12 cooked large (21 to 30 count) deveined peeled shrimp with tails left on (about 1/2 lb)
2 tablespoons cream cheese, softened
2 teaspoons wasabi paste
3 teaspoons chopped fresh cilantro
1/4 cup seafood cocktail sauce

Steps:

  • With sharp knife, cut along back curve of each shrimp, not cutting through to other side. Pat dry with paper towels.
  • In small bowl, mix cream cheese, wasabi paste and 1 teaspoon of the chopped cilantro. Spread each shrimp open; fill with cream cheese mixture and sprinkle lightly with remaining cilantro. Place on serving plate. Serve with cocktail sauce.

8 cups vegetable oil
1 cup all-purpose flour
1 tablespoon baking powder
1 tablespoon cornstarch
1 teaspoon salt
1 large egg
1/2 cup soda water
1 teaspoon rice wine vinegar
1/2 cup mayo
3 tablespoons wasabi, prepared or powdered mix made to instructions
1 pound 21/25 count shrimp, peeled and deveined
1 lemon, juiced

Steps:

  • For the tempura: To begin, preheat the oil to 375 degrees F, and then begin the batter. In mixing bowl, mix the flour, baking powder, cornstarch and salt together, blending well. Next, add the egg and again mix. Then stir in the soda water and vinegar, and mix for final time. Keep cold until use and stir again before each use.
  • For the sauce: In a bowl, blend the mayo and wasabi, whisking together well to form a smooth sauce. Hold cold until dressing the cooked shrimp.
  • For the shrimp: Slice the shrimp from head to tail, forming 2 even pieces; this will yield 46 total pieces. Next, dip and evenly coat 12 shrimp at a time with the tempura batter, and then place in the hot oil. Cook until fluffy and golden brown, 2 to 3 minutes. Remove and repeat the process with the remaining shrimp.
  • Once all the shrimp are cooked, toss them with the prepared sauce. Remove from the sauce without excess, and finish with lemon juice. Serve.

1/3 cup sour cream
1/4 cup mayonnaise
2 teaspoons wasabi powder
1 teaspoon lime juice

Steps:

  • STIR together all ingredients for wasabi cream dipping sauce in a small bowl. Cover bowl with plastic wrap and place in refrigerator while shrimp cooks.
  • PREHEAT oven to 425 degrees F. Place shrimp on baking sheet and bake for 14 minutes.
  • SERVE shrimp immediately with cold wasabi cream dipping sauce.
  • Cook's Note: The dipping sauce can be made a day ahead and stored in the refrigerator until time to serve. Also, creating the beautiful presentation in the picture is simple - use sweet and spice sauce (included in the shrimp package) to create a pool of sauce on each appetizer plate. Add 2 to 3 shrimp to each plate and a small individual ramekin of wasabi cream sauce. Garnish with finely chopped green onions.

Peanut oil, for frying
1 cup coconut milk
1 egg
3 tablespoons grated ginger
1 cup all-purpose flour
1 cup unsweetened shredded coconut
8 to 10 jumbo shrimp, peeled and deveined
Salt and freshly cracked black pepper
3 tablespoons chopped cilantro leaves
1 lime, juiced
1 1/2 cups mango chutney, store-bought
1/4 cup coconut milk
2 limes, 1 zested and both juiced
1/2 teaspoon sugar
1/2 teaspoon cayenne pepper
1/4 teaspoon ground ginger
Pinch salt
Chopped cilantro leaves, as needed

Steps:

  • In a deep-fryer or heavy-bottomed pot, heat enough peanut oil to come halfway up the sides of the pot, to 325 degrees F.
  • In a large and shallow dish, whisk together the coconut milk, egg, grated ginger and flour to form a thick batter. To a second shallow dish, add in the shredded coconut. Dip the prawns in the batter, then roll them thoroughly in the coconut shreds. Drop them, in batches, into the peanut oil and fry until their exteriors are golden brown and crisp, about 4 to 5 minutes. Transfer them from the fryer to a platter lined with paper towels and immediately season them with salt and black pepper. Transfer the prawns to a serving platter and sprinkle with cilantro and lime juice. Serve them with the dipping sauce.
  • Sauce:
  • In a small saucepan over medium heat, warm the mango chutney over low heat. Add the coconut milk and stir well to combine. Stir in the zest, lime juice, sugar, cayenne, ginger and salt. Continue cooking until the ingredients are fully incorporated and the sauce has warmed through. Add some chopped cilantro and remove the saucepan from the heat. Transfer the sauce to a serving bowl and serve with the Ginger and Coconut Crusted Jumbo Shrimp.

