Fancify your holiday gathering with this French-style appetizer Made from a choux dough teeming with slightly sweet and nutty Asiago, these gougères come out of the oven with an impressive golden-brown look every time Pair with champagne or alongside a fruit and cheese board and they'll be the stars of the party, guaranteed

Number Of Ingredients 8

1/2 cup (113g) water
3 tablespoons (43g) butter
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup (65g) all-purpose flour
2 large (100g) Pete and Gerry's Organic Eggs
1 tablespoon fresh chives, minced
3/4 cup (65g) Asiago cheese, grated

Steps:

  • Preheat oven to 425F. Bring the water, butter, salt, and pepper to a boil in a medium saucepan, stirring occasionally. Turn heat to medium-low, add the flour all at once and stir vigorously with a wooden spoon or spatula until mixture pulls away from the sides of the pot and forms a smooth, pasty ball. Continue cooking and stirring for 1 minute after dough has smoothed out.
  • Transfer dough ball to the bowl of an electric stand mixer and beat on low speed for 2-3 minutes to cool slightly. Add eggs, one at a time, mixing on medium speed after each addition, and scraping the bowl well. Batter will appear lumpy at first, but will smooth out after a minute or two. Add the grated cheese and chives and mix until combined.
  • Drop the dough by the tablespoonful on a baking sheet, at least 2" apart. Bake for 10 minutes, then turn the oven down to 375F and bake for an additional 15 to 20 minutes, until golden brown.
  • For an all-american twist, substitute a sharp cheddar cheese for the asiago.

Threw this together this morning to use up a huge chunk of Asiago cheese and also to help keep my ailing chive plant alive (it was getting overgrown!) This is a GREAT combination--Asiago is a wonderful cheese that's too often overlooked, and of course the combination of chives and eggs is a classic one. Enjoy!

2 -3 tablespoons asiago cheese, cut up into tiny chunks (I just do this as I add the cheese to the skillet)
2 eggs
2 egg whites
1 teaspoon water
2 -3 tablespoons chopped fresh chives
salt and pepper, to taste
butter (For frying, I used nonstick cooking spray) or other fat (For frying, I used nonstick cooking spray)

Steps:

  • Beat together eggs, whites, and water.
  • Heat skillet with your choice of skillet coating (fat or cooking spray) over medium heat.
  • Add eggs, stirring slowly.
  • Add chunks of cheese and the chives and keep stirring for about 3-4 more minutes, until at your desired state of doneness/texture.

This burger is savory, moist, and slightly spicy with the sumptuous flavor of Asiago cheese. I made this up for my husband's birthday. It is always a challenge between us to cook the best burger. I think mine is in the lead so far. Do you agree?

1 pound ground beef sirloin
1 tablespoon Worcestershire sauce
½ cup buffalo wing sauce
1 teaspoon freshly ground black pepper
1 teaspoon sea salt
1 teaspoon garlic powder
2 tablespoons olive oil
½ cup sweet onion, sliced
¼ cup barbeque sauce
4 hamburger buns, split
¼ cup Additional ketchup
½ cup grated Asiago cheese
8 slices cooked bacon

Steps:

  • Mix the beef, Worcestershire sauce, buffalo wing sauce, pepper, salt, and garlic powder in a large bowl. Form mixture into four patties. Place the patties on a plate; cover. Refrigerate for at least 1 hour.
  • Preheat an outdoor grill for high heat.
  • Heat the olive oil in a skillet over medium-high heat. Cook and stir the onion in the olive oil until translucent, about 5 minutes; set aside.
  • Cook the beef patties on the preheated grill on one side for about 5 minutes; brush the top of each burger with 1 tablespoon of barbeque sauce; flip. Cook burgers until well done, or the internal temperature reaches 180 degrees F (85 degrees C), about five minutes more.
  • Place one burger on the bottom half of each bun. Top each burger with cooked onions, ketchup, Asiago cheese, and bacon slices; sandwich with top of bun and serve.

Steps:

  • In a large mixing bowl, beat together the eggs, salt, milk, tarragon, and paprika. Season with pepper.
  • Mix the grated cheeses together in a bowl.
  • Cut the bagels into bite-size pieces.
  • Grease a 2-quart soufflé or casserole dish.
  • Starting with the bagel pieces, alternately layer bagel pieces and grated cheese into the dish.
  • Pour the egg mixture evenly over everything, cover the dish and refrigerate overnight.
