CLASSIC APPLE TART

Apple tart is my family's favorite dessert. I love it because it makes the house smell amazing and the tart looks so polished and beautiful (taking a few extra minutes to fan out the apples makes it look like it came from a bakery!). This is a French-style apple tart, not an apple pie, meaning a wedge of the tart is thinner and neater than a slice of all-American apple pie. Try it topped with ice cream for that delicious a la mode taste. Rolling the dough for the tart makes for a finer-textured crust, but on many occasions I have simply pressed the crust into place with great results.

Number Of Ingredients 7

1 stick unsalted butter, cut into1-inch cubes, plus 1 tablespoon, melted
11/2 cups all-purpose flour, plus extra for rolling
1/4 teaspoon kosher salt
2 tablespoons sugar
3 Granny Smith apples
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon

Steps:

  • Set the cubed butter on a plate and place it in the freezer for 15 minutes. Fill a cup with ice and water and set aside. Place 1 1/2 of the flour, 1 8 teaspoon of the salt, and 1 tablespoon of the sugar in the bowl of a food processor and pulse to combine. Take the butter out of the freezer and add it to the flour. Pulse the mixture until it looks like wet sand, about 10 seconds. Add 2 to 3 tablespoons of the ice water and pulse until the dough comes together into a ball.
  • Lightly flour your work surface and place the dough on top. Then lightly flour the top of the dough and roll to about a 10- to 11-inch circle, sprinkling more flour under and on top of the dough as necessary. Gently drape the dough over the rolling pin and transfer it to a 9- or 9 1/2-inch fluted tart pan (ideally one with a removable bottom). Fit the dough into the bottom and up the sides of the pan as evenly as possible and press off excess dough from the fluted rim. Set the tart pan on a baking sheet and place in the refrigerator for 15 minutes.
  • Preheat the oven to 350degreesF. Peel, core, and quarter the apples and then thinly slice them lengthwise. Place the apples in a large bowl and toss with the lemon juice, the cinnamon, and the remaining 1 tablespoon sugar and 1 8 teaspoon salt. Remove the baking sheet with the tart shell from the refrigerator. Arrange the apples in concentric circles so they overlap slightly. Brush the edges of the crust with the melted butter and then bake until the edges are golden and the apples have cooked down, about 1 hour. Cool for 15 minutes before slicing and serving.

2 cups all-purpose flour
2 (3 ounce) packages cream cheese
1 cup butter
6 tablespoons white sugar
1 ½ teaspoons vanilla extract
1 egg
¾ cup packed brown sugar
1 cup chopped walnuts

Steps:

  • To make Pastry: Cream together butter and cream cheese. Add the 6 tablespoons white sugar, 2 cups flour and blend well.
  • Shape into balls about 1 inch in diameter (flour palms of hands to facilitate rolling). Place ball in greased tartlet pan and flatten. Should fill pan by 3/4.
  • To Make Filling: Mix together vanilla, egg, brown sugar, and chopped nuts.
  • After flattening ball in tartlet tin make a thumb print in center and fill with a full 1/2 teaspoon of nut filling.
  • Bake in a 350 degrees F (175 degrees C) oven for 17 to 20 minutes. Cool completely before removing from pan.

Hana says: This tart is not kosher for Passover, so wait until after the holiday to make it. Gitta Friedenson, an old friend, passed along the recipe. Use a glass dish so you can check how brown the bottom gets. And don't serve it too hot, because it falls apart.

1/2 pound (2 sticks) margarine
2 large eggs
1/2 cup sugar
2 cups flour, or more as needed
1 teaspoon baking powder
2/3 cup apricot marmalade
1/2 cup chopped walnuts
5 Granny Smith apples, peeled, cored and thinly sliced
1 1/2 teaspoons cinnamon
4 tablespoons confectioners' sugar

Steps:

  • Prepare dough: In the bowl of an electric mixer, combine margarine, eggs and sugar. Mix until blended. Add flour and baking powder, and mix until smooth. Dough should be very soft but not sticky; if necessary, gradually add up to 1/2 cup flour. Cover, and refrigerate 1 hour.
  • Preheat oven to 350 degrees. Divide dough in two. Lightly oil a 7-by-11-inch glass baking pan. On a lightly floured surface, roll out half the dough to fit into bottom of pan. Spread marmalade evenly over dough in pan. Sprinkle with walnuts. Toss apples with cinnamon, and spread evenly over walnuts.
  • Roll out remaining dough to about 8 by 12 inches, so that it will blanket apples. Place dough in pan, tucking in edges. Bake until surface is golden brown and bottom is light brown, 45 minutes to 1 hour. (If surface browns too quickly, cover with foil.) Remove from oven. Through a sieve, dust 2 tablespoons confectioners' sugar over hot tart. Allow tart to cool.
  • Cut tart into 24 squares. Sprinkle with remaining sugar and serve.

