TRADITIONAL APPLE NOODLE KUGEL

Traditional Apple Noodle Kugel image

Sweet apple and noodle dish of east European origin. Kugels can be made in many flavors, both sweet and savory. Serve either warm or cold, as a side dish or a dessert. Like lasagna, kugel tastes better the day after it is made. Jonagold and Rome Beauty are two apple varieites ideal for this dish.

APPLE NOODLE KUGEL

This is a really easy, really delicious way of making a great kugel. The recipe calls for wide noodles and I will post it that way, but I prefer medium noodles. The recipe was in a pamphlet from Comstock-Wilderness and we enjoyed it, I hope you do too.

  • Preheat oven to 350. Prepare a 9 x 13 baking dish either by lining with unbleached parchment paper OR greasing with olive oil.
  • Cook noodles: If using spaghetti or capellini (or any long pasta), break noodles in half and add to rapidly boiling salted water and stir well. Cook for 6 minutes. Drain and rinse with cool water to stop the pasta from cooking any further. Set aside.
