VEGAN ZUCCHINI CHIPS



Vegan Zucchini Chips image

Learn an easy way to make breaded and oven-baked zucchini chips without milk or eggs. They're low fat, dairy free, egg free and not fried.

3/4 cup vegan breadcrumbs
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon seasoned salt
2 zucchini, sliced 1/2-inch thick
1/3 cup soy milk, or another vegan milk substitute

Steps:

  • Gather the ingredients.
  • Preheat the oven to 475 F and lightly grease a baking sheet with olive oil or nonstick cooking spray .
  • In a large bowl, combine breadcrumbs, Italian seasoning, garlic powder, onion powder, and seasoned salt.
  • Dip each slice of zucchini into the soy milk, then gently dredge each slice well with the seasoned breadcrumb mix, pressing gently to coat on both sides.
  • Arrange the breaded zucchini slices in a single layer on the baking sheet.
  • Bake for 5 to 10 minutes, or until lightly crisped.
  • Turn the zucchini chips over, and bake for another 5 minutes. Serve immediately.

These veggie chips are a Crunchy, crispy and a guilt-free snack that takes just 20 minutes to make! Low in calories and fat, and so much better than store bought!

1 large Golden Beetroot
1 large Beetroot
1 large Zucchini
1 Large Carrot
1 Small Sweet Potato
1 Small rutabaga (or turnip)
1/2 teaspoon pepper (Adjust to taste)
1 spray Oil (Optional)

Steps:

  • Preheat the oven to 200C/400F.
  • Slice all the veggies into uniformly thin slices with a knife or mandoline. In a bowl, toss them with the oil, salt, and pepper until evenly coated.
  • Spread out on a baking pan lined with parchment paper, minimizing overlap. Bake for 10 minutes at 400F. Flip. Bake for another 5-10 minutes until crispy and slightly brown but not burnt. Watch them carefully and even remove some early if they are browning before the others.
  • Remove from the oven and allow to cool for a few minutes before eating.

1 cup white sugar
½ cup brown sugar
½ cup olive oil
1 tablespoon vanilla extract
2 cups all-purpose flour
½ cup cocoa powder (such as Hershey's®)
1 ½ teaspoons baking soda
1 teaspoon salt
3 cups shredded zucchini
1 cup vegan chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9-inch square pan with cooking spray.
  • Combine sugar, brown sugar, and olive oil in a large bowl; beat with an electric mixer until well combined. Mix in vanilla extract. Add flour, cocoa powder, baking soda, and salt and mix until combined. (Mixture will be dry).
  • Add zucchini and mix with a spoon until incorporated. Allow to sit for 5 minutes until mixture becomes more wet. Stir in vegan chocolate chips. Transfer batter to the prepared pan.
  • Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 25 to 30 minutes. Let cool completely before slicing.

  • Wash, dry, and cut off the ends of the zucchini, then slice them into one quarter inch discs. Lay the discs on a sheet of paper towel and lightly sprinkle with salt. This will draw out the excess water and make your crisps crispier. Let the discs sit for about fifteen minutes. Don't skip this part or the zucchini will be too watery and the breading won't stick.
  • In a medium bowl whisk the breadcrumbs, vegan parmesan, garlic powder, Italian seasoning, and salt and pepper to taste until combined. Put the flour in a small bowl and the almond milk in another small bowl.
  • Take a paper towel and pat the excess water off of the zucchini discs. Don’t be afraid to press into the discs, and you’ll probably need an extra towel if your zucchini has a lot of water.

  • Preheat the oven to 300°F, and line 1-2 large baking sheet with parchment paper or a silicone mat.
  • Slice the vegetables that you are using as thin as possible. We used beets, carrots, sweet and white potatoes and zucchini and sliced them 1/6″ thick. Using a mandoline slicer is very helpful for this! Keep in mind that since we are slicing these so thin, these make A LOT of chips. If you don’t have time to make multiple batches, we suggest that you make chips with just 1/2 of the vegetables.
  • At this point, it is time to soak some of the vegetables in water. You do not need to soak the carrots, zucchini, celery root, parsnips, yellow squash and rutabaga. The potatoes need to be soaked for at least 30 minutes, whereas the beets and turnips only need to be soaked for 10 minutes. You can totally put them all in the same bowl for 30 minutes but know that if you are making chips with just beets or turnips, 10 minutes will do the trick. We do want to suggest soaking the beets in their own bowl as they may discolor the other vegetables. We soaked our potatoes in one bowl and our beets in another to prevent this. Once they have finished soaking, drain the vegetables and pat them dry with a clean towel.
  • Lay the vegetables out on the lined baking sheets in a single layer. Pop them into the oven to bake for 15 minutes. Remove the tray from the oven and carefully flip the chips. Place them back into the oven and back for another 15 minutes, or until the vegetables have crisped up. If you are using different vegetables, keep in mind that they may bake differently. If some have not crisped up yet, pop them back into the oven and bake them until crisp, about 5-10 minutes more.
