Homemade Za'atar image

This za'atar spice recipe is easy to make at home from scratch with just four ingredients. While in Lebanon wild thyme is used, regular thyme from the supermarket or your garden makes a fine substitute. Za'atar refers both to the thyme plant itself, as well as this spice mix.

3 tablespoons fresh thyme leaves
1 tablespoon sumac powder
½ teaspoon salt

Steps:

  • Toast sesame seeds in a dry skillet over medium heat until just golden, about 3 to 5 minutes.
  • Combine sesame seeds, thyme leaves, sumac, and salt in a bowl and stir until well combined.

7-1/2 cups 1-to l-1/2-inch cauliflower florets (from 2 medium heads)
2 garlic cloves, finely chopped
1/4 cup chopped fresh Italian parsley
1/4 cup chopped fresh dill
1/2 cup plus 2 tablespoons fine dry unseasoned breadcrumbs
I-1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon ground Aleppo pepper or cayenne pepper
1/2 teaspoon freshly ground black pepper
2 to 3 large eggs
Olive oil (not extra-virgin) for frying
Za'atar Aioli (optional; see recipe)

Steps:

  • Cook cauliflower in a large pot of boiling salted water until very tender, about 10 minutes. Drain and cool. Add garlic and half of cauliflower to processor; blend until smooth. Add remaining cauliflower, parsley, and dill. Pulse until cauliflower is chopped and mixture is still slightly chunky. Transfer to large bowl. Mix in breadcrumbs, baking powder, salt, Aleppo/cayenne pepper, and black pepper. Beat 2 eggs in small bowl; mix into batter. If batter is dry, beat remaining 1 egg in same bowl to blend and mix into batter by tablespoonfuls until moist but not runny batter forms, DO AHEAD Can be made 1 day ahead. Cover and chill. Add enough oil to heavy large skillet to coat bottom generously; heat over medium-high heat. Working in batches, drop 1 tablespoonful batter for each latke into skillet; flatten to l-1/2-inch round. Cook until golden, adding oil as needed and adjusting heat if browning quickly, about 2 minutes per side. Transfer to rimmed baking sheets, DO AHEAD Can be made 2 hours ahead. Za'atar image

Za'atar is the name for both a traditional Middle Eastern seasoning blend and the pungent green herb that gives the blend its intense, earthy character. The hardy herb, which grows wild, tastes like a combination of oregano, marjoram, summer savory and thyme - all of which can be used as substitutes if dried za'atar isn't available. As with all spice blends, recipes vary widely depending on the region and the cook, but this one, adapted from Lior Lev Sercarz of La Boîte in New York, includes ground sumac berries for acidity, toasted sesame seeds for their rich, earthy notes, and a little salt as well. Za'atar can be used in marinades for grilled or roasted poultry or meats, mixed into dips, salads and egg dishes, or set on the table to be sprinkled on dishes as a bright and herby condiment.

1 tablespoon/9 grams sesame seeds, preferably unhulled
3 tablespoons/5 grams dried za'atar (see Note)
1 tablespoon/10 grams crushed or ground sumac
1/4 teaspoon fine sea salt

Steps:

  • Place a small skillet over medium heat. Add the sesame seeds to the skillet and toast, stirring, until fragrant, 2 to 4 minutes. Pour into a small bowl and set aside to cool.
  • Using a spice grinder, clean coffee grinder, or mortar and pestle, ground the za'atar leaves with the sumac and salt. Add to the bowl with toasted sesame and mix well. Store in an airtight container in a cool, dark place for up to 1 year.
