Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee. A few tables are set up, and they are open when they have time to serve. To indicate they are serving, they will hang a straw broom over the doorway. The combination of the onions and the 'green' wine can have explosive consequences later on!

6 pounds onions, sliced
4 slices bacon
1 (16 ounce) container sour cream
4 egg
2 tablespoons all-purpose flour
½ teaspoon salt
½ teaspoon caraway seed
2 recipes pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a jelly-roll pan or large pizza pan with prepared dough, making sure dough extends up sides of pan.
  • Saute onion in a skillet until translucent and pour cooked onion into a large mixing bowl. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, chop and add to onion; mix well.
  • Stir in sour cream. Beat eggs enough to break up yolks, then mix in to pie mixture. Add flour to thicken mixture (onions will create a lot of water), then add salt. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seed.
  • Bake in preheated oven for about 1 hour, or until onions start to turn golden brown on top.

German Zwiebelkuchen is almost a meal in itself and is relatively fast to make. It has a slightly sweet base, with a savory topping made from eggs, sour cream, onions, bacon, caraway seeds, and salt. The bottom is crisp and crunchy, the middle tender and spongy, and the topping succulent with juicy onions and bacon.

3/4 cup milk
5 tablespoons unsalted butter, room temperature, plus more for bowl
1/4 cup sugar
Salt
Grated zest of 1/2 lemon
3 large egg yolks
1 package active dry yeast
3 cups plus 1 1/2 teaspoons all-purpose flour, plus more for rolling out dough and wrap
3 strips bacon, cut into 1/2-inch dice
3 large onions, finely chopped
1/3 cup plus 2 tablespoons sour cream
1 large egg
1 teaspoon caraway seeds

Steps:

  • Place milk and 4 tablespoons butter in a small saucepan, and heat until butter has melted. Remove pan from heat, and let mixture cool until tepid.
  • Place milk mixture in the bowl of an electric mixer fitted with the paddle attachment. On low speed, add the sugar, 1/2 teaspoon salt, lemon zest, egg yolks, and yeast. Gradually add 3 cups flour, creating a dough that is soft but not sticky.
  • Turn dough out onto a floured surface, and knead until it is smooth and elastic and springs back when you poke it with your finger, about 5 minutes. Place in a large buttered bowl, and cover tightly with plastic wrap. Set in a warm place until dough has doubled in bulk, about 1 hour.
  • Heat oven to 400 degrees. Line an 11-by-17-inch baking sheet with parchment. Punch dough down, and roll out to a 1/4-inch thickness. Place on prepared baking sheet, and cover with buttered plastic wrap; let rise until dough doesn't spring back when you poke it with your finger, about 20 minutes.
  • Melt remaining tablespoon butter in a large skillet over medium heat. Add the bacon, and cook until golden and crisp and most of fat has been rendered, about 6 minutes. Add onions, and cook, stirring occasionally, until translucent, 8 minutes. Reduce heat to low. Sprinkle 1 1/2 teaspoons flour over onions, and stir in. In a small bowl, whisk together sour cream and the egg, and stir into the onion mixture. Cook, stirring, until mixture thickens, about 1 minute. Remove skillet from heat, and season with salt.
  • Spread mixture on top of dough, and let rise 15 minutes more. Sprinkle top with caraway seeds. Bake until edges are crisp and brown, about 30 minutes. Transfer to a wire rack to cool, and serve. Bread will keep, wrapped and unrefrigerated, up to 4 days.

1 cup white onion, sliced
2 eggs

1/4 cup parsley, chopped
1/3 cup emmenthaler cheese, grated

1 (12 inch) prepared pizza crust, thawed

Steps:

  • Preheat oven to 400ºF.
  • Cook bacon over medium high heat until cooked through. Remove bacon strips and add sliced onions to hot pan. While onions cook over medium heat, cut bacon strips into small pieces.
  • Once sliced, add bacon back to pan and continue cooking until onions are soft and fragrant.
  • Allow onions and bacon to cool.
  • Beat eggs and combine with sour cream, parsley, cheese, nutmeg, pepper and salt.
  • Fill rolled dough with onions and bacon. Pour the egg cream mixture over the onions and bacon. Bake at 400ºF for 25-35 minutes or until a knife inserted in the middle comes out clean.

I got this off a German website and translated it into English. This recipe is very good, and you will not be disappointed! Good for a potluck, or even a party snack.