Spicy, fresh, delicious! This recipe takes a bit of prep, but if you have two sets of hands, it's a fun dish to prepare! We're pretty new to Asian cooking, but this recipe seems unique to us because it's cool in temperature but hot in flavor; you get both types of spicy: "mouth spicy" from the jalapenos and "nasal spicy" from the wasabi! I got this recipe from a random magazine at the gym...I HAD to try it and proceeded to text it to my e-mail in a series of like, 10 text messages... we totally enjoyed the fruits of my labors, and now you can too. Prep time is approximate...we were multi-tasking so it's hard to say how much we spent on this individual dish. Anyway, hope you enjoy! :)

Steps:

  • In a skillet, sauté the shrimp, ginger, and garlic in the oil for 3 minutes or until shrimp is cooked. Set aside.
  • Meanwhile, cook noodles according to package directions. Drain; rinse in cold water and drain again.
  • To serve, layer noodles, shrimp, cabbage, carrots, radishes, basil, and jalapeno in individual bowls. Pour dressing over top of each serving and sprinkle cashews or wasabi peas over top.
  • A Word of Caution: I highly suggest using the recommended 1 1/2 tsp of wasabi paste to start. Only add more if, after mixing it with the rest of the ingredients in the individual bowls, additional heat is desired. The sauce by itself never seemed hot to us, so we used almost an entire tube of wasabi -- and subsequently cried our way through dinner.

1 pound raw shrimp, peeled and deveined
2 cloves garlic, crushed

Steps:

  • Preheat oven to 400 degrees F. Tear off four 15-inch sheets of Reynolds Parchment Paper. Fold each sheet in half and crease it in the center. Cut each into a heart shape; unfold.
  • Divide broccoli and shrimp evenly on one-half of each sheet near crease.
  • Mix garlic, sesame oil, ginger and soy sauce. Spoon 1/4 the mixture evenly over broccoli and shrimp on each sheet.
  • Fold over other half of each sheet to enclose ingredients. Starting at top, make small overlapping folds down entire length of parchment to secure edges together. Twist last fold several times to make a tight seal. Place parchment packets on a large baking sheet with 1-inch sides.
  • Bake 13 to 15 minutes or until shrimp is done.
  • Place parchment packets on dinner plates. Carefully cut an X in the top of each packet; open carefully, allowing steam to escape. Serve immediately.

2 teaspoons lime zest
1 teaspoon fresh lime juice

3 tablespoons extra virgin olive oil
1 tablespoon finely chopped garlic

Steps:

  • Stir together all the ingredients for the wasabi mayonnaise, beginning with 2 tsp wasabi paste, adding and tasting until you achieve your desired level of spiciness; place in the refrigerator until needed.
  • Stir together all the"FOR THE SHRIMP" ingredients, EXCEPT the shrimp.
  • When thoroughly combined, pour over the shrimp, and mix well making sure that each piece is well covered with the marinade.
  • Place in the refrigerator and allow to marinate 15 minutes; do not go much beyond this time, or the lime juice will begin to"cook" the shrimp, making them tough.
  • Put the shrimp (marinade and all) in one layer in a large dry non-stick frypan over medium-high heat, season with pepper to your taste and saute just until pink.
  • I usually get them arranged in one layer, and by this time the first ones are beginning to color; I immediately begin to turn them over one by one and by then the first ones are ready to come out of the pan; by the time I've gotten to the last one they will all be cooked to my liking.
  • Remove to a serving dish and don't forget to bring the wasabi mayo out of the fridge.

