I love sweets, but it's always hard to fit them into a diet. This fudge is really tasty and simple and a good way to take the edge off your sweet tooth! Cooking time is actually refrigeration time.

1 2/3 cups Splenda granular, sugar substitute
12 ounces semi-sweet chocolate chips (i use mini ones, as they melt faster)
15 large marshmallows, cut in halves
2/3 cup fat-free evaporated milk
1 tablespoon reduced fat margarine
2 teaspoons reduced fat margarine

Steps:

  • Spray bottom of an 8x8 pan with nonstick cooking spray.
  • Bring evaporated milk, splenda, and margarine to a rolling boil. Reduce heat to med-low and continue cooking for approx 3 minutes longer, stirring constantly.
  • Stir in chocolate chips and marshmallows. Remove from heat. Stir until smooth.
  • Pour into pan and refrigerate until firm.
  • Enjoy without feeling guilty!

This is a simple and delicious treat that's great as a side item during dinner or even dessert. I like to eat them for breakfast, as breakfast is hard to fit into a diet. Each serving is only 2 weight watchers points! (borrowed from splenda.com)

6 granny smith apples
1 cup Splenda granular, sugar substitute
1 teaspoon cinnamon
1 tablespoon margarine

Steps:

  • Preheat oven to 350 degrees.
  • Wash and core apples using an apple corer. Place slices in a shallow baking dish.
  • Mix splenda and cinnamon in small bowl. Sprinkle over apples.
  • Place small dots of margarine over the apples.
  • Cover with foil and bake for 35-45 minutes, until a little soft.

10 OZ BITTERSWEET OR SEMI SWEET CHOCOLATE FINELY CHOPPED
1 (14-OZ) CAN SWEETENED FAT-FREE CONDENSED MILK
1/2 TEASPOON VANILLA EXTRACT
PINCH COURSE SEA SALT

Steps:

  • Line 8-inch square baking pan with foil, leaving 2 inch overhang. Smooth out any wrinkles Combine chocolate, milk, vanilla and salt in large heavy saucepan. Cook stirring occasionally over medium-low heat until chocolate melts and mixture is smooth, about 5 minutes. Transfer fudge to prepared pan, spread evenly with rubber spatula. Let cool. Cover with plastic wrap and refrigerate until firm at least 2 hours of overnight. Uncover fudge, remove from pan by lifting overhanging wrap. invert on cutting board, remove wrap. Cut fudge into 8 strips then cut each strip crosswise into 8 pieces. If making ahead cover and chill up to 2 weeks.
