CINNAMON TOAST BISCOTTI

If desired 1/2 finely chopped walnuts or pecans may be added into the batter, the recipe may be doubled --- prep time includes 30 minutes chilling time, these cookies may be made up to 2 weeks in advance and stored at room temperature or frozen, please do not omit the egg wash on the cookies!

2 cups all-purpose flour
1 1/2-2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened (no substitutes)
3/4 cup sugar (increase sugar slightly for a sweeter cookie)
2 teaspoons vanilla extract or 2 teaspoons maple extract
1 large egg
1 egg yolk
1 egg, beaten (used for an egg wash)
1/4 cup white sugar
1 teaspoon cinnamon

Steps:

  • Set oven to 325 degrees F.
  • Line a large baking sheet with parchment paper.
  • In a small bowl combine flour with cinnamon, baking powder and salt.
  • In a large bowl cream the butter with sugar and vanilla until fluffy (about 4 minutes).
  • Add in one egg and the egg yolk; beat until combined.
  • Add in flour mixture; mix until just combined.
  • If you are adding in chopped nut mix in at this point.
  • Chill the dough for 30 minutes.
  • In the baking sheet roll the dough into a log about 18-20 inches long and 2-inches wide (or you may divide the dough into two pieces and roll into about 9-10 inches).
  • Using your hands flatten the log slightly.
  • Brush the top and sides of the log/s lightly with beaten egg.
  • Bake for about 25-30 minutes or until firm to the touch and light golden brown.
  • Cool logs for about 15-20 minutes on the baking sheet.
  • In a small bowl mix 1/4 cup sugar with 1 teaspoon cinnamon; set aside to sprinkle on the biscotti.
  • Using a serrated knife slice diagonally into about 3/4-inch slices or a little smaller.
  • Turn the biscotti cut-side down on the baking sheet spacing a little between each cookie.
  • Sprinkle the top of the biscotti with cinnamon/sugar mixture.
  • Bake for an additional 20 minutes or until crispy and toasted.

¾ cup butter
1 cup white sugar
2 eggs
1 ½ teaspoons vanilla extract
2 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F(175 degrees C). Grease a cookie sheet or line with parchment paper.
  • In a medium bowl, cream together butter and sugar until light and fluffy. Beat in eggs and vanilla. Sift together the flour, cinnamon, baking powder, and salt; mix into the egg mixture. Stir in the hazelnuts. Shape dough into two equal logs approximately 12 inches long. Place logs on baking sheet, and flatten out to about 1/2 inch thickness.
  • Bake for about 30 minutes in preheated oven, or until edges are golden and the center is firm. Remove from oven to cool on the pans. When loaves are cool enough to handle, use a serrated knife to slice the loaves diagonally into 1/2 inch thick slices. Return the slices to the baking sheet.
  • Bake for an additional 10 minutes, turning over once. Cool completely, and store in an airtight container at room temperature.

2 cups all-purpose flour
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
¼ teaspoon salt
⅔ cup white sugar
6 tablespoons butter
1 egg
1 egg yolk
1 teaspoon vanilla extract
1 egg, beaten
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line baking sheets with parchment paper.
  • Sift together the flour, 1 1/2 teaspoon cinnamon, baking powder and salt, set aside. In a medium bowl, cream together the 2/3 cup sugar and butter. Beat in 1 egg, egg yolk and vanilla. Stir in the dry ingredients.
  • On a lightly floured surface, divide dough into two pieces. Roll each piece into a log about 9 inches long and 1 1/2 inches wide. Place logs on the prepared baking sheet and flatten slightly. Brush with the beaten egg.
  • Bake for 25 to 30 minutes in the preheated oven, until golden and firm to the touch. Cool for 15 minutes.
  • On a cutting board, slice each log crosswise at a diagonal into 1/2 inch slices, using a serrated knife. Place back on the baking sheet, cut side down, and sprinkle with a mixture of the remaining cinnamon and sugar. Return to the oven for an additional 15 to 20 minutes, until toasted. Cool on wire racks, and store in an airtight container.

1/2 cup unsalted butter, softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup flavored ground coffee (such as hazelnut)
2 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon (see above note)
1/4 teaspoon salt
1 cup chopped hazelnuts
3/4 cup cinnamon baking chips (see above note)

Steps:

  • Heat oven to 350ºF. Line a large baking sheet with nonstick aluminum foil.
  • Beat butter and sugar until light and fluffy. Beat in eggs, one at a time. Stir in vanilla.
  • Place coffee in food processor and pulse until finely ground. Add flour, baking powder, ground cinnamon and salt; pulse to blend.
  • Add flour/coffee mixture to butter and stir until smooth. Stir in hazelnuts and cinnamon chips.
  • Divide dough in half and with floured hands, place halves on prepared baking sheet. Pat into logs measuring about 12-inches long by 2 1/2-inches wide.
  • Bake for 28-20 minutes or until browned on the edges. Remove from oven and cool for 10 minutes.
  • Place logs on a cutting board and cut into 1/2-inch slices, for a total of 32.
  • Put slices, cut side down, back onto baking sheet and bake an additional 15-18 minutes.
  • Transfer to rack and cool completely. Store in air-tight containers.

