Oil, for greasing the baking sheets
3 cups biscuit mix, such as Bisquick
1 pound spicy sausage (uncooked)
1 tablespoon chopped fresh rosemary
8 ounces aged white Cheddar, grated
8 ounces sharp yellow Cheddar, grated
1 tablespoon hot sauce, such as Tabasco (or to taste)

Steps:

  • Preheat the oven to 400 degrees F. Grease 2 baking or cookie sheets and set aside.
  • Combine the biscuit mix, sausage and rosemary in a large bowl. Mix with your hands, then work in the white and yellow Cheddars and hot sauce. Form into balls the size of walnuts and place on the prepared baking sheets. Bake until cooked through, about 20 minutes. Serve warm.

Nibble on these cheesy bites as a party appetizer or afternoon snack. Bake all 60 pieces because these savory morsels will disappear quickly.
Ingredients
Cooking Spray
10 ounces bulk Hot Italian Sausage
3 cups Self-Rising Flour
6 tablespoons Unsalted Butter
1 1/2 cups Buttermilk
1 tablespoon Tabasco Sauce
1 1/4 cups grated Sharp Cheddar Cheese

Steps:

  • Directions Preheat the oven to 400F and arrange the racks in the upper and lower third of the oven. Coat two baking sheets with the cooking spray. Cook the sausage in a medium skillet over medium high heat, breaking it up with a wooden spoon, until cooked through and no pink remains. Using a slotted spoon, transfer the sausage to a paper towel-lined plate and set aside. Combine the flour and butter in a food processor and pulse until the mixture resembles coarse meal with some larger chunks of butter remaining. Drizzle in the buttermilk and tabasco and pulse just until the dough comes together. Turn the dough out into a large bowl and fold in the sausage and cheese. Using two spoons, shape the dough into walnut-size balls and drop on to the baking sheets. Bake, switching and rotating the pans halfway through baking until golden and cooked through, about 15 minutes. Let cool on the baking sheets for 5 minutes, then use a spatula to remove and transfer to a platter. Bake the remaining sausage bites in the same manner. 1 green pepper, diced

2 tablespoons butter
1 teaspoon oregano.
1 teaspoon basil
1/2 teaspoon black pepper
2 teaspoons olive oil

Steps:

  • Preheat the oven to 375°F. In a pan, arrange the sausage, potatoes and peppers and place the butter over the top in small cubes. Drizzle with olive oil and season on top. Bake covered for 40 to 50 minutes.

I wanted a good meat sauce, but was having trouble finding that one recipe that knocked my socks off, so I altered a few and came up with my own. Of course, it goes well with all types of pasta and in the traditional Spaghetti ala Bolognese. But I also use this as my sauce in lasagna, baked ziti, pizza - you name it. It gives everything that extra oomph!

2 tablespoons olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 stalk celery, finely chopped
2 cloves garlic, minced
½ pound ground beef
½ cup red wine
½ cup milk
1 pinch ground nutmeg
1 (28 ounce) can crushed tomatoes
1 tablespoon white sugar
1 teaspoon dried oregano
salt and pepper to taste

Steps:

  • Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion, carrot, celery, and garlic until the vegetables are soft and beginning to brown, about 8 minutes. Place the ground beef into the pan, and cook and stir, breaking the meat apart as it cooks, until well browned, about 10 more minutes. Pour in the red wine, bring to a boil, and cook until the liquid is almost absorbed, 10 to 15 minutes. Pour in the milk and nutmeg, and cook, stirring occasionally, until the milk is almost absorbed, 10 more minutes.
  • Stir in the crushed tomatoes, sugar, and oregano, bring to a simmer, and reduce heat to low. Simmer uncovered 1 hour, stirring occasionally. Season to taste with salt and pepper.
