Steps:
- Preheat the oven to 350 degrees F.
- Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
- For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
- Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

- Preheat oven to 400°
- In a large mixing bowl, whisk together flour and brown sugar. Add 1 cup of butter and mix on low speed until crumbly.
- In a medium bowl, whisk sugar, salt, nutmeg and cinnamon together and set aside.
- Peel, core and slice apples and pears. Put in a large bowl, add walnuts.
- Mix in sugar mixture and stir until all fruit and walnuts are coated well.

- WALNUT CRISP TOPPING:
- 1. Add 1 cup of walnut pieces to a food processor and pulse until finely ground.
- 2. In a small bowl, combine ground walnuts, flour, brown sugar, oats, cinnamon. Cut butter into mixture until a coarse crumb forms.
- 3. Coarsely chop the remaining 1/2 cup of walnut pieces and stir into crumb mixture until incorporated. Set aside while preparing the fruit filling.
- APPLE PEAR FRUIT FILLING ASSEMBLY:
- 1. Preheat oven to 350°F.
- 2. In a bowl, toss together apples, pears, sugar, cornstarch, cinnamon, salt and lemon juice.

- Heat oven to 190C/fan 170C/gas 5. Put the chopped apples, lemon zest, rosemary, if using, and sugar in a saucepan. Add the lemon juice and cook for 3-4 mins. Tip in the pears and cook 2-3 mins more, until the fruits are just beginning to soften. Spoon the fruits and juices into a 1.7 litre pudding dish and flatten slightly.
- For the crumble, finely chop half the walnuts in a food processor until reduced to the consistency of ground almonds. Add the flour, butter and sugar and continue to blitz to a coarse or fine crumble mix, whichever you prefer.
- Roughly break the remaining walnuts with your fingers and stir into the crumble. Scatter the crumble mix on top of the fruits and bake for 20-25 mins until golden brown. Serve warm with cream or custard.

- Set oven to 375 degrees.
- Butter a 10-inch deep-dish glass pie plate (or use an 11 x 7-inch baking dish).
- For the topping; in a bowl stir together the flour, oats, brown sugar, cinnamon and pinch salt; add in butter and blend with fingers until mixture resembles coarse meal.
- Add in the toasted walnuts; set aside while preparing the filling.
- In a large bowl toss the apple slices with the lemon juice; add in all remaining ingredients except the vanilla ice cream, toss well to combine and transfer to the prepared pie plate or baking dish.
- Sprinkle the prepared topping evenly over the apple mixture.
- Bake for about 30-40 minutes or until the topping is browned and the apples are fork-tender.
- Let the crisp stand for 15 minutes before serving.
- Serve warm with vanilla ice cream.
