Yellow Mung Bean Pudding with Coconut Cream image

This is a very rustic, sweet, and hearty porridge. It is easy enough to make yourself.

4 cups hulled yellow mung beans
3 ½ cups water
¾ cup white sugar
¾ cup water
⅓ cup tapioca flour
1 cup unsweetened coconut cream
½ teaspoon salt

Steps:

  • Place the mung beans in a large container and cover with several inches of warm water; let soak for 2 hours; drain.
  • Place a steamer insert into a saucepan and pour enough water to reach just below the bottom of the steamer. Cover and bring the water to a boil. Wrap the mung beans in cheesecloth and place in the steamer insert; cover the saucepan and steam the beans until tender, 25 to 30 minutes.
  • Stir 3 1/2 cups water and the sugar together in a saucepan; bring to a boil. Stir 3/4 cup water and the tapioca flour together in a bowl until the flour is dissolved; pour the mixture into the boiling water and stir until the syrup becomes clear and thickened. Gently stir the mung beans into the syrup; remove from heat and divide into 4 serving bowls.
  • Heat the coconut cream and salt together in a small saucepan over medium-low heat until warmed, but do not allow to boil. Spoon over the mung bean mixture to serve.

1 cup yellow mung beans, sorted and washed in 3-4 changes of water
3 1/2-4 cups water
3 -5 whole fresh green chili peppers, such as serrano
1/4 teaspoon ground turmeric
3/4 teaspoon salt (to taste)
1/4 cup finely chopped fresh cilantro, including the stems
2 tablespoons peanut oil or 2 tablespoons canola oil
1 teaspoon melted ghee
1 teaspoon cumin seed
1/2 small onion, finely chopped
1 tablespoon peeled minced fresh ginger
1 tablespoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon ground paprika
fresh ground black pepper

Steps:

  • Place the mung beans, 3 1/2 cups water, green chile peppers, turmeric, and salt in a saucepan; bring to a boil over high heat; decrease heat to medium and cook beans, uncovered, stirring occasionally and watching carefully that it doesn't boil over, about 10 minutes.
  • Decrease heat to low, add in the remaining water, if needed, and simmer until the beans are soft and creamy, about 15 minutes.
  • Mix in the cilantro during the last 5 minutes of cooking.
  • Transfer to a serving bowl, cover, and keep warm.
  • Heat the oil and ghee in a small saucepan over med-high heat; add in the cumin seeds; they should sizzle upon contact with the hot oil; quickly add the onion and cook, stirring, until golden, about 1 minute.
  • Add in the ginger and cook another minute.
  • Add in the coriander and cumin; stir about 30 seconds.
  • Remove pan from heat and add the paprika.
  • Immediately pour the mixture over the warm dal and swirly lightly to mix with parts of it visible as a garnish.
  • Top with black pepper and serve.

This is a fantastic and easy recipe to use when you have fresh green or yellow beans overflowing in your garden, I know, I make this bean recipe every harvest time. This recipe can esily be doubled. You will love this!

Number Of Ingredients 7

2 lbs fresh wax beans (can use both) or 2 lbs fresh green beans (can use both)
1 -2 tablespoon olive oil (can use more, and can use both oil and butter) or 1 -2 tablespoon butter (can use more, and can use both oil and butter)
2 medium onions, sliced
3 chopped fresh garlic cloves (or to taste, I use about 2 tablespoons, chopped not minced!)
2 tablespoons grated orange zest
2/3 cup orange juice
salt and pepper

Steps:

  • Rinse the beans with cold water and trim off ends.
  • In medium saucepan, steam the beans (tightly covered) in about 1/4 cup water until tender, about 5 minutes; remove from water to drain well, and set aside (I pat them dry with paper towels).
  • In a skillet heat the oil or butter (can use both).
  • Add in sliced onions, and chopped garlic; saute for about 3 minutes.
  • Add in zest, 2/3 cup orange juice, salt and pepper to taste.
  • Add in the steamed beans; toss to coat.
  • Heat for about 1 more minute or so.

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

3 1/2 to 4 cups water
3 to 5 whole fresh green chili peppers, such as serro
1/4 teaspoon ground turmeric
3/4 teaspoon salt, or to taste
1/4 cup finely chopped fresh cilantro, including soft stems
2 tablespoons peanut oil or canola oil
1 teaspoon melted ghee (optional)
1 teaspoon cumin seeds
1/2 small onion, finely chopped
1 tablespoon peeled minced fresh ginger
1 tablespoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon ground paprika
Freshly ground black pepper

Steps:

  • 1. Place the dal, 3 1/2 cups water, green chili peppers, turmeric, and salt in a medium saucepan and bring to boil over high heat. Reduce the heat to medium and cook the dal, uncovered, stirring occasionally and watching carefully that it doesn't boil over, about 10 minutes. Reduce the heat to low, add the remaining water, if needed, and simmer until the dal is soft and creamy, about 15 minutes. Mix in the cilantro during the last 5 minutes of cooking. Transfer to a serving bowl, cover and keep warm2. Heat the oil (and ghee, if using) in a small saucepan over medium-high heat and add the cumin seeds they should sizzle upon contact with the hot oil.
