Grits is a main ingredient for many Southern meals. I've had this recipe for years and never grow tired of it. It's especially good to serve on a lazy weekend, since leftover portions are very tasty served cold.

1 pound bulk pork sausage
4 cups water
1 teaspoon salt
1 cup quick-cooking grits
4 large eggs, lightly beaten
1-1/2 cups shredded sharp cheddar cheese, divided
1/2 cup whole milk
1/4 cup butter, softened

Steps:

  • Crumble sausage into a large skillet. Cook over medium heat until no longer pink; drain and set aside. In a saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat and cook 4-5 minutes, stirring occasionally. Remove from the heat. Stir a small amount of hot grits into the eggs; return all to the saucepan, stirring constantly. Add the sausage, 1 cup cheese, milk and butter, stirring until the butter is melted. , Pour into a greased 13x9-in. baking dish. Sprinkle with remaining cheese. Bake at 350° for 50-55 minutes or until the top begins to brown.

1 pound bulk pork sausage
1 cup chopped onion
1 cup chopped celery
½ cup chopped green bell pepper
1 cup quick-cooking grits
4 cups water
1 teaspoon salt
1 (10.75 ounce) can condensed cream of celery soup
1 cup shredded Cheddar cheese

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Butter a 2-quart casserole dish.
  • Heat a large skillet over medium heat; cook the sausage in the hot skillet until completely browned, 5 to 7 minutes. Add the onion, celery, and green pepper; cook and stir until tender, about 5 minutes more. Transfer to the prepared casserole dish.
  • Bring the grits, water, and salt to a boil in a saucepan; reduce heat to medium-low, cover, and simmer until the grits are tender, about 30 minutes. Add to the sausage mixture in the casserole dish and stir; press into an even layer. Pour the soup over the mixture in an even layer. Sprinkle the Cheddar cheese over the soup.
  • Bake in the preheated oven until the cheese has melted, about 30 minutes.

Serve this cheesy baked grits casserole for breakfast or as a side for dinner.

3/4 cup of uncooked grits
3 cups of water
1/2 stick of butter
1 cup of shredded cheddar cheese
4 large eggs
1 teaspoon of salt
1/4 cup of crumbled bacon or bacon bits to garnish (optional)

Steps:

  • Preheat the oven to 350. Spray a 1-1/2 quart baking dish with nonstick cooking spray.
  • Boil the grits in 3 cups of salted water on medium-high heat until thickened.
  • Turn the heat down to medium-low. Add the butter and 3/4 cup of the cheese. Stir frequently until the cheese and butter melt.
  • Remove the mixture from the heat and cool until it is lukewarm.
  • In a medium bowl, beat the eggs. Stir the eggs into the grits and cheese. Mix well.
  • Pour the grits, cheese, and egg mixture into the baking dish.
  • Sprinkle the remaining cheese over the top of the mixture.
  • Put the casserole in the oven.
  • Bake for 40 minutes.
  • If you want to garnish with crumbled bacon or bacon bits, sprinkle them on top the last 5 minutes of baking.Serve hot.

4 1/2 cups boiling water
1 teaspoon salt
10 ounces herb-and-garlic cheese, such as Boursin
1/4 cup (1/2 stick) salted butter
2 medium eggs
1/2 cup milk
1 tablespoon salted butter, melted
1 cup crushed cornflakes

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-by-2-inch casserole dish.
  • Cook the grits in the boiling water with the salt until thickened, about 5 minutes. Add the cheese and butter to the hot grits and stir until melted and incorporated. Beat the eggs and add the milk to the beaten eggs. Slowly stir the egg mixture into the grits. Pour the mixture into the prepared dish. 1 onion, very thinly sliced
4 cups low-sodium chicken broth
2 cups coarse stone-ground grits
2 cups heavy cream
2 cups grated Monterey Jack cheese

Steps:

  • In a heavy pot, cook the bacon over medium heat to render the fat, about 2 minutes. Add the onions and cook with the bacon until the onions are golden brown and the bacon is chewy, about 5 minutes. Carefully add the chicken broth and 2 cups water. Whisk in the grits. 1 envelope knorr leek soup mix
1 1/4 cups quick-cooking grits
1/2 cup butter
1/4 cup chopped onion

Steps:

  • Spray a 1 1/2 quart baking dish with nonstick cooking spray; set aside.
  • In a large saucepan, bring water and milk to a boil.
  • Add in the soup mix and whisk until blended.
  • Using a wooden spoon, slowly stir in grits; continue stirring until the consistency is smooth.
  • Cook and stir grits for 5 minutes or until they are thick and creamy.

2 cups uncooked grits
½ cup butter, divided
3 cups shredded Cheddar cheese, divided
1 pound ground pork sausage
12 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
  • Bring water to a boil in a large saucepan, and stir in grits. Reduce heat, cover, and simmer about 5 minutes, until liquid has been absorbed. Mix in 1/2 the butter and 2 cups cheese until melted.
  • In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and mix into the grits. Beat together the eggs and milk in a bowl, and pour into the skillet. Lightly scramble, then mix into the grits.
  • Pour the grits mixture into the prepared baking dish. Dot with remaining butter, and top with remaining cheese. Season with salt and pepper.

4 slices bacon, chopped (optional)
2 teaspoons extra-virgin olive oil
1 small onion, diced
4 garlic cloves, minced
2 cups reduced-sodium chicken broth or 2 cups vegetable broth, divided
1/4 teaspoon salt
16 cups chopped collard greens (about 1 large bunch, 1 1/2-2 pounds) or 16 cups kale, stems removed (about 1 large bunch, 1 1/2-2 pounds)
2 cups water, plus more as needed
1 cup grits (not instant)
3/4 cup shredded extra-sharp cheddar cheese, divided
1/4 cup prepared salsa
1 large egg, lightly beaten

Steps:

  • Preheat oven to 400°F Coat an 8-inch-square baking dish with cooking spray.
  • Place bacon (if using) in a large Dutch oven. Cook over medium heat, stirring often, until crispy, 4 to 6 minutes. Remove with a slotted spoon to a paper towel-lined plate to drain. Pour off the bacon fat.
  • Return the pot to medium-low heat; add oil, onion, and garlic and cook, stirring often, until fragrant and starting to brown in spots, 2 to 8 minutes (cooking time will be quicker if you started with bacon). Add 1 cup broth and salt; bring to a boil over high heat. Add collards (or kale); stir until wilted down to about one-third the volume and bright green, 1 to 2 minutes. Cover, reduce heat to medium-low, and simmer, stirring occasionally, until tender, 18 to 20 minutes. Adjust heat during cooking to maintain a simmer, and add water, 1/4 cup at a time, if the pan seems dry.
  • Meanwhile, bring 2 cups water and the remaining 1 cup broth to a boil in a large saucepan. Pour in grits in a steady stream, whisking constantly. Bring to a simmer, whisking constantly. Reduce heat to medium-low and cook, whisking often, until thick, about 5 minutes. Combine 1/2 cup cheese, salsa, and egg in a small bowl. Remove the grits from the heat and quickly stir in the cheese mixture until combined.
  • Working quickly, spread about half the grits in the prepared baking dish. Top with greens, spreading evenly. Spread the remaining grits over the greens. Sprinkle with the remaining 1/4 cup cheese and the reserved bacon (if using).
  • Bake the casserole until hot and bubbling, about 20 minutes. Let stand for about 10 minutes before serving.
