This scratch-made venison stew recipe is easy to make and the deer meat is fall-apart tender. It's packed with veggies and simple ingredients. Gluten free, dairy free, paleo, Whole30 friendly.

1 lb. venison, diced with all sinew removed - I used leg meat*
1 Tbsp. olive oil
2 and 1/2 cups diced potatoes, I left the skin on (about 3 medium potatoes)
2 cups diced carrots
1 cup diced celery
1 large onion, diced
2 garlic cloves, minced
2 tsp. herbs de Provence*
1 tsp. salt
3/4 tsp. black pepper
1 15 0z. can diced tomatoes
4 cups unsalted beef stock or venison stock
3-4 dashes Worcestershire sauce

Steps:

  • Dice the venison into bite-sized chunks, being sure to remove any of the silvery sinew tissue. Leaving this on makes the meat tough.
  • Add the olive oil to a large pot or Dutch oven and heat over medium-high heat.
  • When the oil is hot, allow the venison to saute for 5-7 minutes or until the edges start to brown. Remove the venison from the pot and set aside.
  • Turn the heat down to medium and add the potatoes, carrots, celery and onion. Allow the vegetables to saute for about 8-10 minutes, or until they begin to soften.
  • Then, add the garlic, herbs de Provence, salt and pepper and cook for an additional minute before adding the tomatoes, broth and Worcestershire sauce. Then, add the venison back to the pot. Stir well and bring the stew to a boil.
  • Once a boil is reached, turn the heat to low, cover the pot with a lid, and allow the stew to simmer for 1-2 hours until the venison is tender.
  • Serve hot (is amazing with crusty bread).

2 tablespoons canola oil
2 pounds venison stew meat
3 large onions, coarsely chopped
2 garlic cloves, crushed
1 tablespoon Worcestershire sauce
1 bay leaf
1 teaspoon dried oregano
1 tablespoon salt
1 teaspoon pepper
3 cups water
7 potatoes, peeled and quartered
1 pound carrots, cut into 1-inch pieces
1/4 cup all-purpose flour
1/4 cup cold water
Browning sauce, optional

Steps:

  • In a Dutch oven, heat oil over medium heat. Brown meat on all sides. Remove from pan. Add onions to the same pan; cook and stir until crisp-tender, 5-7 minutes. Add garlic; cook and stir 1 minute longer. Add water, stirring to loosen browned bits from pan. Stir in Worcestershire sauce, bay leaf, oregano, salt, pepper. Return meat to pan; bring to a boil. Reduce heat; cover and simmer until meat is tender, 1-1/2 to 2 hours., Add potatoes and carrots. Continue to cook until vegetables are tender, 30-45 minutes. Remove and discard bay leaf. In a small bowl, mix flour and cold water until smooth; stir into Dutch oven. Bring to a boil; cook and stir until thickened, 1-2 minutes. If desired, stir in browning sauce.

2 pounds venison (cubed)
1 cup yellow or white onions (chopped)
3 medium carrots (cut into 1/4-inch slices)
1/4 cup celery (finely chopped)
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons dried parsley
1/2 teaspoon dried thyme
1/4 teaspoon dried crushed rosemary
1 cup dry red wine
3/4 cup beef stock
5 slices bacon (chopped)
1 tablespoon all-purpose flour
1 teaspoon tomato paste
1 1/2 cups mushrooms

Steps:

  • Gather the ingredients.
  • Put the venison on one side of a large baking dish. Put the onions, carrots, and celery on the opposite side. Sprinkle the salt, pepper, and the dried herbs evenly over the meat and vegetables.
  • Combine the beef stock and red wine. Pour the mixture over the meat and vegetables. Cover, and marinate in the refrigerator for 8 hours, or up to overnight.
  • Remove the meat and vegetables from the marinade to separate bowls. Reserve the marinade for use later in this recipe.
  • In a large Dutch oven or other heavy-duty pot, add the bacon and cook over medium heat, stirring occasionally until it crisps.
  • Transfer to a paper-towel-lined plate to drain.
  • Pat the venison dry with paper towels. Toss the meat chunks with the flour. Brown the meat in the bacon grease over medium-high heat in batches if necessary, until golden. Replenish the pan with vegetable oil if needed.
  • Return all the meat to the pot. Add the tomato paste and cook, stirring continually until the meat and paste are combined, about 1 minute.
  • Add the mushrooms, marinated vegetables, crisped bacon, and the reserved marinade to the pot.
  • Cook the mixture, covered, on low heat until the meat and vegetables are tender, and the sauce has thickened, 45 minutes to 1 hour. Serve warm.

2 pounds venison stew meat, cut into 1-inch cubes
1/4 cup all-purpose flour
Essence, recipe follows
2 cups chopped onions
1 cup chopped celery
1 cup chopped carrots
1 tablespoon chopped garlic
1 cup chopped tomatoes, peeled and seeded
1 tablespoon chopped fresh basil leaves
1 tablespoon chopped fresh thyme leaves
2 bay leaves
1 cup red wine
4 cups brown stock
Salt and black pepper
Crusty bread
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large pot, over high heat, add the olive oil. In a mixing bowl, toss the venison with flour and Essence. When the oil is hot, sear the meat for 2 to 3 minutes, stirring occasionally. Add the onions and saute for 2 minutes. Add the celery and carrots. Season with salt and pepper. Saute for 2 minutes. Add the garlic, tomatoes, basil, thyme, and bay leaves to the pan. Season with salt and pepper. Deglaze the pan with the red wine. Add the brown stock. Bring the liquid up to a boil, cover and reduce to a simmer. Simmer the stew for 45 minutes to 1 hour, or until the meat is very tender. If the liquid evaporates too much add a little more stock.
  • Remove the stew from the oven and serve in shallow bowls with crusty bread.
  • Combine all ingredients thoroughly.