1 teaspoon Thai red curry paste
1/2 teaspoon cumin
1 cup wasabi peas
2 cups breadcrumbs
1 tablespoon Hidden Valley Original Ranch Seasoning Mix
2 teaspoons wasabi powder
24 medium shrimp
1/2 cup olive oil, divided use
1/4 cup green onion, thinly sliced
1/4 cup carrot, thinly sliced
1/4 cup red pepper, small diced
1/4 cup peanuts, finely chopped
1 cup mango, shaved into thin ribbons
1 1/2 cups red curry peanut sauce

  • 1. Cook the soba noodles in boiling salted water for approximately 5-6 minutes or until al dente. Drain the noodles in a colander, cool with water. In small quantities dry the noodles in absorbent paper towels and place in a mixing bowl.
  • 2. In a seperate bowl combine the ginger, shallots, rice vinegar, soy sauce, miso, sesame oil, red curry paste and cumin, mixing with a whisk until the vinaigrette is emulsified.
  • 3. Pour the dressing over the noodles and gently toss. Cover the bowl with saran, refrigerate for 15 minutes allowing the flavors to marry.
  • 4. Place the wasabi peas into a food processor and grind into crumbs. Place the wasabi crumbs into a mixing bowl with the bread crumbs, Hidden Valley Ranch Seasoning and wasabi powder. Place the spiced bread crumbs evenly on a flat tray.
  • 5. Remove the shells of the shrimp and butterfly. Evenly toss the shrimp with 1/4 cup of he olive oil; gently press each shrimp into the spiced bread crumbs, coating each shrimp on all sides. Lightly spray each shrimp on both sides with nonstick vegetable cooking oil.
  • 6. Heat s skillet over medium heat with the remaining 1/4 cup of olive oil. In batches place the shrimp in a single layer in the skillet, cook for approximately 2 minutes or until golden brown. Turn the shrimp over cooking the second side for an additional 2 minutes or until the shrimp are fully cooked. Hold the cooked shrimp on a plate with paper towels, cooking the remaining shrimp, add additional olive oil if necessary to the skillet.
  • 7. Thread 2 cooked shrimp onto 12 bamboo skewers.
  • 8. Remove the soba noodles from the refrigerator, gently toss with the sliced vegetables and chopped peanuts. In the center of 4 decorative serving plattersarrange the soba noodles, top each mound of noodles with 1/4 cup of mango ribbons.
  • 9. Drizzle 2-3 tablespoons of the Red Curry Peanut Sauce around the perimeter of each platter. Garnish the top of each serving of soba noodles with 2 sprigs of cilantro, 1 teaspoon of black sesame seeds and a lime wedge.
  • 10. Place 3 shrimp satays on each platter.
  • 1. In a sauce pan combine 1 cup of the coconut milk and red curry paste stirring with a whisk to dissolve.
  • 2. Simmer the sauce using low heat for approximately 3-4 minutes or until the sauce has just warmed.
  • 3. Stir in the remaining ingredients, simmer for 8-10 minutes or until the sauce has thickened to the consistency of heavy cream, stir frequently.

1 cup mango, fresh diced
1/3 cup cilantro, fresh chopped
3/4 cup red onion, finely diced
3 tablespoons lime juice, fresh squeezed

12 large sea scallops
1 teaspoon ginger, fresh minced

Steps:

  • Stir together all of the salsa ingredients in a large bowl.
  • Place 1/4 cup rice in center of 4 plates using a custard cup or any other method of shaping the rice mold.
  • Place 1/4 of the salsa mixture around the rice on each plate.
  • Mix together ginger, wasabi paste, garlic, olive oil, and salt in another bowl.
  • Heat a large saute pan to medium-high heat with some olive oil.
  • Dip each flat end of each scallop in the wasabi-ginger mixture and place in the hot saute pan. Sear the scallops for 2 minutes on the first side without moving. Flip over and finish the cooking process for another 1-2 minutes.
  • Place 3 scallops on each plate. Drizzle each scallop with a tiny bit of sesame oil to garnish. I also like to garnish with a few sprigs of cilantro in the middle of the rice.

1 lb large shrimp
1 egg white
3 tablespoons olive oil

  • Repeat with remaining oil and shrimp.
