1/2 cup vegetable oil
1/3 cup finely chopped onion
3 cloves garlic, minced
1 cup diced peeled carrot
1 1/2 cups diced celery
1 1/2 lbs ground chuck or 1 1/2 lbs very lean hamburger
20 small mushroom caps
1/2 cup sherry wine
1 (6 ounce) can tomato paste
1 (17 ounce) can diced tomatoes
1 teaspoon salt (to taste)
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 (8 ounce) package small shell pasta
1 (10 ounce) package frozen chopped spinach
1/2 cup fresh bread, cubes buttered
1 cup grated sharp cheddar cheese
grated parmesan cheese

Steps:

  • Heat the oil in a large skilled and saute onion, garlic, carrot, celery and mushrooms for about 5 minutes until onion is golden.
  • Add beef and cook stirring continuously until no longer red.
  • Add tomato paste, diced tomatoes, sherry, salt, pepper, oregano, basil.
  • Simmer uncovered for 1 1/2 hours.
  • Cook macaroni and spinach as per package directions.
  • Drain well and add to sauce.
  • Heat oven to 350 degrees F.
  • Place mixture in a 3 quart casserole dish.
  • Top with bread cubes and cheddar cheese.
  • Bake uncovered for 30 minutes.
  • Serve sprinkled with parmesan cheese.

1 lb ground beef or 1 lb ground turkey
1/4 cup chopped green pepper
1/2 cup chopped onion
2 garlic cloves, chopped
1 (10 ounce) can tomatoes, with green chilis. (rotel)
1 (10 1/2 ounce) can tomato soup
1 cup uncooked white rice
1 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper
4 -6 drops red pepper sauce
1 head cabbage, chopped
2 cups shredded colby cheese

Steps:

  • Cook meat, garlic, and onion.
  • Stir in tomatoes,rice, soup, and spices.
  • Spread in ungreased 13X9 casserole dish.
  • Top with chopped cabbage.
  • Cover and bake in preheated oven at 350 for 45 minutes.
  • Remove and sprinkle cheese on top.
  • Bake another 15 minutes or just until cheese melts.

This pleasing recipe was given to me many years ago by a very dear friend. I've made some changes in the ingredients, but the snappy Cajun flavor is still there.

1 lb ground beef
2 small onions, chopped
1 green pepper, chopped
1 clove garlic, minced
6 cups chopped cabbage
1 1/4 cups uncooked long grain rice
1 (14 1/2 ounce) can stewed tomatoes
1 (8 ounce) can tomato sauce
1 cup water
1 teaspoon sugar
2 teaspoons cajun seasoning
1 teaspoon salt
1/2 teaspoon pepper
oil (for frying)
cayenne pepper (optional)

Steps:

  • In large dutch oven add oil for frying and brown the beef and drain it, then return it to the original pan.
  • Add onions gr pepper and garlic, cook until onions are transparent.
  • Add the cabbage, rice, tomatoes, tomato sauce, water and seasonings.
  • Cover and bake at 375 for 50-60 minutes or until cabbage is tender.

1 box 8-1/2oz pkg. corn/bread muffin mix
1 lb lean ground beef
2 can(s) 14-1/2oz ea. diced tomatoes
2 c frozen mixed vegetables-thawed
1 can(s) 6oz tomato paste
1-2 tsp cajun seasoning
1 c 4oz-shredded chedder cheese
2 green onions..thinly sliced

Steps:

  • 1. Prepare corn muffin mix according to package instructions. Spread into a greased 11"x7" baking dish.
  • 2. Cook beef in a large skillet over medium heat until meat is no longer pink; drain. Add the tomatoes,vegetables,tomato paste, and seasonings. Bring to a boil.Reduce heat: simmer,uncovered for 5 minutes. Pour over top.(corn bread) Sprinkle with cheese.
  • 3. Bake in a preheated 350 oven for 25-30 minutes or until golden brown. Sprinkle with onions.

2 (10 3/4 ounce) cans condensed cream of chicken soup
1 1/2 lbs ground beef
1 cup ketchup
1/4 cup packed brown sugar
3 teaspoons cajun seasoning
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper
2 cups sour cream
1 small onion, chopped
1/4 teaspoon pepper
1 (30 ounce) package frozen shredded hash browns, thawed
2 cups shredded cheese
3/4 cup crushed corn flakes (optional)
1/4 cup butter, melted (optional)

Steps:

  • Preheat oven to 350 degrees Farenheit and coat a 3-quart baking dish with nonstick cooking spray.
  • Brown beef in a skillet over medium heat. Pour off excess liquid, then add ketchup, brown sugar, Cajun seasoning, garlic salt, and cayenne pepper.
  • Combine sour cream, onion, pepper, hash browns, and Cheddar cheese in the prepared baking sheet. Pour beef mixture on top.
  • Sprinkle with cornflakes and drizzle with butter (optional).
  • Bake for 45 minutes to 1 hour, then serve.

  • Place the shredded potatoes in a large mixing bowl and drizzle with 2 tablespoons of the oil. Add the salt and pepper and stir together until ingredients are well mixed. Transfer the potatoes to the baking dish and press them down across the surface of the dish and partially up the sides to form a “crust” along the bottom of the pan. Place the dish in the oven and bake for 35 minutes.
  • While the potatoes are baking, bring the butter over medium-low heat in a medium saucepan until melted. Add the flour a little at a time, whisking it into the butter until combined. Add the milk a little bit at a time, whisking it into the flour mixture until smooth and well combined. Turn the heat up to medium for a few minutes until the milk is warmed. Add the shredded cheese to the mixture and whisk the mixture together. Continue to heat for another 3-5 minutes, whisking periodically, until the cheese is melted into the sauce. Set aside to thicken while completing step 4.
  • Pour the remaining teaspoon of oil into a skillet and bring over medium heat. Add the onion and bell pepper and cook for a few minutes until both are softened. Add the ground beef and continue to cook, breaking the beef up into small pieces with a cooking spoon until the beef is cooked through. Add the Cajun or blackened seasoning and stir together until well combined.