3 tablespoons blended oil (90 percent canola, 10 percent extra-virgin olive)
2 pounds beef stew meat, cut into 1 1/2-inch chunks
Kosher salt and cracked black pepper
1/2 large Spanish or sweet onion, finely chopped
1 carrot, finely chopped
1 stalk celery, finely chopped
1 large leek, cut into thick rounds, washed well in cold water, drained
2 tablespoons tomato paste
1/2 cup red wine
2 tablespoons red wine vinegar
3 to 5 cups water
1 fresh bay leaf or 2 dried leaves
1 large sprig rosemary
1 sprig thyme
1 sprig sage
2 cinnamon sticks
Extra-virgin olive oil
Grated orange zest
1 tablespoon roughly chopped parsley

Steps:

  • Place a large, heavy pot or Dutch oven over medium-high heat and add the blended oil. Season the beef aggressively with kosher salt and pepper. When the oil is hot, add the beef and sear on all sides, 5 to 6 minutes. Add all the chopped vegetables to the pan with the beef and sauté for 2 minutes. Add the tomato paste and stir for 1 minute. Deglaze the pan with the red wine and red wine vinegar, and let them reduce completely away.
  • Add 3 cups of the water, 2 teaspoons salt and a generous grinding of pepper, the bay leaves, rosemary, thyme, sage, and cinnamon. Bring to a boil, then reduce the heat to low and partially cover the pan. Simmer gently for about an hour. Check and, if the mixture is dry, add another cup or two of water. Keep simmering for 15 to 40 minutes more, until the meat is tender and the braising liquid has reduced to a saucy consistency. Remove the bay leaves and cinnamon sticks. Transfer to a platter and drizzle with a little extra-virgin olive oil, and scatter with a little orange zest and the parsley.

1 leek
500 g of quality stewing beef
1 cup dry red wine
1 carrot
1 yellow onion
bay leaf
plain flour
1 teaspoon thyme
sea salt
ground black peppercorns
1 beef stock cube
olive oil

Steps:

  • Top and tail leek so that you have the white stalk only.
  • Slice leek lengthwise and then chop into 1 inch segments.
  • Chop carrot into bite size segments.
  • Chop onion.
  • Place flour and seasoning into a bag.
  • Place beef into the bag and shake so that beef is coated with flour and seasoning.
  • In a heavy base frypan, place 1 or 2 tablespoons of oil.
  • On low heat brown beef, remove and place into a casserole.
  • Add a little more oil and stir fry leek, onion and carrot for 2 minutes.
  • Remove and add to casserole.
  • Place the red wine and the stock cube in the frypan and simmer until wine is reduced to half.
  • Add to casserole.
  • Add thyme and 2 bayleaf.
  • Place in a moderate oven and cook slowly for about 90 minutes.
  • Place a lid on the casserole to obtain best results.
  • Serve with mashed potato,steamed french beans with an oil and garlic dressing and steamed button squash or baby zucchini.

1 1/2 lbs beef stew meat, cut into 3/4-inch pieces or 1 1/2 lbs venison
1/2 cup flour
2 -3 tablespoons shortening (add more if need be)
salt & pepper, season according to taste
1 medium onion, chopped fine
3 -4 dashes Worcestershire sauce
6 cups hot water
2 teaspoons beef bouillon granules
1 pinch dried thyme
1 bay leaf
1 tablespoon lemon juice (This tenderizes the meat)
4 whole cloves
5 carrots, sliced thin
4 medium potatoes, cubed small
1/2-1 green bell peppers, chopped fine or 1/2-1 yellow bell pepper
1 stalk celery, sliced thin
1 (4 ounce) can mushroom stems and pieces, drained
1 (14 1/2 ounce) can whole tomatoes, cut up
1/2 cup frozen peas (*See note) (optional)
4 tablespoons flour (I use cornstarch)
1/2 cup cold water
1 teaspoon Kitchen Bouquet, browning & seasoning sauce (optional)

Steps:

  • Coat beef stew meat (or venison stew meat) with flour.
  • In a large skillet, melt shortening.
  • Add the flour coated meat; season with salt and pepper.
  • When the meat is almost browned, add onions; finish browning.
  • Add the Worcestershire sauce; stir for another minute.
  • Transfer to a 5 quart Dutch Oven, or a large soup kettle.
  • Add the hot water, bouillon granules, thyme, bay leaf, lemon juice, and whole cloves.
  • Bring to a boil. Cover, reduce heat to a simmer, and cook for 2 hours.
  • Add the carrots, potatoes, green peppers, celery, mushrooms and tomatoes.
  • Cover, and simmer 1-1/2 hours.
  • Remove bay leaf and whole cloves at this point.
  • Bring back to a boil.
  • Combine the flour and cold water, and add this to the boiling stew; stirring constantly.
  • Finally add the Kitchen Bouquet; mix through thoroughly.
  • Serves 8 - 10.
  • *Note: Sometimes you'll only need 3 tablespoons of flour, mixed with 1/3 cup cold water to thicken the stew. Also, if wanting to add peas to the stew, add the frozen peas within the last 20 minutes of cooking time (while the vegetables are simmering).
