1 cup long-grain white rice, rinsed
1 cinnamon stick, preferably Mexican, broken into pieces, plus more for garnish
1/2 cup sugar, or to taste
1 tablespoon ground cinnamon, preferably Mexican, for garnish

Steps:

  • Combine the rice and cinnamon stick with 4 cups water in a blender; pulse to coarsely grind. Transfer to a large bowl and add another 4 cups water; soak at room temperature for 3 hours.
  • Puree the rice mixture in a blender in batches until smooth. Strain through cheesecloth or a fine sieve into a pitcher. Mix in the sugar; chill.
  • Stir the horchata well before serving. Pour into ice-filled glasses; garnish with cinnamon sticks and a dusting of ground cinnamon.

10 cups water, divided
4 cinnamon sticks
1 cup soy milk
1 tablespoon vanilla extract
1 cup white sugar

Steps:

  • Place about half the rice and 2 cups water in a blender; pulse until rice is roughly ground.
  • Pour about 3 cups more water in blender and add 2 cinnamon sticks; blend until cinnamon sticks are broken to pieces.
  • Pour rice mixture into a large pitcher.
  • Repeat the steps until all the rice, water, and cinnamon sticks are blended and poured into the pitcher.
  • Cover and refrigerate pitcher for at least 4 hours to overnight.
  • Strain rice mixture through a sieve into another pitcher or bowl and discard rice and cinnamon.
  • Stir soy milk, sugar, and vanilla extract into the strained liquid; chill until ready to serve.

1 cup milk
1/2 cup blanched almonds
1/2 cup white rice
2 cinnamon sticks, plus ground cinnamon or grated cinnamon stick for serving
3/4 cup sugar
Ice, for serving

Steps:

  • Bring 2 cups water, the milk, almonds, rice and cinnamon sticks to a boil in a medium saucepan over high heat. Reduce the heat to low, cover and simmer until the rice is tender, about 30 minutes. Remove the cinnamon sticks and cool completely.
  • Working in batches, if necessary, carefully transfer the mixture to a blender and puree until smooth. Pour into a pitcher. Stir in the sugar and add enough water to make a total of 8 cups. Chill. Serve in tall glasses over ice. Garnish with a sprinkle of cinnamon.

1 vanilla bean, split and seeds scraped
1/8 teaspoon ground cinnamon
3/4 cup sugar

Steps:

  • Combine the ground rice, blanched almonds, cinnamon and vanilla bean and seeds with 3 1/2 cups water and let sit overnight, covered, in the refrigerator.
  • The next day, strain the horchata using a strainer and cheesecloth. Press the solids against the cheesecloth-lined strainer to get out all of the liquid and serve over ice. (You could also blend the horchata, strain and serve over ice.)

Horchata has always been a favorite of my daughter since she was a little girl. This easy version is from Allrecipes.com. Hopefully Lola does not mind me posting it here.I like mine with less cinnamon, so you might start off with a tsp. cinnamon and see if it is enough.

2 cups jasmine or long-grain white rice
1 large stick canela or 2 cassia cinnamon sticks (see Cook's Note)
1/2 cup sugar
Kosher salt
Ice, for serving
Ground canela or cinnamon, for sprinkling

Steps:

  • Grind the raw, unwashed rice in a blender on high speed into a fine powder. Transfer to a medium bowl and whisk in 5 cups room temperature water. Add the canela, cover and let it sit at room temperature for 8 hours and up to 24.
  • Removed the canela and snap into two 1-inch pieces. Vigorously whisk the rice mixture until the rice is evenly distributed. Transfer to a blender, add the reserved canela pieces and puree on high speed for 10 minutes; the mixture will get hot and the rice will soften and start to ''cook '' and release more flavor. Add the sugar and 3/4 teaspoon salt and puree until dissolved, about 30 seconds.
  • Strain the rice mixture through a fine mesh sieve lined with several layers of cheesecloth into a large bowl, pressing on the solids to extract as much liquid as possible (you should have about 3 1/2 cups). Reserve the solids for another use (like cream-of-rice porridge). Stir in 3 cups very cold water. Serve over ice with a sprinkle of ground canela or cinnamon on top.
