1 cup pastry flour
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon baking powder
1 cup plus 1 tablespoon butter flavored shortening, chilled
1/3 cup ice cold water
1 tablespoon vinegar
1 egg, beaten
4 cups apples (Rome or Jonathan), peeled and sliced
2 tablespoons butter
2 teaspoons lemon juice
1/2 cup sugar
1 tablespoon tapioca
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
1 teaspoon vanilla extract
1/4 tablespoon heavy cream
1 (27-ounce) jar mincemeat (recommended: None Such Classic or Original)
1 egg white, slightly beaten
1 tablespoon sugar
Pastry cut-outs or dollops of whipped topping

Steps:

  • Preheat oven to 450 degrees F.
  • For the pie crusts:
  • In a large bowl, combine the flours, salt, sugar and baking powder. Cut in shortening with a pastry blender until the mixture resembles cornmeal. In small bowl, mix water and vinegar with the beaten egg. Add the liquid mixture 1 tablespoon at a time to the flour mixture, tossing with a fork to form a soft dough. Shape into 3 disks. Wrap in plastic wrap and chill in refrigerator. Use 2 disks when making this pie. Freeze remaining dough for later use. Roll out 1 disk and place into a 9-inch pie dish for bottom crust.
  • For the apple filling: Combine the apples, butter and lemon juice in a saucepan over medium heat and cook for about 8 minutes. Cool slightly.
  • In a medium bowl combine the sugar, tapioca, cinnamon, nutmeg and salt. Add slightly cooled apples and mix well. Stir in vanilla and cream. Place apple mixture into bottom of pie crust, spreading evenly.
  • Spread the mincemeat on top of apple filling. Roll out another dough disk and adjust over the filling. Flute edge and vent top. Brush with egg white and sprinkle with sugar.
  • Bake for 15 minutes and then reduce oven temperature to 350 degrees F and bake for 30 to 35 minutes longer, or until golden. Garnish, as desired, with baked pastry cut outs or whipped topping.

2 tablespoons butter
2 teaspoons lemon juice
½ cup white sugar

1 cup chopped walnuts
1 package of refrigerated pastry for double-crust pie (such as Pillsbury®

1 tablespoon water

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Place apples, butter, and lemon juice into a saucepan over medium heat, and cook, stirring often, until the apples are tender, 8 to 10 minutes. Stir in sugar, cinnamon, nutmeg, and vanilla extract. Mix in the mincemeat and walnuts until thoroughly combined, and set the pie filling aside.
  • Fit a pie crust into a 9-inch pie dish; pour the filling into the crust. With a brush dipped in water, moisten the edge of the bottom crust. Top the pie with the second crust, and crimp the two crusts together with a fork to seal. Cut 4 slits into the top crust for steam vents. In a small bowl, whisk the egg yolk with water, and brush the yolk mixture over the top crust.
  • Bake in the preheated oven for 15 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Remove the pie from the oven, and cover the crust edges with strips of aluminum foil to prevent over baking. Return the pie to the oven, and bake until the crust is golden brown and the filling is bubbling, 30 to 35 more minutes.

3 medium Gala or Granny Smith apples, cored, pared and thinly sliced
3 tablespoons all-purpose flour
2 tablespoons butter, melted
1 None Such® Ready-to-Use Classic Original Mincemeat
1 None Such® Brandy and Rum Mincemeat
1 large egg yolk mixed with 2 tbsps. water

Steps:

  • 1. PLACE rack in lower half of oven. Heat oven to 425°F. Line 9-inch pie plate with 1 crust.
  • 1. To substitute condensed mincemeat for ready-to-use mincemeat, crumble two (9 oz.) packages NONE SUCH® Condensed Mincemeat into small saucepan; add 1 1/2 cups water. Boil briskly 1 minute. Cool. Proceed as above.
  • 2. TOSS apples with flour and butter in large bowl; turn into prepared crust. Spoon mincemeat evenly over apple mixture.
  • 3. COVER with top crust. Seal and flute edges. Cut slits near center. Brush egg mixture over crust, if desired. Bake 10 minutes.

1 (27 ounce) jar mincemeat (NONE SUCH Mincemeat brand, ready-to-use regular or brandy & rum)
3 medium apples, all-purpose kind, cored, pared and thinly sliced
3 tablespoons flour
2 tablespoons butter, melted (or you can use margarine)
1 egg yolk, plus (optional)
2 tablespoons water (optional)
Cool Whip, thawed (optional)

Steps:

  • Place rack in lower half of oven; preheat oven to 425 degrees F.
  • In a large bowl, toss apples with flour and butter; turn into prepared crust.
  • Spoon mincemeat evenly over apple mixture.

A layer of apples, a layer of mincemeat and a streusel topping. I am not a huge fan of mincemeat but my father is, so every holiday I make him a mincemeat pie. This one is really Good and it looks as good as it tastes!! I got this recipe out of a "Borden, Home for the Holidays" leaflet years ago.

1 9 in. unbaked pastry shell
3 all-purpose apples, peeled and thinly sliced
1/2 cup unsifted flour, plus
3 tablespoons unsifted flour
2 tablespoons margarine or 2 tablespoons butter, melted
1 (32 ounce) jar ready to use mincemeat (Regular or Brandy & Rum)
1/4 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/3 cup cold butter or 1/3 cup margarine
1/4 cup chopped nuts (I use walnuts)

Steps:

  • In a large bowl, toss apples with 3 Tablespoons flour and the melted margarine; arrange in a pastry shell.
  • (To save time, you can use a frozen pastry shell, thawed).
  • Top apples with mincemeat.
  • In medium bowl, combine remaining 1/2 cup flour, sugar and cinnamon; cut in cold margarine until crumbly.
  • Add nuts; sprinkle over mincemeat.
  • Bake in lower half of 425* degree oven 10 minutes.
  • Reduce oven temperature to 375*; bake 25 minutes longer or until golden brown.
  • Cool.
  • Serve with whipping cream.

2 teaspoons salt
1-1/3 cups shortening

FILLING:
1/4 pound ground beef
3 medium apples, peeled and chopped
1 medium apricot, peeled and chopped
3/4 cup packed light brown sugar
1/2 cup golden raisins
1/2 cup unsweetened apple juice
1 tablespoon cider vinegar
1-1/2 teaspoons grated orange zest
1-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/4 cup rum
1 large egg, beaten
1 to 2 tablespoons coarse sugar

Steps:

  • In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add ice water, tossing with a fork until dough forms a ball. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight., For filling, in a large skillet or Dutch oven, cook beef over medium heat until no longer pink, 3-5 minutes, breaking into crumbles; drain. Add apples, apricot, brown sugar, raisins, apple juice, vinegar, orange zest and seasonings. Bring to a boil; reduce heat. Simmer until apples are tender, 15-17 minutes. Stir in rum.   • Combine first 17 ingredients in heavy large saucepan or Dutch oven. Cook over low heat until apples are very tender and mixture is thick, stirring occasionally, about 1 1/2 hours. Cool filling completely. (Can be prepared up to 1 week ahead. Cover and refrigerate.)
  • Position rack in lowest third of oven and preheat to 400°F. Roll out 1 pie crust disk on lightly floured surface to 13-inch-diameter round (about 1/8 inch thick). Roll up dough on rolling pin and transfer to 9-inch-diameter glass pie plate. Gently press into place. Trim edges of crust, leaving 3/4-inch overhang.
