SKILLET HASH AND EGGS

Skillet Hash and Eggs image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 9

3 russet or Yukon gold potatoes (about 1 1/4 to 1 1/2 pounds)
2 tablespoons unsalted butter
1/2 pound kielbasa, cut into 1/2-inch pieces (about 2 cups)
1 large sweet onion, chopped
1/2 teaspoon caraway seeds or dill seed
8 large eggs
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh parsley
2 scallions, sliced

Steps:

  • Preheat the oven to 400 degrees F. Pierce the potatoes in a few places with a fork and microwave until almost tender, about 10 minutes, turning halfway through. Let cool slightly, then peel and cut into 1/2-inch dice.
  • Heat the butter in a large cast-iron skillet over medium-high heat. Add the kielbasa and cook, stirring, until it starts to brown, about 3 minutes. Add the onion and caraway seeds and cook until the onion is soft, about 3 minutes.
  • Stir in the potatoes, then flatten the hash into an even layer, pressing gently with a spatula. Cook undisturbed until crunchy and browned on the bottom, about 5 minutes. Flip the hash in sections and cook until browned on the other side, about 5 more minutes. Remove from the heat.
  • Using a spoon, make 4 shallow indentations in the hash and crack 2 eggs into each. Transfer to the oven and bake until the egg whites set, about 10 minutes. Season with salt and pepper and top with the parsley and scallions.

SINGLE SKILLET HEARTY BREAKFAST

Single Skillet Hearty Breakfast image

A self-concocted recipe born from long nights and late mornings. A truly hearty, robust stand-alone meal. Known coast to coast thanks to wonderful friends. Likely one of my most memorable dishes according to said friends. Serve with a side of salsa, a tortilla, and your favorite glass of juice.

Categories     100+ Breakfast and Brunch Recipes     Potatoes

Time 40m

Yield 4

Number Of Ingredients 10

½ pound sage pork sausage (such as Jimmy Dean®)
1 ½ cups cubed red potatoes
½ onion, diced
1 tablespoon chopped garlic
1 cup sliced baby bella mushrooms
3 eggs
1 teaspoon parsley
½ cup shredded Mexican cheese blend
sea salt to taste
fresh cracked black pepper to taste

Steps:

  • Place sausage in a large cast iron skillet over medium heat; cook and stir until crumbly and starting to brown, about 5 minutes. Stir in potatoes; cook until starting to brown, about 5 minutes. Add onion and garlic; cook and stir until fragrant, about 3 minutes. Stir in mushrooms; cook until tender, about 5 minutes.
  • Push mixture to the sides of the skillet with a spatula to make space in the center. Crack eggs into the center and sprinkle with parsley. Sprinkle Mexican cheese blend around mixture on the edges. Cover skillet and cook until egg whites are set but yolk is still runny, 2 to 3 minutes. Remove from heat, pierce yolks and mix to combine. Season with salt and black pepper.

YUMMY BREAKFAST SKILLET - FOOD NETWORK HOW MANY EGGS?

Yummy Breakfast Skillet - Food Network How Many Eggs? image

This is a GREAT breakfast dish! It is very easy and versatile. I prefer ground pork instead of the ground beef. I also add sharp cheddar cheese on top. Several times I have garnished with salsa and sour cream, very tasty! Feel free to use sausage instead of chorizo, Idaho pots instead of red, etc...just use your imagination. Next time I am adding sauteed shrooms. From Sunny Anderson on Food Network!

Categories     Breakfast

Time 26m

Yield 4 serving(s)

Number Of Ingredients 11

3 tablespoons olive oil
1/2 lb ground chuck
1/2 lb chorizo sausage
salt & freshly ground black pepper, to taste
2 medium red potatoes, diced small
1/2 large vidalia onion, chopped
1 garlic clove, minced
1 teaspoon fresh rosemary leaf, chopped fine
1/2 teaspoon crushed red pepper flakes
4 eggs
1/4 cup fresh parsley leaves, finely chopped

Steps:

  • Heat 1 tablespoon oil in a skillet to medium heat, add ground chuck and chorizo, cook until brown, breaking it up as it cooks. Season with salt and pepper, to taste.
  • Add potatoes, onion and 1 more tablespoon oil, if needed.
  • Stir to incorporate, then let cook 8 minutes, undisturbed to form golden crust. Stir potatoes, then let cook undisturbed another 8 minutes.
  • When potatoes are almost totally cooked through, mix in garlic, rosemary, and red pepper flakes.
  • Form 4 pockets in the hash to put the eggs. Add a little more oil in the pockets, if necessary, so the eggs don't stick.
  • Carefully pour an egg into each pocket, cover pan and turn heat to low. Cook until eggs are set to desired doneness, about 2 minutes.
  • Remove to a serving platter or place on individual plates and garnish with parsley.

POLISH MEATBALLS AKA KOTLETY

Polish Meatballs Aka Kotlety image

This is a Polish meatball type dish that is best made with higher quality ground beef. I prefer grass fed, but its certainly easy and tasty either way. I can be easily doubled for more people. Goes well with potatoes, but most carbs will do.

Provided by SlooowCooker

Categories     Meat

Time 40m

Yield 8 kotlety, 4 serving(s)

Number Of Ingredients 9

1 lb ground beef (or turkey, or pork, whatever, mix a few if you like)
1/2 medium onion, diced
1 garlic clove
1 egg
1/2 teaspoon salt
1/2 teaspoon marjoram
1/2 cup breadcrumbs or 1 slice bread, soaked in warm water and made mushy
8 ounces mixed mushrooms, washed and sliced
1/4 cup heavy cream

Steps:

  • Mix all ingredients for the kotlety in a bowl till everything comes together.
  • Make golf-ball sized, or a bit larger, balls with the meat and place on a plate until needed.
  • Heat a large skillet and use your preferred oil/fat, then turn the heat down low once it's heated all the way through.
  • Put the meat on, it should sizzle lightly. If it doesn't, your heat is too low.
  • Each kotlet should be cooked for a 3-4 minutes per side, then flipped. It will take a little time to heat them all the way through, slice with a knife if unsure.
  • Once all the kotlety are cooked, put them to the side.
  • Keep the heat low, and sautee the mushrooms in the pan, making sure all the browned bits and fat coat them.
  • Once the mushrooms are cooked, add the heavy cream and deglaze the pan.
  • Serve kotlely, pour sauce on top.
