For The Vinaigrette:
5 Cloves Black Garlic
1/4 C. White Balsamic Vinegar
1 tsp. Dijon Mustard
1/2 tsp. Kosher Salt
1/2 tsp. Sugar
1/4 tsp. Freshly Ground Black Pepper
3/4 C. Extra Virgin Olive Oil
For The Rest Of The Dish:
1 lb. White Asparagus, washed & trimmed
1/2 C. Toasted Walnut Pieces
2 tsp. Fresh Thyme Leaves

Steps:

  • To make vinaigrette, put all of the ingredients except the olive oil in the bowl of a food processor or blender. Process the ingredients till the black garlic has been completely incorporated with the rest of the ingredients. With the food processor running, slowly add the olive oil, blending till the dressing has thickened. Adjust seasonings to taste, then set aside. Bring a lg. pot of water to a boil. Immerse the asparagus & blanch for 1 min. Remove the asparagus from the hot water & run under cold water to stop the cooking process. Dry the asparagus & arrange on a plate. Drizzle the vinaigrette over the asparagus, then sprinkle the walnut pieces & fresh thyme leaves overtop & serve.

There are, of course, a number of ways to prepare and serve asparagus, but this method, in which it is paired with a savory vinaigrette, is one of Martha's seasonal favorites.

2 bunches asparagus (about 2 pounds), trimmed
1/2 teaspoon Dijon mustard
1 1/2 tablespoons champagne vinegar
Pinch of sugar
Freshly ground pepper
3 tablespoons extra-virgin olive oil
1 teaspoon lemon zest
1/2 teaspoon finely chopped fresh tarragon

Steps:

  • Prepare an ice-water bath; set aside. Bring a large pot of water to a boil. Add a generous amount of salt, and the asparagus. Return to a boil, and cook until asparagus are bright green and tender, about 3 minutes. Transfer to ice bath to cool. Drain well, pat dry, and transfer to a serving platter.
  • In a small bowl, whisk together mustard, vinegar, and sugar. Season with a pinch each of salt and pepper. Whisk in oil. Add lemon zest and tarragon; whisk to combine. Taste, and adjust for seasoning. Drizzle over asparagus. Serve immediately, or let stand at room temperature for up to 30 minutes before serving.