1 sheet frozen puff pasty, thawed
All-purpose flour (for surface)
4 tablespoons peanut or other nut butter
4 tablespoons apple butter
1 pound firm baking apples (about 2 large), peeled, cored, sliced into 1/2-inch wedges
1/4 cup chopped salted, roasted peanuts or other nut
2 tablespoons unsalted butter, cut into pieces
Sugar (for sprinkling)
1 large egg

Steps:

  • Preheat oven to 425°F. Roll out puff pastry on a lightly floured surface into a long rectangle. Cut in half crosswise (halves should be almost square). Transfer to a parchment-lined rimmed baking sheet; prick with a fork in several places. Using a small offset spatula, spread 2 Tbsp. peanut butter in the center of each half to make a 5" round, then spread 2 Tbsp. apple butter over top of each nut-butter round. Pile up apples in the center of each puff pastry and top with peanuts. Dot fruit with butter and sprinkle with sugar.
  • Beat egg and 1 tsp. water in a small bowl, then brush pastry with egg wash and fold up edges around apples, leaving the center open. Press along the folded edges to lightly seal. Brush outside of pastry with egg wash and sprinkle with more sugar. Let chill in freezer 10 minutes.
  • Bake tarts until puff pastry is golden, 15-20 minutes. Reduce oven temperature to 350°F and continue to bake until pastry is deep golden brown and apples are tender, 20-25 minutes.

  • Tarts can be baked 6 hours ahead. Store uncovered at room temperature.

1 pinch salt
2 eggs, beaten, divided
½ cup low-fat milk

Steps:

  • Place brown sugar, currants, pecans, grated apple, 3 tablespoons butter, cream cheese, maple syrup, vanilla extract, cinnamon, and pinch of salt in a saucepan; bring to a boil. Reduce heat; simmer until slightly thickened, about 10 minutes. Leave to cool slightly, about 10 minutes.
  • Reserve about 1 tablespoon of the 2 beaten eggs for topping. Whisk a small amount of the warm apple mixture into the remaining beaten eggs; whisk the egg mixture into the apple mixture. 2/3 cup packed brown sugar
1/3 cup Gold Medal™ all-purpose flour

Steps:

  • Heat oven to 425°F. Make pastry as directed-except roll into 13-inch round. Place on ungreased large cookie sheet. Cover with plastic wrap while making filling.

10 medium apples - peeled, cored, and thinly sliced
1 medium lemon, zested and juiced
½ cup walnuts, finely chopped
1 teaspoon ground cinnamon
½ cup white sugar
1 ¼ sticks unsalted butter, softened
1 large egg
1 ¾ cups all-purpose flour
⅓ cup apricot jam
¼ cup cognac

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a small cookie sheet.
  • Mix apple slices with lemon juice in a bowl. Stir lemon zest, walnuts, and cinnamon together in a separate bowl.
  • Mix sugar and butter together in another bowl. Mix in egg, followed by flour until a dough forms.
  • Spread dough over the prepared cookie sheet with your hands. It will be thin. Sprinkle walnut mixture evenly over the dough and press it in with your hands. Arrange the apple slices over top.
  • Bake in the preheated oven for 30 minutes.
  • While the tart is baking, heat the apricot jam in microwave or stovetop until it reaches a liquid consistency, about 1 minute.

1/2 cup Crisco
3 1/2 tablespoons ice water
6 apples
1/4 cup apple jelly or red currant jelly
3/4 cup applesauce
1 tablespoon sugar

Steps:

  • Pre-heat oven to 400.
  • Mix flour and salt together. Cut in the Crisco until dough turns into pea-sized pieces. Add ice water slowly and mix. Form dough into ball and roll out for a 9-inch fluted tart pan.
  • Quarter the apples, removing stems and seeds. Slice the apples paper-thin.
  • Melt the apple jelly or red currant jelly over low flame and brush half the melted jelly over the bottom of the crust. Spread two-thirds of the apples in the bottom of the crust. Spread the applesauce over the apples. Top the tart with remaining apples, arranging them carefully in overlapping, circular pattern. Sprinkle with sugar.
  • Bake at 400 degrees for 50 minutes. Let stand at room temperature. Glaze with remaining melted jelly.
