SKILLET HASH AND EGGS

- Preheat the oven to 400 degrees F. Pierce the potatoes in a few places with a fork and microwave until almost tender, about 10 minutes, turning halfway through. Let cool slightly, then peel and cut into 1/2-inch dice.
- Heat the butter in a large cast-iron skillet over medium-high heat. Add the kielbasa and cook, stirring, until it starts to brown, about 3 minutes. Add the onion and caraway seeds and cook until the onion is soft, about 3 minutes.
- Stir in the potatoes, then flatten the hash into an even layer, pressing gently with a spatula. Cook undisturbed until crunchy and browned on the bottom, about 5 minutes. Flip the hash in sections and cook until browned on the other side, about 5 more minutes. Remove from the heat.
- Using a spoon, make 4 shallow indentations in the hash and crack 2 eggs into each. Transfer to the oven and bake until the egg whites set, about 10 minutes. Season with salt and pepper and top with the parsley and scallions.

Steps:
- Place sausage in a large cast iron skillet over medium heat; cook and stir until crumbly and starting to brown, about 5 minutes. Stir in potatoes; cook until starting to brown, about 5 minutes. Add onion and garlic; cook and stir until fragrant, about 3 minutes. Stir in mushrooms; cook until tender, about 5 minutes.
- Push mixture to the sides of the skillet with a spatula to make space in the center. Crack eggs into the center and sprinkle with parsley. Sprinkle Mexican cheese blend around mixture on the edges. Cover skillet and cook until egg whites are set but yolk is still runny, 2 to 3 minutes. Remove from heat, pierce yolks and mix to combine. Season with salt and black pepper.

YUMMY BREAKFAST SKILLET - FOOD NETWORK HOW MANY EGGS?
This is a GREAT breakfast dish! It is very easy and versatile. I prefer ground pork instead of the ground beef. I also add sharp cheddar cheese on top. Several times I have garnished with salsa and sour cream, very tasty! Feel free to use sausage instead of chorizo, Idaho pots instead of red, etc...just use your imagination. Steps:
- Heat 1 tablespoon oil in a skillet to medium heat, add ground chuck and chorizo, cook until brown, breaking it up as it cooks. Season with salt and pepper, to taste.
- Add potatoes, onion and 1 more tablespoon oil, if needed.
- Stir to incorporate, then let cook 8 minutes, undisturbed to form golden crust. Stir potatoes, then let cook undisturbed another 8 minutes.
- When potatoes are almost totally cooked through, mix in garlic, rosemary, and red pepper flakes.
- Form 4 pockets in the hash to put the eggs. Add a little more oil in the pockets, if necessary, so the eggs don't stick.
- Carefully pour an egg into each pocket, cover pan and turn heat to low. Cook until eggs are set to desired doneness, about 2 minutes.
- Remove to a serving platter or place on individual plates and garnish with parsley.

POLISH MEATBALLS AKA KOTLETY
This is a Polish meatball type dish that is best made with higher quality ground beef. I prefer grass fed, but its certainly easy and tasty either way. I can be easily doubled for more people. Goes well with potatoes, but most carbs will do.

Steps:
- Mix all ingredients for the kotlety in a bowl till everything comes together.
- Make golf-ball sized, or a bit larger, balls with the meat and place on a plate until needed.
- Heat a large skillet and use your preferred oil/fat, then turn the heat down low once it's heated all the way through.
- Put the meat on, it should sizzle lightly. If it doesn't, your heat is too low.
- Each kotlet should be cooked for a 3-4 minutes per side, then flipped. It will take a little time to heat them all the way through, slice with a knife if unsure.
- Once all the kotlety are cooked, put them to the side.
- Keep the heat low, and sautee the mushrooms in the pan, making sure all the browned bits and fat coat them.
- Once the mushrooms are cooked, add the heavy cream and deglaze the pan.
- Serve kotlely, pour sauce on top.

- Cook bacon in large skillet until crisp.
- Remove bacon, crumble, and set aside.
- Drain drippings, reserving 2 tablespoons in skillet.
- Add potatoes, green peppers, onion, salt, and pepper to drippings.
- Cook and stir for 2 minutes.
- Cover and cook, stirring occasionally, until potatoes are brown and tender (about 15 minutes).
- Make 6 wells in potatoes and break one egg into each well.
- Cover and cook on low heat 8-10 minutes, or until eggs are completely set.
- Sprinkle with cheese and bacon.
CAROLYN'S BREAKFAST SKILLET
Simple one-pan meal. Tired of the same old kielbasa flavor. I had 1/2 of a kielbasa left over and I just went through the pantry looking for something new to cook with it. This is what I came up with. It was a hit with my family so I thought I would share. Serve with toast.

- Combine potatoes, kielbasa, and onion in a skillet. Pour corn and diced tomatoes with liquids on top and stir to combine.
- Cover and bring to a boil over medium-high heat. Reduce heat and simmer until potatoes are tender, about 20 minutes. Add stuffing mix and stir well. Cover, remove from heat, and let stand for 5 minutes.
