Homemade Bagel Chips image

This tasty little recipe goes from counter to oven to service in less than 20 minutes, and it's all homemade!

2 bagels (seasoned or unseasoned)
2 tablespoons olive oil (or vegetable oil)
1 teaspoon salt (optional if using seasoned bagels)

Steps:

  • Preheat oven to 350°F.
  • Slice a bagel in half and then slice each half into ⅛" strips.
  • Spread bagel slices on a baking sheet and brush with oil. If using unseasoned bagels sprinkle with salt or other seasonings as desired.
  • Bake for 10 minutes or until lightly browned and crisp.

3 day old bagels
⅓ cup olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
¼ cup freshly grated Parmesan cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a baking sheet with olive oil.
  • Slice bagels into 1/8 inch thick rounds using a serrated knife. Arrange them in a single layer on the greased baking sheet. In a small bowl, stir together the olive oil, garlic, Italian seasoning, and Parmesan cheese. Use a spoon or pastry brush to apply the flavored olive oil to the bagel chips. If you start to run out of the mixture, you can add a little bit more oil without sacrificing any flavor. Season the chips lightly with salt and pepper.
  • Bake for 15 to 20 minutes in the preheated oven, or until the chips are lightly browned. Remove from the oven and cool. The chips will become crispier as they cool.

4 plain bagels
1/4 cup olive oil
2 cloves garlic, peeled and smashed
1/2 teaspoon creole seasoning

Steps:

  • Preheat the oven to 300 degrees F.
  • Line 2 baking sheets with parchment paper.
  • With a sharp knife, very carefully slice the bagels as thinly as possible, getting 8 to 10 slices per bagel.
  • Spread in 1 layer on the prepared sheets.
  • Heat the oil in a small saucepan over medium heat.
  • When oil starts to get warm, about 1 minute, remove from the heat and add the garlic and Essence.
  • Let sit until the garlic perfumes the oil, about 10 minutes.
  • Remove the garlic from the oil.
  • With a pastry brush, lightly brush the oil on the bagel chips.
  • Bake until golden brown.
  • Turn and bake on the second side until just crisp, about 5 minutes.
  • Remove from the oven and cool on wire racks.

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix oregano, garlic powder, and basil in a small bowl. Pour olive oil into a separate bowl. Brush bagel slices with olive oil on both sides; wipe any excess oil from pieces using a paper towel. 4 plain bagels
1/4 cup olive oil
2 cloves garlic, peeled and smashed
1/2 teaspoon Essence, recipe follows
Creamy Garlic and Vegetable Spread, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
1 (8-ounce) package cream cheese, softened
1/4 cup sour cream
1 1/2 teaspoons minced garlic
2 ounces sun-dried tomatoes, softened in hot water, drained and chopped
3 tablespoons chopped black olives
2 tablespoons chopped chives
1/2 teaspoon fresh lemon juice
Salt, to taste

Steps:

  • Preheat the oven to 300 degrees F. Line 2 baking sheets with parchment paper.
  • With a sharp knife, very carefully slice the bagels one at a time as thinly as possible, for 8 to 10 thin slices per bagel. Spread in 1 layer on the prepared sheets.

  • In a bowl, cream together the cream cheese and sour cream. Add the remaining ingredients and mix well. Adjust the seasoning, to taste.

Anyone who has set foot in New York City can tell you that everything bagels are where it's at. These crispbreads can be made up to 2 weeks ahead of gifting, and look beautiful in a cellophane bag tied with a big red bow.

Yield 40 to 60 crispbreads

2 cups all-purpose flour, plus additional for dusting
2 cups rye flour
1 tablespoon dark brown sugar
2 teaspoons baking powder
1 teaspoon salt
1 stick butter, melted
1/2 cup sesame seeds
1/3 cup poppy seeds
1/4 cup dried minced garlic
1/4 cup dried minced onion
1/4 cup coarse salt
1 large egg

Steps:

  • For the crispbread: Preheat the oven to 400 degrees F.
  • In a mixer on low speed, combine the flours, sugar, baking powder and salt. Pour in the melted butter, then slowly pour in 1 1/2 to 2 cups water, 1/4 cup at a time, until a soft, sticky dough forms.
  • Dust the counter and rolling pin well with flour, and roll the dough into a rectangle about 1/4-inch thick.
  • For the topping: In a small bowl, mix together the sesame seeds, poppy seeds, garlic, onion and coarse salt. Whisk together the egg with 2 tablespoons water and brush a thin layer over the crispbread dough. Sprinkle the topping mixture evenly over the top. Use a wheeled pizza cutter or pie crimper to cut the dough into medium-sized rectangles (it's okay if the shapes are irregular). Using a spatula, carefully transfer the crispbreads to a lightly floured baking sheet (they won¿t spread, so it's fine to leave little room between them). Using a fork, lightly prick the surface of each of the crispbreads.
  • Bake in the center of the oven until the edges become golden brown, 10 to 15 minutes. (Bake time will vary depending on the size and thickness of the crackers, so keep an eye on them!) Once golden, allow to cool 5 minutes, then move to a wire rack until completely cool. Package in clear cellophane bags tied with decorative ribbon.

Steps:

  • Refrigerate bagels for 1 hour. Cut into 1/4-in. slices. Place on an ungreased baking sheet. Combine butter and garlic salt; brush over bagel slices. , Bake at 325° for 15-20 minutes or until lightly browned. Cool on a wire rack. Store in an airtight container.

4 tablespoons butter
1 -4 clove garlic, minced,as many as you like (1-4 is a good start for most people)
1 1/2 large bagels, sliced into 1/8 inch rounds (For Gluten-Free 2 Multi-Grain Bagels from Kinnikinnick)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large saute' pan, melt butter over medium heat.
  • Stir in garlic; cook and stir for 1 minute.
  • Add bagel slices, and toss to coat.
  • Spread on a baking sheet.
  • Bake for 15 minutes, or until crispy and dry.
  • Check frequently to prevent burning.
