CRISPY EGGPLANT (AUBERGINE) FINGERS

1 medium eggplant
2/3 cup seasoned bread crumbs
1/3 cup grated parmesan cheese
1/2 teaspoon salt or 1/2 teaspoon salt substitute
1/2 teaspoon celery salt
1/2 teaspoon pepper
2 eggs
2 tablespoons milk
olive oil or vegetable oil

Steps:

  • Peel eggplant, cut into finger-size strips.
  • Combine next 5 ingredients, stir well.
  • Roll eggplant strips in breadcrumb mixture, dip in egg mixture, and roll again in breadcrumbs.
  • Fry in hot oil 375 degrees until golden brown.
  • Drain on paper towels.
  • Serve with your favorite warm marinara sauce.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by my Aunt Jane.

Number Of Ingredients 6

2 lbs eggplants
2 cups milk
2 cups flour
2 1/2 cups fresh breadcrumbs
oil (for deep frying)
powdered sugar

Steps:

  • Peel eggplants and cut into 1/2 inch strips.
  • Heat oil in deep fat fryer to 375 degrees.
  • Dip eggplant strips into milk, then flour. Then dip into milk again and finally into bread crumbs.
  • Fry about 12 at a time for 4 minutes. Drain on paper towels.
  • Serve sprinkled with powdered sugar.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by the Tallman Family. They run a potato processing plant in town. So, it make sense they submitted a potato recipe. As with so many of these recipes, they didn't specify how many servings it made so I am guessing.

1 lb smoked sausage, cut into bite-sized pieces
1 tablespoon margarine
3 cups potatoes, diced
1/2 onion, chopped
2 cups water
2 tablespoons parsley
1 egg yolk
1/2-1 cup milk
1/2 cup flour
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In large Dutch oven melt margarine.
  • Brown the sausage and drain off all but 1 tablespoon of dripping.
  • Add all other ingredients except egg yolk, flour and milk.
  • Bring to a boil and simmer until potatoes are tender.
  • Mix yolk and flour until pea-size and crumbly.
  • Add to soup, stirring constantly.
  • Cook for one to two minutes.
  • Add milk and heat.
  • Serve immediately.

This recipe was submitted to the cookbook by Eva Smith. The printed version of this recipe makes me giggle because there is a typo where the hot dogs are called 'hot gods'. Eva didn't specify serving yield, so I am guessing.

2 tablespoons butter
1 large onion, sliced
1 1/2 cups macaroni, uncooked
1 teaspoon salt
1 cup water
1 lb hot dog
1 green pepper
2 (16 ounce) cans tomatoes
1 cup American cheese, grated

Steps:

  • Melt butter in Dutch oven.
  • Cut hot dogs in half and then into small pieces.
  • Simmer onion, pepper and hot dogs in butter for about 10 minutes or until brown.
  • Sprinkle macaroni over top.
  • Add salt, tomatoes and water.
  • Cover; bring to boil.
  • Reduce heat and simmer, stirring occasionally, until tender (about 12 minutes).
  • Stir in cheese and simmer until cheese melts.

  • Sift together sugar and cocoa.
  • Add the cheese and butter mixture, vanilla and nuts and mix well.
  • Spread into a buttered 9 x 13 - inch pan.
