1 cup Zucchini
1 box Chocolate Fudge Brownie Mix
2 Large Egg
1/4 cup Vegetable Oil
2 tablespoon Water

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C).
  • In a large bowl with the Large Egg (2), add Vegetable Oil (1/4 cup), Water (2 tablespoon), and Chocolate Fudge Brownie Mix (1 box). Mix until well combined.
  • Fold in Zucchini (1 cup), mix until well combined.
  • Pour the mixture into a greased parchment-lined baking pan, then use a spatula to smooth the top. Bake according to the package direction for about 20 minutes.
  • Allow cooling slightly before transferring to the cooling rack. Slice the brownies and serve.

½ cup grapeseed oil or melted butter
1 cup sugar
1 Tbsp. vanilla
1 large egg, room temperature
5 Tbsp. Crosby's Fancy Molasses
1 cup all-purpose flour
1 cup whole wheat or spelt flour
¼ cup ground flax
½ cup cocoa powder
1 ½ tsp. baking soda
½ tsp. salt
2 cups shredded zucchini, excess liquid squeezed out*
½ cup + 2 Tbsp. chocolate chips

Steps:

  • Line a 9"x 9" pan with parchment paper or grease it well.**
  • Whisk together butter, sugar, vanilla and molasses. Add egg and mix well.
  • In a separate bowl, whisk flours, flax, cocoa powder, baking soda and salt.
  • Add this mixture to the wet ingredients and mix well.
  • Fold in the zucchini and ½ a cup of the chocolate chips.
  • Spread in prepared pan. Sprinkle over remaining 2 Tbsp. of chocolate chips and press them in a bit.
  • Bake at 350 F for 35 to 40 minutes

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.

You can use low fat or nonfat yogurt and egg replacers to make it even lower in fat and cholesterol, but the full fat yogurt really adds to the texture of the brownies.

1 cup white sugar
6 tablespoons unsweetened cocoa powder
10 tablespoons plain yogurt
2 eggs
⅛ teaspoon salt
1 teaspoon vanilla extract
½ cup all-purpose flour
1 tablespoon all-purpose flour

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8 inch baking dish.
  • In a medium bowl, stir together the sugar, cocoa powder and yogurt. Stir in the eggs one at a time until well blended, then add vanilla and salt. Stir in the flour until just absorbed. Spread evenly into the prepared pan.
  • Bake for 28 to 32 minutes in the preheated oven, until the brownies begin to pull away from the sides of the pan, and a toothpick inserted comes out fairly clean (sticky crumbs are okay). Cool brownies in the pan over a wire rack before cutting into squares. Cover tightly with plastic wrap to store.

  • Preheat oven to 350 degrees F.

  • Then add baking soda, salt, and zucchini and mix together.
  • Add flour and walnuts and mix together.