Biscotti are one of my favorite cookies. They're incredibly easy to make and taste so good when homemade with abundant nuts, dried fruit and aromatics.

235g organic all purpose flour or whole grain Kamut wheat flour (1 3/4 cups)
1 tsp baking powder
1/4 tsp salt
145g sugar (2/3 cup)
2 eggs
50g light or regular olive oil, not extra virgin (1/4 cup)
2 tsp vanilla extract
1/2 tsp of almond extract OR 1 tsp rum/brandy/frangelico
1 Tbsp of water if you are using whole grain Kamut flour
3/4-1 1/2 cups shelled pistachios (90-180g) or other nuts; make sure you chop large or hard nuts like hazelnuts and almonds
1/2 cup dried cranberries (60g)
Optional 114g (4 oz) dark chocolate, double if you want to dip the entire batch of biscotti

Steps:

  • Preheat your oven to 300F and line a medium or large baking sheet with parchment paper.
  • In one bowl, whisk together the flour, baking powder and salt.
  • In a second bowl, beat the sugar, eggs, oil and extracts/liquors.
  • Using a spatula, mix the dry ingredients into the wet until they are incorporated.
  • Add the nuts and dried fruit last.
  • Scoop half the batter out of the bowl with your spatula and lay it on your baking sheet, dragging it into a line and smoothing it with wet fingertips. Repeat with the second half of the dough until you have two smooth tubes roughly 2-3 inches wide and 1 inch tall.
  • Bake for 35 minutes until the tops are lightly golden.
  • Remove from the oven and gently set the biscotti tubes (still on the parchment) on a cooling rack for 10 minutes. Lower the oven temp to 275F while the biscotti cool.
  • Transfer the biscotti to a cutting board and cut 1-inch pieces on the diagonal using a sharp knife (I prefer a chef's knife over serrated).
  • Lay the cut biscotti on the parchment lined baking sheet, cut side up, and bake at 275F for 10 minutes.
  • Remove the sheet from the oven, flip all the biscotti over to their other cut side, and bake for 10 more minutes.
  • Let the biscotti cool completely on a rack before dipping them in chocolate. Do not store in plastic or they will soften.
  • Optional Chocolate Decoration
  • Melt 4 ounces of chopped dark chocolate in mug, using the microwave in 15-30 second increments and stirring in between (1-2 minutes total, depending on your microwave).
  • Arrange your cooling rack over the same parchment-lined baking sheet you used to bake the biscotti. (You can also place the biscotti directly on the parchment.)
  • Dip the one end of a biscotti in the melted chocolate, and scrape one side gently on the rim of the mug as you pull it out. Place the biscotti scraped-side-down on your cooling rack or parchment for minimal dripping.
  • If the chocolate re-hardens as you're dipping the biscotti, pop the mug back in the microwave for 15 seconds and clean up the sides of the mug with a spatula.
  • Let the chocolate cool and harden completely before gently popping the biscotti off the rack or parchment.

Steps:

  • Preheat oven to 325°F. Line 2 large baking sheets with parchment paper. Mix flour, 1 1/2 teaspoons cinnamon, baking powder and salt in medium bowl to blend. Using electric mixer, beat 1 cup sugar and butter in large bowl until fluffy. Add 1 egg; beat well. Add egg yolk; beat well. Mix in vanilla, then dry ingredients.
  • Transfer dough to work surface. Divide in half. Shape each half into 9-inch-long, 1 1/2-inch-wide log. Transfer logs to baking sheets. Beat remaining egg in small bowl. Brush logs with egg. Bake until golden and firm to touch (dough will spread), about 50 minutes. Cool on baking sheets. Maintain oven temperature.
  • Mix 3 tablespoons sugar and 1 teaspoon cinnamon in small bowl to blend. Using serrated knife, cut logs into 1/2-inch-wide diagonal slices. Place biscotti, cut side down, on baking sheets. Sprinkle 1/4 teaspoon cinnamon sugar over each biscotti. Bake until pale golden, about 20 minutes. Cool on racks. (Can be made 1 week ahead. Store in airtight container.)

Steps:

  • Preheat oven to 350°F. Spray large baking sheet with vegetable oil spray. Mix flour, baking powder, salt and cinnamon in medium bowl; set aside. Coarsely chop hazelnuts in processor. Transfer to small bowl. Combine sugar and butter in processor; blend until fluffy. Add orange peel and vanilla extract and blend well. Add eggs 1 at a time, blending just until incorporated after each addition. Add flour mixture; mix using on/off turns until just blended. Mix in hazelnuts using on/off turns until just blended.
  • Turn dough out onto floured work surface. Divide dough in half. Roll each half into 9-inch-long, 2-inch-wide log. Space logs 3 inches apart on prepared baking sheet. Flatten each to 12-inch-long, 2 1/2-inch-wide log. Bake until very light golden and firm to touch, about 25 minutes. Cool on baking sheet 5 minutes. Maintain oven temperature.
  • Using metal spatula, transfer logs to work surface. Using serrated knife, cut logs diagonally into 3/4-inch-wide slices. Place slices, cut side down, on large baking sheet. Bake 15 minutes. Turn biscotti over; bake until light golden and firm, about 15 minutes longer. Transfer biscotti to racks and cool. (Can be made 3 days ahead. Store airtight at room temperature.)
