1/2 cup packed brown sugar
1/2 cup chopped walnuts or pecans
1 teaspoon ground cinnamon
2 tablespoons butter, softened

Steps:

  • In a bowl, combine the brown sugar, walnuts and cinnamon. Use for Braided Coffee Cake or Coffee Cake Ring. Spread butter over dough; sprinkle with sugar mixture.

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
2-1/2 cups all-purpose flour
FILLING:
3 large egg whites
3/4 teaspoon vanilla extract
1/3 cup sugar
3-1/2 cups ground walnuts
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and cream cheese until blended. Gradually beat flour into creamed mixture. Divide dough into 3 portions. Shape each into a disk. Wrap and refrigerate 1 hour or until firm enough to roll., Preheat oven to 375°. For filling, in a small bowl, beat egg whites and vanilla on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on medium after each addition until well blended. Stir in walnuts., Generously coat a work surface with confectioners' sugar. Roll 1 portion of dough into a 12-in. square about 1/8 in. thick, sprinkling with additional confectioners' sugar as necessary to coat well. Cut into sixteen 3-in. squares., Shape 2 teaspoons filling into a small log about 2 in. long. Place diagonally onto a square. Overlap opposite corners of dough over filling; pinch tightly to seal. Place 2 in. apart on greased baking sheets. Repeat with remaining dough and filling., Bake until bottoms are golden brown, 9-11 minutes. Remove from pans to wire racks to cool completely. Dust with confectioners' sugar., To Make Ahead: Dough can be made 2 days in advance. Wrap and store in an airtight container in the refrigerator. , Freeze option: Freeze cookies in freezer containers. To use, thaw before serving. If desired, dust with additional confectioners' sugar.

My mom got the recipe for these from my great aunt Grethel. She always makes them for Christmas and New Year's breakfast but they are good all year round.

2 tablespoons sugar
2 (1/4 ounce) packets yeast (approximately 4 1/2 to 5 tsp.)
7/8 cup lukewarm milk
4 cups flour
1 cup butter, softened
1 teaspoon salt
2 eggs, separated
1/2 cup butter
1 1/2 lbs ground nutmeats (we use walnuts, approximately 6 cups)
1 cup sugar
3/4 cup milk
1 teaspoon vanilla
1/3 cup butter (optional)
3 1/2-4 cups confectioners' sugar (optional)
1 egg yolk (optional)
3 tablespoons milk (optional)
1 1/2 teaspoons vanilla (optional)

Steps:

  • Dough: Dissolve yeast in milk with sugar. Add butter, salt, and egg yolks.
  • Stirring to mix. Add 2 cups flour and mix well, add remaining flour. Knead 5 minutes.
  • Divide dough into 3-4 parts, cover and let rise while preparing filling.
  • Filling: Heat all ingredients in a sauce pan until butter melts and sugar dissolves. Remove from heat and let cool.
  • Roll out each portion of dough to an 1/8 inch thickness in a rectangle shape. Spread an equal amount of filling on each portion on dough. Roll up jelly roll fashion and let raise 15-20 minutes.
  • Brush with egg whites before baking. (I accidentally forgot to do this one year and have decided we like it better without the egg wash.) Bake at 350°F for 30 minutes.
  • Once cool, top with icing, if desired.
  • Icing: Cream butter and egg yolk. Then add confectioner's sugar a cup at a time beating on medium speed. Add vanilla and milk 1 Tbls. at a time and beat on high until fluffy.

Steps:

  • To make the dough: Place all the ingredients in bread machine bucket. Choose DOUGH option on the machine and wait until the dough is ready. Meanwhile, prepare the filling. Combine into a bowl the finely chopped walnuts, egg white and sugar. Mix well and you've got yourself a walnut filling! This will be enough for half of the dough in case you want to make another filling also. When the dough is ready, preheat the oven to 240F. Get a baking sheet and spray or butter the pan so the rolls don't stick when baking. Divide the dough in half. If you want different kind of fillings divide the dough into how many fillings you want. Sprinkle the surface with flour then roll one piece of dough flat into a rectangle shape. Spread walnut filling. Roll the dough in from the long side. Place on a baking sheet. Repeat the previous step with the rest of the divided dough by rolling it, adding filling and rolling it up. Give 15 minutes for the dough roll to rise once again then whisk 1 egg and brush lightly the top of each roll. Place in oven. Bake for 15 minutes on 240F, then change the temperature to 275F for another 15 minutes and lastly change the temperature to 295F and bake until rolls are golden brown. Slice and enjoy! NOTES TIP: double the walnut filling to have enough for all the dough.

  • In a bowl combine 1 cup of the flour and the yeast; set aside. In a saucepan heat the 1/3 cup milk, 1/4 cup margarine or butter, 2 tablespoons sugar, and salt just until warm (120 degrees F to 130 degrees F) and margarine or butter almost melts.
  • On a lightly floured surface, knead in enough of the remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total).
  • Meanwhile, for filling, mix walnuts, the 3/4 cup sugar, 1/4 cup margarine or butter, honey, remaining egg and milk, and the vanilla. Set aside.
  • Punch dough down. Cover and let rest 10 minutes. Meanwhile, lightly grease two 7-1/2x3-1/2x2- or 8x4x2-inch loaf pans. On a lightly floured cloth, roll dough into a 15-inch square.
