- TO PREPARE CAKE:
- Preheat oven to 350*. Spray a 13x9 baking pan with nonstick cooking spray. Set aside.
- Beat together sugar, oil, eggs and vanilla until light.
- Sift together flour, baking soda, baking powder, salt and cinnamon.
- Stir flour mixture into egg mixture until well-combined.
- Stir in apple and walnuts.
- Spread in prepared pan and bake for 1 hour and 15 minutes or toothpick clean inserted in center.
- TO PREPARE TOPPING:.
- Combine buter, half and half and brown sugar in a medium saucepan and bring to a boil.
- Boil 3 minutes, stirring occasionally.
- Cool slightly and Pierce cake with a knife a few times so topping will penetrate.
- spread on warm cake.
- Serve with whipped cream if want.

An apple lover's cake for sure!! Very moist with a carmel-like frosting. Great for serving guests and for family celebrations. This recipe has been used frequently by my relatives.

- Beat eggs and mix with sugar, oil and vanilla.
- Combine flour, salt and baking soda and add to egg mixture.
- Fold in apples and pecans. Pour into greased and floured tube cake pan.
- Bake at 350 degrees for 1 hour.
- For Frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Cool and spread on cake.

My college roommate's grandmother used to send us slices of this delicious cake while we roomed together. I begged my roommate to get the recipe from her grandmother. I copied this recipe down during a long distance phone call to her grandmother. Since that day, I've made this many times over. My children today love this one and call it Mom's "college cake".

Steps:
- Mix eggs, oil and sugar; blend well.
- Add flour, salt and soda.
- Mix well.
- Fold in vanilla, chopped apples and nuts.
- Place into a greased (Pam sprayed) 8-9" tube pan.
- Bake at 350* for one hour.
- Meanwhile, prepare the topping: Combine all topping ingredients in saucepan and cook for 2 1/2 minutes.
- While cake is still in the tube pan and still hot, pour warm topping over it.
- Let cake set in pan until cool, or room temperature.
- Invert cake with topping onto serving dish.
- Store covered.

APPLE DAPPLE CAKE
Steps:
- Grease and flour a 9×13-inch baking pan.
- Preheat oven to 325 degrees F. Place rack in upper third of the oven.
- Sift flour, baking soda, cinnamon, nutmeg and salt in a medium bowl then sift a second time.
- In the bowl of a stand mixer with the paddle attachment, mix vegetable oil with both sugars until well mixed.
- With mixer running, add one egg at a time and once mixed, add vanilla and mix and scrape the bowl.
- Slowly add the dry ingredients with mixer running on low. Scrape the bowl again and mix.
- Peel, core and cut the apples into bite sized pieces and fold into the batter.
- Fold the walnuts into the batter then spread the batter evenly into the prepared pan.
- Bake in top third of the oven for 45-50 minutes or until a toothpick comes out clean.
- As soon as the cake comes out of the oven, put all glaze ingredients into a small sauce pan and bring to a boil. Boil and stir with a wooden spoon continuously for one minute.
- Remove from heat and pour over the top of the warm cake.
- Cool the cake or serve warm by cutting into 12 pieces (3 rows X 4 rows).

This is the best apple cake that I have ever eaten. It is so amazing!!! My mom has been making it for as long as I can remember. I made it for work one time and everybody that I worked with absolutely loved it. Hope you enjoy.

Steps:
- Mix oil, sugar, eggs, and vanilla together.
- Sift the plain flour, salt, soda, & cinnamon together and then add to the wet mixture.
- Fold in the pecans and apples last.
- Mix by hand as batter is very stiff.
- Bake in a greased & floured 13x9 pan at 350 for 40-45 minutes.
- To make topping: Mix the brown sugar, milk & margarine and bring to a boil on the stove. Boil for 3 minutes.
- Punch holes in the cake with a wooden spoon and then pour the topping over the cake.
- Allow the cake to sit until cool.
- Enjoy!

- Position oven rack in middle position; preheat oven to 350°; grease a 16 cup tube pan.
- Whisk the flour, cinnamon, baking powder, baking soda, and salt together in a bowl.
- In a big bowl, beat the sugar, oil, eggs, and vanilla together using an electric mixer on medium speed until thick and glossy, about 2 minutes.
- Decrease mixer speed to low and slowly beat in the flour mixture, in 3 additions, until just incorporated.
- Stir in apples and nuts.
- Scrape batter into prepared pan; smooth the top.
- Wipe any drops of batter off the sides of the pan and gently tap the pan on the counter to settle the batter.
- Bake for 50-60 minutes, until a wooden pick comes out with a few moist crumbs attached, rotating the pan halfway through baking.
- Let the cake cool in the pan for 10 minutes; run a small knife around the edge of the cake to loosen, then flip it out onto a wire rack.
- Turn the cake rightside up and let it cool completely, about 2 hours.
- The glaze: boil all of the glaze ingredients together in a small saucepan over med-high heat until thick and syrupy, about 1-2 minutes.
- Drizzle the thick glaze over the top and sides of the cake, let the glaze set, about 25 minutes before serving.
