoon to distribute the moisture. (Do not stir vigorously--the dough should appear shaggy.) Use your hands to break up any large clumps of moisture. Then use your knuckles or a palm to smear the dough up the sides of the bowl (a technique known as fraisage). This distributes the butter over a larger surface to achieve larger flakes and compact the dough. Once you've gone around the bowl one time, fold the dough over itself a few times to pick up any dry bits from the bottom. Gently press the dough into a disk. (Note: The dough should remain very cool to the touch throughout the process. If it approaches room temperature, refrigerate it for 5 to 10 minutes to chill.)
- Transfer the dough to a lightly floured work surface and roll out to a 10-by-12-inch rectangle. Perform a letter fold by folding one of the short ends towards the middle and the other short end over the first, like folding a business letter.
- Turn the dough 90 degrees, so the long side faces you, and perform a second letter fold. Turn the dough 90 degrees again; perform a third letter fold.
- If the dough still feels cool, it can be used immediately. Otherwise, wrap it in plastic wrap and chill for at least 20 minutes. The dough can be refrigerated for up to 1 week or frozen for up to 1 month.
UNCLE BILL'S PYRAHI DOUGH
This recipe goes back to the good old days. My grandmother taught me how to make the pyrahi when I was very young.

Steps:
- In a small bowl, measure water, add yeast,1/2 teaspoon sugar and let stand for about 10 minutes or until frothy.
- In a large mixing bowl, add warmed milk and yeast and stir gently to incorporate.
- Add beaten eggs, 2 tablespoons of sugar, salt, olive oil and mix gently.
- Add flour, 1 cup at a time mixing well after each addition.
- If dough is too sticky, add a bit more flour.
- Turn dough out onto a lightly floured surface and knead several times until dough is smooth.
- Place dough in a lightly greased bowl, turn once to coat.
- Cover with plastic wrap and place dough in refrigerator for 4 hours or longer.
- When ready to use, remove from refrigerator and punch dough down.
- Divide dough into 24 equal pieces and roll into balls that will be the size of a golf ball.
- Roll dough out into rounds on a lightly floured surface to about 1/8" thickness.
- Place about 3 tablespoons of filling mixture of your choice in the center of each round.
- Fold the left and right side of the round towards the center, pinching the dough to crease.
- Bring the other 2 edges towards the center and pinch again to crease.
- Leave a space of about 1/4" slit in the center of the pyrahi.
- Slightly flatten the pyrahi with the palm of your hand.
- Place pyrahi on a lightly greased cookie sheet, cover with a damp cloth and let rise for 25 to 30 minutes.
- Bake in preheated 400 F oven for 25 minutes or until lightly browned.
- Remove from oven and brush with melted butter.
- Serve with melted butter and sour cream or yogurt.
- To re-warm the pyrahi, heat a frying pan on medium heat, add 1 tablespoon of butter, add the pyrahi, cover and fry for 1 1/2 to 2 minutes, turn over and fry for another 1 to 1 1/2 minutes.

- If using strawberries, remove hulls, wash and slice.
- If using raspberries, huckleberries, use whole.
- If using rhubarb, cut into small pieces.
- If using cherries, pit first.
- If using peaches or apricots, remove stones and cut fruit into pieces.
- In a mixing bowl, mix together sugar and tapioca starch, mix well to blend.
- Add sugar/tapioca starch mixture to fruit and mix well to coat.
- Let sit for 5 minutes before using.
- Fill pastry cups with 1 1/2 tablespoons of your choice of fruit mixture.
- Add 1/2 teaspoon of granulated sugar to each tart.
- Bake in preheated 400 F oven for 12 to 15 minutes or until crust is just lightly browned.

UNCLE BILL'S PASTRY DOUGH FOR PEROSHKY
I have been using this recipe for the past 10 years. The pastry is a bit more difficult to handle, but the tarts taste super great.

Steps:
- In a mixing bowl, combine cake and pastry flour and salt.
- Add Crisco and using a pastry blender, cut in until mixture is uniform and crumbly.
- In a small bowl, beat egg.
- Add water and white vinegar and mix to blend.
- Add egg mixture to flour and mix until dough is evenly moist.
- Divide dough in half and form into balls.
- Wrap one dough ball in plastic wrap while you are using the other one.
- On a lightly floured surface roll dough out to about 1/8" thickness.
- Using a 3 1/2" round cookie cutter or any tool that would be about this size, cut out rounds.
- Prepare a medium size muffin baking tin by spraying with a non stick vegetable spray.
- Carefully lift dough rounds with a spatula and place rounds into the muffin tins.
- Gently press down and around the sides of the muffin tin to shape.
- Place about 2 tablespoons of fruit mixture into the prepared dough cup keeping fruit mixture down about 1/4" from the top, (DO NOT OVERFILL).
- Using the tynes of a fork, press the top edge of the pastry to form a crinkled pattern.
- Add 1/2 teaspoon of sugar (if desired) onto the fruit.
- Bake in a preheated 400 F oven for 12 to 15 minutes or until the crust is just lightly brown.
- Let sit for about 5 minutes to cool slightly.
- Carefully run a small sharp knife around the edges and remove tarts onto a wire rack to cool.
- The crusts will be quite short, so be carefull when removing the tarts from the muffin tins.
- Serve with butter, ice cream, sour cream, yogurt, whipping cream or whipped cream.
- These tarts are good to eat hot or cold.
