1 teaspoon finely chopped fresh garlic
6 medium Roma tomatoes, coarsely chopped
1/4 cup chopped fresh basil leaves
2 tablespoons Land O Lakes® Butter with Canola Oil
Freshly shredded Parmesan cheese, if desired

Steps:

  • Cook pasta according to package directions. Drain. Keep warm.
  • Place garlic into 10-inch nonstick skillet. Cook over medium heat 1 minute. Add tomatoes and basil. Continue cooking, stirring occasionally, 1-2 minutes or until heated through.
  • Toss together hot pasta, tomato mixture and Butter with Canola Oil in serving bowl. Sprinkle with cheese, if desired.

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

4 cloves garlic (sliced or shaved thinly)
1 pound ripe tomatoes (chopped 1/4 inch with juice)
½ pint cherry, pear, grape or currant tomatoes (halved)
¼ teaspoon kosher salt
8 ounces uncooked angel hair pasta
¼ cup fresh basil leaves (whole and torn)
2 tablespoons fresh Italian parsley leaves (chopped)
¼ cup freshly grated Parmesan cheese (divided)
freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil and add salt.
  • In a 12-inch pan, heat olive oil reserving 1/2 tablespoon to drizzle just prior to serving, and place over medium-high heat. Add garlic and cook, stirring for 2 minutes or until light golden. Add tomatoes and salt, and cook for 3 to 4 minutes or until some moisture from fresh tomatoes begins to evaporate.
  • Cook pasta in the boiling water. Following manufacturer's suggested cooking time, cook until tender but just so (al dente). Drain and reserve about 1/3 cup of the pasta water and hold the drained pasta in the colander while finishing the dish.
  • To the pasta pot, add the tomatoes, basil, parsley and 1/2 of the parmesan cheese. Toss to incorporate flavors and ingredients, adding the reserved 1/3 cup pasta water.
  • Drizzle with the remaining olive oil and serve immediately. Pass the remaining parmesan and freshly ground black pepper, to be added to taste.

1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Steps:

  • Cook bacon in large skillet until crisp. Meanwhile, cook pasta in large saucepan as directed on package, omitting salt.

I adore angel hair pasta, and such a fine pasta doesn't always need a big sauce. Serve with some kind of cheese or "cheez" if you wish, sprinkled on top. My children like it with sliced olives. There are many versions of this simple recipe, this one I adapted from www.cookingnook.com. This would probably be good for 4 as a side dish or 4 for lunch with a salad.

2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup dry white wine
1 lemon, juice of
1 tomatoes, diced
sea salt, to taste
8 ounces angel hair pasta
1/4 cup fresh basil, roughly chopped
pepper, to taste

Steps:

  • Bring a large pot of salted water to boil over high heat.
  • Meanwhile, heat the olive oil up a large saute pan over medium heat. Once warm add the garlic and cook until it just begins to brown -- too long or too high and the garlic will burn.
  • Remove the pan from the heat and deglaze by pouring in the wine. Return the pan to the heat and cook for a few minutes. The wine should reduce by about half. Add in lemon juice, chopped tomato, and sea salt to taste. Stir once or twice then remove the pan from the heat again and set it aside to wait for the pasta.
  • Add the pasta to the boiling water and cook until desired tenderness, following package directions. Drain, then add the cooked pasta to the pan with the garlic & tomato mixture, along with the basil and some freshly ground pepper. Toss well, (if your pan isn't big enough, just do the tossing in a large serving bowl).
  • *Tip: 4 ounces of uncooked pasta (spaghetti, angel hair, vermicelli, fettuccine or linguine) = a 1-inch diameter bunch of dry pasta = 2 cups cooked pasta. Generally they say 2 ounces of pasta is one serving, but for larger appetites this might not be enough.

Steps:
