This is a quick and easy but so-good dessert for any time of year. My mother made it, and it brings back fond memories of growing up in Vermont, where some of the best apples can be found in the Heroes. Serve with whipped cream or milk.

½ cup white sugar
6 tablespoons all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon salt
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a shallow 8-inch baking pan.
  • Line apple slices on the bottom of the prepared pan.
  • Mix sugar, flour, cinnamon, and salt together in a bowl. Stir in butter and peanut butter until crumbly. Spread mixture over the apples in the pan.
  • Bake in the preheated oven until top is golden brown, about 45 minutes.

¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon

¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.

6 tablespoons brown sugar
2 cups chopped pecans
A few shakes salt
1/2 teaspoon cinnamon
2 teaspoons grated lemon rind
2 teaspoons lemon juice
1/2 cup chilled, unsalted butter

Steps:

  • Preheat oven to 375 degrees.
  • Mix the apples and cranberries with 2 tablespoons flour, and spoon into a 9-by-9-inch baking dish.

  • Stir sugar and water in heavy medium saucepan over low heat until sugar dissolves. Increase heat; boil without stirring until syrup turns deep amber, occasionally brushing down sides of pan with brush dipped into water and swirling pan. Remove from heat. Gradually add cream (mixture will bubble vigorously). Stir over low heat until caramel melts. Add butter and stir until melted. Let cool slightly. Serve Caramel Sauce warm.
