OVEN FRIED POTATO CHIP CHICKEN

How to make amazing oven baked potato chip chicken just like your Grandma used to make! This is a classic oven baked chicken recipe!

Number Of Ingredients 9

6-8 pieces of chicken
1 1/3 cups of flour
1 tablespoon garlic powder
1 tablespoon seasoning salt
1 teaspoon paprika
1 teaspoon pepper
2-3 large eggs
2 cups crushed potato chips (low salt if you don't want too much salt)
1/3 cup of butter or margarine (melted )

Steps:

  • Whisk together the flour coating ingredients in a medium sized bowl.
  • Grease a baking sheet large enough for 8 pieces of chicken and set aside,
  • Beat the eggs in a small bowl.
  • First, dip your chicken into the flour mixture and cover it completely.
  • Dip it into the egg mixture, then into the broken chips for a second coat.
  • Place on the baking sheet.
  • Repeat with all chicken pieces.
  • Place in the fridge for half an hour to let the coating set.
  • Preheat your oven to 400 degrees F.
  • Melt the margarine/butter and drizzle evenly over the top of the chicken pieces.
  • Bake for 40-50 minutes or until the chicken reaches the appropriate temperature (165 for Breast meat, 180 for dark meat)
  • Remove and serve!

1 whole frying chicken, skin on, in sections
peanut oil, enough to make a 3/4" deep pool in a cast iron skillet
8 slice wonderbread® white bread, lightly toasted
DREDGE # 1
3/4 c bisquick®
1/4 c cornstarch
1 tsp table salt
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp sage, dried & ground
1/2 tsp thyme, dried & ground
DREDGE # 2
1 c buttermilk, room temperature
1 egg
DREDGE # 3
1 pkg classic lay's® potato chips, finely crushed to about the size of rolled oats
1/4 c cornstarch
1 1/2 tsp paprika
1 1/2 tsp black pepper, freshly ground
1 tsp extra fine salt [use mcdonald's® if you have to!]

Steps:

  • 1. Combine all ingredients for "Dredge # 1" and place in a loaf pan or pie tin.
  • 2. Beat the egg into the buttermilk in a small mixing bowl. This is "Dredge # 2"
  • 3. For "Dredge # 3", thoroughly crush potato chips [in the bag] to about the size of rolled oats. "Shake" in the cornstarch, paprika, salt and pepper. Place in loaf pan or pie tin.
  • 4. Heat peanut oil to about 325 degrees in a cast iron skillet [about 3/4" deep].
  • 5. Pat chicken pieces dry with a paper towel. Dredge each piece thoroughly in "Dredge # 1"; shake of excess. Place in "Dredge # 2" and let mixture drip off. Then, completely cover with "Dredge # 3", gently pressing the chip coating into the chicken skin.
  • 6. Drop chicken in the hot oil and fry for about 8 minutes on the first side and about 6 on the second [you'll know when it's about done--- it'll be deep and golden!].
  • 7. Let drain on Wonderbread® White Bread toast [you'll thank me later!!] for about 7 minutes. Then . . . you know--- enjoy!

1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon paprika

2 tablespoons mayonnaise

Steps:

  • In a large resealable plastic bag, combine the potato chips, parsley, salt, paprika and onion powder. Brush chicken with mayonnaise; add chicken to the crumb mixture and shake to coat. , Place in an ungreased microwave-safe 11x7-in. baking dish. Cover with paper towels; cook on high for 6-8 minutes or until a thermometer reads 170°.

1 quart (4 cups) vegetable oil, for frying
1 pound chicken tenders
Kosher salt and freshly cracked black pepper
1 cup potato flakes
1 cup wavy potato chips, crushed
1 cup all-purpose flour
4 large eggs, beaten

Steps:

  • Put the oil in a heavy-bottomed skillet fitted with a deep-frying thermometer. Heat over medium heat until it reaches 350 degrees F.
  • Season the chicken with salt and pepper. Mix the potato flakes and crushed chips together in a shallow dish. In a second shallow dish, mix the flour and some salt and pepper. Add the eggs to a third shallow dish. Dredge the chicken tenders on all sides first in the seasoned flour. Shake to remove any excess flour, then dip into the egg. Allow the egg to drip off. Dredge in the potato mixture until evenly coated.
  • Carefully add the chicken tenders to the hot oil and cook until golden brown, 3 to 4 minutes per side. Transfer to a cooling rack over a paper towel-lined baking sheet. Sprinkle with more salt and serve warm.

1 lb chicken tenders (or breasts cut into tenders)
3 cups potato chips, Hawaiian
1/2 cup panko breadcrumbs
1/2 cup ranch dressing
2 tablespoons lemon juice
1/4 teaspoon sea salt, to taste
1/8 teaspoon fresh ground black pepper, to taste

Steps:

  • Preheat oven to 400 degrees and grease a baking sheet with nonstick spray. In a large bowl, whisk together ranch dressing and lemon juice and season with salt and pepper. Add chicken and toss until completely coated.
  • Place your favorite potato chips and the panko in a Ziploc bag and crush with your fist, meat hammer or a rolling pin. Add chicken to bag, seal tightly, and shake vigorously until coated in crumbs.
  • Bake until chicken is golden and cooked through, 20 minutes, flipping once halfway through.

My mom used to make this all the time when I was a kid. She'd save the crumbs left at the end of every bag of Lays potato chips until she had enough to make this. This is such a fun way to eat chicken! The quantities here are approximate, to give you an idea.

4 boneless skinless chicken breasts
2 cups crushed potato chips (Lays classic)
1/2 cup grated parmesan cheese (the only time I use it out of the green can)
1 tablespoon garlic powder
3 tablespoons butter or 3 tablespoons margarine

Steps:

  • Preheat the oven to 400°F.
  • Mix the potato chips, cheese, and garlic powder in a large ziploc bag.
  • Melt the butter or margarine in a shallow dish.
  • You can cut the chicken breasts into strips if you want to do this as chicken fingers.
  • Moisten the chicken pieces in the butter or margarine, then seal them in the ziploc bag, and shake to coat.
  • Lay the chicken out on a baking sheet (I always cover the sheet with foil for easy cleanup). If you want to, you can cover the chicken with the leftover coating.
  • Bake 40 minutes for whole breasts, 30 minutes for strips.
