To make this drink suitable for non drinkers, omit alcohol and increase the pineapple juice to 1 cup. I like to add the ice to the blender also..n drink it like a slushy.

- Puree 1 cup cubed seedless watermelon in a blender with 6 tablespoons light rum, 1/4 cup elderflower liqueur (such as St-Germain), the juice of 2 limes and 2 tablespoons superfine sugar. Serve over ice. Garnish each drink with a watermelon ball.

- Place cubed watermelon in a blender and blend until smooth. Pour into a bowl through a mesh strainer to remove pulp. Measure out 2 cups of strained watermelon juice and set aside.
- Place mint leaves in the bottom of a pitcher. Pour in 1/2 the watermelon juice; muddle mint leaves with a muddler or the bottom of a wooden spoon.
- Pour remaining watermelon juice, lime juice, rum, and simple syrup into the pitcher. Fill with ice and top with club soda. Serve.

- Cut watermelon flesh into 2-inch chunks and discard rind. Purée one fourth of watermelon in a blender with 1 Tbsp sugar, 1 tsp lemon juice, 4 cups ice, and a pinch of salt. Strain through a fine-mesh sieve into a large bowl, discarding solids. Make 3 more batches. Add sugar to taste if desired and serve over ice.
