This divine combination of sweet red peppers and sweet red onions goes very well with lamb. To add a little variety, add 1/4 cup raisins before serving, it's delicious!

Steps:
- In a hot saucepan over a medium heat, combine red peppers, onion, oil and butter; saute for 2 minutes. Reduce heat to medium-low and continue cooking, stirring occasionally, until the onions and peppers soften.
- If desired, stir red wine into the vegetables and cook until the wine evaporates; approximately 30 minutes. Season with salt, pepper, and basil.

- Remove seeds and ribs from peppers; cut lengthwise into strips and halve crosswise.
- Heat oil in a large nonstick skillet over medium heat. Add bell peppers and onion; season with salt and pepper. Cook, stirring occasionally, until peppers are just tender, about 10 minutes.

ROASTED YELLOW PEPPER SAUCE
This comes from the Junior League of Buffalo. I have not tried this as yet..would love your comments. UPDATE - 02/28/10: Finallly got around to making (6 yellow peppers for a dollar so I doubled recipe) this and was very pleased with the results.....now can definitely tell you....IT'S GOOOOD!

- Rub peppers with vegetable oil.
- Place on grill rack. Grill over hot coals until skin blisters and is charred on all sides, turning frequently while grilling.
- Place in sealable plastic bag. Steam until cool.
- Peel and seed. Cut into large pieces.
- Combine peppers, olive oil, egg yolk, and garlic in food processor.
- Process until smooth.
- Add salt and pepper as desired.
- Scrape clean into saucepan and heat, stirring often.
- Serve over pasta for a perky meal!

ROASTED YELLOW PEPPER SAUCE

- Roast and peel the yellow peppers, following the instructions in step one of recipe for roasted red pepper puree. Cut the peppers into cubes and set aside.
- Put 1 tablespoon of the butter in a saucepan and add the shallots, garlic, rosemary and wine. Bring to a boil and cook down by half.
- Add the cream and bring to a boil. Cook, stirring often with a wire whisk, about 10 minutes.
- Blend the flour with the remaining 1/2 tablespoon butter. Add to the sauce, stirring with a whisk.
- Put the yellow pepper cubes into the container of a food processor or, preferably, an electric blender. Blend as thoroughly as possible. Scrape the puree into the sauce and cook about 5 minutes, stirring often. Add the vine-gar, salt and pepper. It is not essential but, ideally, the sauce should be put through a fine sieve, preferably the sort called a chinois.

- Roast pepper directly over the flame of a gas-stove burner or under a broiler, turning often, until lightly charred on all sides. Place in a bowl, cover with plastic wrap, and steam 10 minutes. Scrape blackened skin from pepper, then cut in half, remove seeds, and coarsely chop.
- Put bell pepper, egg and yolk, garlic, mustard, vinegar, and salt in a food processor. With machine running, add 1/2 cup olive oil, 1 teaspoon at a time. Pour in remaining 1/4 cup olive oil and the canola oil in a slow, steady stream, processing until emulsified. Transfer to a bowl, and stir in olives, parsley, capers, creme fraiche, and lemon juice.
PERUVIAN YELLOW PEPPER SAUCE
Adapted from the Barbecue Bible Sauces Rubs and Marinades. This is an adaptation of Aji Amarillo Sauce with ingredients that may be a little easier to find. This is a good sauce to serve with grilled meat, poultry or seafood, or in recipes that call for Aji Amarillo Sauce. You can substitute additional vinegar for the lime juice.

- Preheat grill to high.
- Place pepper on grate and grill until black on all sides, 4-6 minutes per side.
- Transfer to a plate and let cool.
- Scrape off the burnt skin. It's okay if you don't get all of it.
- Stem and seed the pepper, and cut into 1" pieces.
- Place pieces in a food processor or blender.
- Add all remaining ingredients.
- Puree to a smooth paste.
- You should be able to pour the sauce. If it is too thick to pour, mix in a little water.
- Serve at room temperature.
- Can be stored, covered and refrigerated, for up to 1 week.
STUFFED ROASTED YELLOW PEPPERS OR RED PEPPERS IN TOMATO SAUCE
These roasted yellow peppers are filled with a savory mix of quinoa seasoned with garlic and parsley and tossed with Manchego or Parmesan cheese. The roasted peppers make a nice contrast in color and flavor to the sweet tomato sauce. You'll get plenty of Vitamin C and lycopene from both the peppers and the sauce in this dish.

- Roast the peppers over a flame, under a broiler or on a grill until uniformly charred. Place in a plastic bag or a tightly covered bowl and allow to cool. When cool enough to handle, remove all of the charred skin, rinse briefly and pat dry.
- Carefully cut away the stem from the peppers. Cut a slit down the side of each pepper, from the stem end to the bottom. Gently open out and remove the seeds and membranes; tip out the juice. Try to keep the peppers in one piece. Set aside.
- Heat 2 tablespoons of the olive oil over medium heat in a large, nonstick skillet and add the garlic. Cook, stirring, until fragrant, about 1 minute. Stir in the parsley and quinoa and mix together until the quinoa is coated with oil. Remove from the heat and stir in the cheese. Season to taste with salt and pepper.
- Preheat the oven to 350 degrees. Oil a baking dish large enough to accommodate all of the peppers. One at a time, lay a pepper in the dish and fill with the quinoa mixture. I do this by gently opening up the pepper, mounding the filling onto one half, and folding the other half back over the filling, overlapping the edges slightly. Lay the peppers in the dish. Cover the baking dish with foil or a lid and bake the peppers for 20 minutes. Meanwhile, reheat the tomato sauce.
- Ladle the tomato sauce onto serving plates or a serving platter. Top with the stuffed peppers and serve.

- Char bell peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel, seed, and coarsely chop bell peppers.
- Heat oil in medium skillet over medium heat. Add shallots, garlic, and chili; sauté until shallots are tender, about 5 minutes. Cool slightly. Transfer mixture to blender; add bell peppers and chicken broth. Puree until smooth. Season sauce to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill. Rewarm over medium heat before serving.)
YELLOW BELL PEPPER SAUCE RECIPE

- Cut peppers into small pieces and place in blender jar. Add juices from peppers. Process until chopped. In small saucepan, heat shallot and garlic in white wine over medium heat a few minutes or until garlic is softened. Add to blender and blend with peppers until smooth. Add lemon juice, broth, cornstarch and cream cheese, and blend on high to mix well. Pour blended mixture into a small saucepan over medium heat and stir constantly 3 to 4 minutes or until sauce is thickened and hot. Season with salt and pepper. If sauce is not completely smooth, blend again. Use as directed.
