For those of you that have leftover zucchini from your gardens, here is a delicious gluten free zucchini chocolate chip mini muffin recipe. Our garden is just petering out with the severe frost we had last weekend and I need to get going on pulling up all the wilted plants from the yard. 1/4 cup coconut flour
1/4 teaspoon celtic sea salt
1/4 teaspoon baking soda
1 teaspoon cinnamon
2 eggs
1/4 cup grapeseed oil
1/4 cup agave nectar
1 1/2 cups grated zucchini (do not pack down when measuring)
1/2 cup dark chocolate, 73%

Steps:

  • 1. In a medium bowl, combine coconut flour, salt, baking soda and cinnamon.
  • 2. In a large bowl, combine eggs, oil, agave and zucchini.
  • 3. Mix dry ingredients into wet thoroughly.
  • 4. Stir in chocolate chips.
  • 5. Grease a mini muffin tin with grapeseed oil and lightly dust with coconut flour.
  • 6. Spoon approximately 1 tablespoon of batter into each muffin tin.
  • 7. Bake at 350° for 18-22 minutes.
  • 8. Cool and serve.

I developed this recipe when I had an abundance of zucchini and wanted a muffin to have with a chicken dinner. These savory muffins are great as a quick breakfast too! They're a hit even with those who think they don't like zucchini!

1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ cup butter, melted
1 egg, lightly beaten
1 cup milk
1 cup shredded unpeeled zucchini
1 clove garlic, minced
¾ cup shredded Cheddar cheese
¼ cup freshly grated Parmesan cheese
4 slices bacon, cooked crisp and crumbled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Mix the flour, baking powder, baking soda, and salt in a bowl.
  • In another bowl, stir together the butter, egg, milk, zucchini, and garlic until well blended. Mix the flour mixture into the milk mixture, about 1/2 cup at a time, stirring between additions, until the flour mixture is incorporated. Fold in the Cheddar cheese, Parmesan cheese, and crumbled bacon, and pour the batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 30 to 35 minutes. Allow muffins to cool slightly before removing from muffin cups; serve warm. Refrigerate leftovers.

1/2 cup vegetable oil
1/2 cup reduced-fat sour cream
1 teaspoon vanilla
1 cup shredded zucchini, squeezed dry
2/3 cup quick-cooking or old-fashioned oats

Steps:

  • Heat oven to 350°F. Lightly spray 30 mini muffin cups with cooking spray.
  • In large bowl, stir together flour, granulated sugar, brown sugar, salt, baking powder, baking soda and cinnamon. Make well in center of dry ingredients. Add eggs, vegetable oil, sour cream and vanilla; mix until well blended. Stir in zucchini, oats, chocolate chips and coconut just until combined. Fill muffin cups about 3/4 full.

1/2 cup shredded cheese
1/2 cup breadcrumbs
1/4 teaspoon black pepper

Steps:

  • Preheat Oven to 350 Degrees. Spray mini muffin tin with non-stick cooking spray.
  • Grate Zucchini into clean dish towel or layered paper towels. Ring out as much water as you can.
  • In a medium sized mixing bowl beat (2) eggs. Add zucchini, onion, cheese, bread crumbs and black pepper. Mix well.