25 g fresh yeast
1/4 liter lukewarm milk
375 g flour
60 g butter
1 egg
1/8 teaspoon salt
1/8 teaspoon sugar
1 kg onion, peeled and cut into rings
150 g raw bacon, diced
500 g creme fraiche
4 eggs
1/8 teaspoon pepper
1/8 teaspoon nutmeg

Steps:

  • For the dough:.
  • Dissolve the yeast in the lukewarm milk, and add the sugar and a dash of the flour, stir, cover and keep in a warm place for ten minutes.
  • Add the rest of the dough ingredients in the pastry mixer and blend until you have a ball.
  • Cover and keep in a warm place for twenty minutes until the dough rises.
  • Preheat the oven to 225°C.
  • Sautée the onion'rings' with the bacon in a large skillet, until the onions are transparent, and soft, but not caramelized.
  • This should take about 10-15 minutes.
  • In a seperate bowl, mix the eggs, the creme fraiche, the nutmeg, and pepper together with a whisk until well incorporated and smooth.
  • Roll the dough out into a flat, large roasting pan (you want something with a slight edge to it) and then pour the onion and bacon mixture over the dough and spread it out to cover the dough evenly.
  • Pour the egg-creme fraich mixture over the top and put it in the oven for 30-40 minutes, or until golden brown on top.

1 large onion, cut lengthwise into quarters, then crosswise into thin slices
1 frozen puff pastry sheet (1/2 of 17.3-oz. pkg.), thawed
2 eggs
1/2 cup sour cream
1/8 tsp. ground nutmeg
3 KRAFT Big Slice Aged Swiss Cheese Slices, cut into quarters
2 Tbsp. minced fresh chives

Steps:

  • Heat oven to 400°F.
  • Melt butter in large skillet on medium heat. Add ham and onions; cook on medium-low heat 12 to 14 min. or until onions are tender and golden brown, stirring occasionally. Remove skillet from heat.
  • Unfold pastry sheet; cut into 12 squares. Press 1 square onto bottom and up side of each of 12 muffin pan cups sprayed with cooking spray.
  • Whisk eggs, sour cream and nutmeg in medium bowl until blended. Add onion mixture; mix well. Spoon into pastry cups; top with Swiss pieces. Sprinkle with chives.
  • Bake 12 to 14 min. or until filling is set in centers, and edges of pastry cups are golden brown. Transfer tarts from muffin pan to wire racks; cool slightly.

Where I come from in Germany, Zwiebelkuchen (onion cake, onion pie or onion tart) is a typical early fall specialty. It is made of sauteed onions with cream, egg and bacon on a rich yeast dough crust. It is usually served with Neuer Wein ("new wine").

  • For the dough:
  • Dissolve the yeast in the lukewarm milk, and add the sugar and a dash of the flour, stir, cover and keep in a warm place for ten minutes.

1 1/2 teaspoons instant yeast
1 teaspoon salt
1 tablespoon vegetable oil
1 cup lukewarm water
For the topping
8 ounces bacon, sliced crosswise into ¼-inch pieces
2 pounds yellow onions (about 4 medium-large), peeled and cut in ½-inch dice
Pinch of sugar
1 teaspoon salt, divided
1 1/2 cups sour cream
2 eggs
Freshly ground nutmeg and black pepper, to taste

Steps:

  • To make the dough. In a large mixing bowl combine the flour, yeast and salt. Using a wooden spoon, stir in the oil and warm water. Transfer the dough to a floured work surface and dust with some of the remaining flour. Knead for about 10 minutes, until the dough is smooth and elastic. Wash and dry the bowl, then lightly grease with oil. Return the dough to the bowl, cover tightly with plastic wrap and let rise until doubled, 1 to 1 ½ hours. To make the topping. While the dough is rising, in a large skillet over medium heat cook the bacon, stirring frequently, until the fat is rendered out and the bacon is crisp around the edges, 2 to 3 minutes. Remove with a slotted spoon and drain on paper towels. Pour off all but 3 tablespoons of fat from the skillet, then add the onions, sugar and ½ teaspoon of the salt. Sauté over medium heat for about 20 to 25 minutes, until the onions are completely soft and just beginning to caramelize around the edges. Remove from the heat and cool completely. In a medium bowl stir together the sour cream, eggs and remaining ½ teaspoon salt. Add freshly ground nutmeg and black pepper to taste. Line an approximately 12-by-17-inch baking sheet or jellyroll pan with parchment paper. With floured hands, stretch and pat the dough out to cover the entire sheet, pressing it up to form a ridge around the edge. Spread the cooled onions over the dough. Sprinkle with the cooked bacon. Pour the sour cream mixture over the top and spread to distribute evenly. Let stand in a warm place while you preheat the oven to 425 degrees. When the oven is hot, carefully slide the pan onto the center rack and bake for 25 to 35 minutes, or until the topping is firm and the dough is golden. Let cool slightly, then cut into squares. Enjoy with a glass of Federweisser or your favorite crisp white wine.
