Leaves from 2 bunch fresh basil
2 tablespoons pine nuts, untoasted
1 garlic clove
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmigiano-Reggiano
Salt and freshly ground black pepper
1 pound angel hair pasta

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again.
  • Cook the pasta in the boiling, salted water until al dente, about 3 minutes. Drain and transfer to a large bowl. Add the pesto and toss. Taste for salt and pepper, and add a drizzle of oil, if you like.

3/4 c olive oil
1/2 c pine nuts, crushed
2 can(s) sliced ripe olives, drained (2 1/4 ounce cans)
18 clove garlic, crushed (about 1 small head)
2 Tbsp fresh basil, chopped
16 oz angel hair pasta
1/4 c parmesan cheese, freshly grated

Steps:

  • 1. Combine the first 5 ingredients in a skillet. Cook over medium heat until thoroughly heated. Take care not to burn the garlic!!
  • 2. Set aside and keep warm.
  • 3. Cook the pasta according to the package directions; drain well. Place the pasta in a bowl.
  • 4. Add the pine nut mixture and toss well. Sprinkle with cheese.

1/4 pound angel's hair pasta or capellini
3/4 teaspoon minced garlic
2 tablespoons olive oil
2 tablespoons pine nuts, toasted golden
2 tablespoons fresh lemon juice
1 1/2 teaspoons freshly grated lemon zest
1/4 cup minced flat-leafed parsley leaves

Steps:

  • Bring a large saucepan of salted water to a boil for pasta.
  • In a small saucepan cook garlic in oil over moderately low heat, stirring, until softened and transfer mixture to a large bowl. Add pine nuts, crushing them lightly with the back of a fork, lemon juice, zest, parsley, and salt and pepper to taste.
  • Cook pasta in boiling water until al dente and, reserving 2 tablespoons of the cooking water, drain well. Add pasta with the reserved cooking water to bowl and toss with lemon mixture until it is absorbed. Serve pasta warm or at room temperature.

1/2 lb angel hair pasta, cooked according to package directions
1/4 cup pine nuts
2 tablespoons olive oil
4 ounces diced onions
5 asparagus spears, rough ends removed and sliced into small bite size pieces
4 1/2 ounces canned mushrooms, rinsed
3 garlic cloves, minced
1 limes, juice of or 1 tablespoon lime juice
14 1/2 ounces diced tomatoes
1 tablespoon dried Italian herb seasoning
1/2 cup evaporated milk
2 cups baby arugula or 2 cups Baby Spinach, is good too
8 fresh basil leaves, rough chopped
1/3 cup parmesan-romano cheese mix, grated

Steps:

  • In a large pan toast pine nuts, remove from pan set aside.
  • Add olive oil to pan, when hot add the onions and saute 3 minutes.
  • Add garlic, asparagus, mushrooms, lime juice, diced tomatoes, and dried herbs. Simmer 20 minutes.
  • Stir in evaporated milk, arugula, basil. Toss in hot angel hair and grated cheese.
  • Add some Pasta water if needed.
  • Plate in a large serving bowl and top with pine nuts.
  • Garnish with additional extra virgin olive oil drizzled over pasta and grated cheese.
  • Heartly enjoy!

This recipe is almost identical to one on Growing A Greener World with Joe, the Gardener. I assume it is the original because the picture that was emailed to me by a friend seemes to be identical so I removed the picture as I did not have permission to use it. I apologize for the mistake. I have been making a similar angel hair with pesto but love this version and hope to keep it posted with the proper credits. I have been growing a really nice Basil for the past couple of years. This is one of my favorite, very simple, very delicious dishes using it.

PESTO:
2 cup(s) fresh basil leaves packed tightly, plus more for garnish
2 medium garlic cloves, peeled
1/2 cup(s) pine nuts, plus more for garnish
1/2 cup(s) good quality extra-virgin olive oil
1/2 cup(s) freshly grated parmigiano-reggiano, plus more for garnish
- salt and freshly ground black pepper as desired
ANGEL HAIR PASTA:
- water and salt as directed on pasta package
1 pound(s) angel hair pasta

Steps:

  • PESTO: In a blender or food processor, process the following together: basil, garlic, and pine nuts. Turn off blender or processor and scrape down the sides, then add 1/4 cup of the olive oil. Process once again. Scrape down again. Add the remaining 1/4 cup oil, and process one last time until the desired texture is achieved. Stir in (do not process in blender or processor) the cheese, until combined.
  • ANGEL HAIR PASTA: In a large pot bring some water to a rolling boil. Add Kosher or sea salt to the water. This is the only time that the pasta can be seasoned properly. Add the pasta, stir, and cook according to package directions for "al dente". Set aside about a cup of the pasta cooking water. Drain the pasta and quickly toss with the pesto while pasta is still very hot. Add back some of the pasta cooking water if the sauce seems too thick. Garnish with grated Parmigiano-Reggiano cheese, a few pine nuts, a light drizzle of olive oil, and some fresh basil.

1 (16 ounce) package angel hair pasta
¼ cup butter
2 cloves garlic, minced
2 pounds sea scallops, rinsed and patted dry
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons fresh lemon juice
salt and freshly ground black pepper to taste
½ cup heavy cream
1 tablespoon grated Parmesan cheese to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Melt butter in a skillet over medium heat. Stir in the garlic and cook just until fragrant and softened, about 1 minute. Slice any scallops over 3/4-inch thick in half so they'll cook evenly; stir scallops, basil, and parsley into the skillet. Cook and gently stir just until scallops feel slightly firm when pressed with a finger, 2 to 3 minutes. Scallops will become tough and chewy if overcooked. Stir in lemon juice, and season with salt and black pepper. Pour in cream if you like a thicker sauce. Bring the mixture just to a bare simmer.
  • Serve over hot angel hair pasta; sprinkle to taste with Parmesan cheese.

1 lb angel hair pasta
2 tablespoons olive oil
2 tablespoons butter
1 1/2 lbs shrimp, peeled,tails left on,deveined,and rinsed (35 to 40 per lb.)
3 tablespoons minced garlic
3/4 teaspoon hot chili flakes
1/4 teaspoon fresh ground pepper
salt
1 cup dry white wine
2 cups fresh basil leaves, slivered
1/2 cup toasted pine nuts

Steps:

  • In a 6- to 8-quart pan over high heat, bring about 4 quarts water to a boil; add angel hair and cook, stirring occasionally, just until tender to bite, 3 to 4 minutes.
  • Drain pasta, reserving about 1/3 cup cooking liquid; return pasta to pan.
  • Meanwhile, large frying pan over medium-high heat, melt butter with olive oil.
  • Add shrimp, garlic, chili flakes, pepper, salt; stir for 2 minutes.
  • Add wine; stir often until shrimp are opaque.
  • Cook 2 more minutes.
  • Stir in basil.
  • Pour shrimp mixture into pan with cooked pasta; mix gently.
  • If mixture is too dry, add reserved pasta-cooking liquid.
  • Divide evenly among four wide, shallow bowls.
  • Add salt to taste.
  • Top with pine nuts.
