BAKED ASPARAGUS
Serve this Baked Asparagus recipe as a simple side dish. All it takes is olive oil, salt, pepper and the heat of your oven.

- Preheat oven to 400 degrees F.
- Place asparagus in a large plastic bag. Drizzle half the olive oil over the asparagus, seal the bag and shake until asparagus is coated evenly with the olive oil. If necessary, add only enough of the remaining olive oil to coat the asparagus. Place the asparagus in a single layer on a cookie sheet, season with salt and pepper. Bake until tender or crunchy depending upon your preference, about 12 to 20 minutes.
- Tips: (Shortcut chef) Toss asparagus with oil, salt and pepper as directed below and store in refrigerator until you're ready to bake it off. Get into the habit of spending 5 to 15 minutes prepping tonight or tomorrow's dinner during the day and you will be eating in more than out. The weight will come off quicker with home cooked healthful meals and you know it.
- Tip: From mom's lips to your ears: You forgot to tell them to snap off the woody bottoms. Tell em to hold asparagus, one at a time, in their hands near the cut end and snap it like kindling. Mother Nature saw to it that the asparagus breaks in just the right spot, save the ends for stock.
- Morph: Serve one other simple veggie side and a piece of oven baked fish such as salmon and dinner is all done. Cook off extra asparagus and throw it into a frittata, polenta, or pasta later in the week.
- If the Queen's coming for dinner, toss cooked asparagus with fresh lemon, plate and garnish with thin curls of Parmesan.
- Tip: Asparagus starts losing its sweetness the minute it's cut, therefore, as always, look for the freshest stalks possible. Skins should be smooth and bright colored with tightly formed heads.
CRUNCH CRAZY ASPARAGUS SPEARS
Steps:
- Preheat the oven to 425 degrees F.
- Prepare the asparagus by trimming off the tough woody stem.
- Set up a breading station by whipping the egg whites and mayonnaise together (the mayonnaise helps the whites stick to the asparagus). Sprinkle with some salt and pepper.
- In a separate, dish add the panko, Parmesan, Italian seasoning and paprika. Sprinkle with salt and pepper and mix. Dip each asparagus spear in the egg wash and then coat evenly in the seasoned panko breadcrumbs. Place the spears on a wire rack over a baking sheet and lightly drizzle with some olive oil (this will help them crisp up).
- Bake until golden and crispy, 15 to 17 minutes. Serve immediately.
PANKO CRUSTED ASPARAGUS
Nice change from from french fries that makes you feel like you're eating healthy. :) Very subtle flavor that pairs nicely with pork or chicken.

- Trim ends off asparagus and cut into 3rds (about 1 1/2 to 2 inches long).
- Blanch asparagus in slightly boiling, salted water for 2 to 3 minutes until it begins to get tender.
- Transfer to a bowl of ice water to stop the cooking. Then drain on a clean kitchen towel.
- Set out a breading station with 3 shallow bowls or pie pans.
- In the first add the flour seasoned with salt and pepper.
- In the second one whisk the eggs. You may add a touch of milk or water.
- In the third bowl add the panko.
- Heat about an inch of oil in a large skillet.
- Toss asparagus in flour, then egg, then panko.
- Fry until golden brown.

- Preheat oven to 425 degrees F (220 degrees C). Set a cooking rack over a baking sheet.
- Whisk egg whites, mayonnaise, salt, and black pepper in a bowl until thoroughly combined. Mix panko crumbs, Parmesan cheese, Italian seasoning, and lemon peel together in a shallow bowl or on a piece of waxed paper.

I love crunchy fries and love panko bread crumbs. So I came up with a idea for a coating for crispy crunchy fries today when I was working with panko breading. Ingredients can be mixed up with your favorite seasonings. Also can be deep fried as well as baked.

- Preheat oven or deep fryer to 350'.
- Add flour onto wax paper or a bowl and set aside.
- Combine in a bowl or pan, panko breadcrumbs,salt,pepper,parmesan cheese, and seasoning salt. Set aside.
- Combine in another bowl or pan, eggs and whipping cream or milk. Set aside.
- Cut potato into potato wedges or regular french fry shape. (I leave the potato peeling on).
- Dip fries into flour then into egg mixture and then into breadcrumb mixture.
- Place on a lightly greased baking sheet and baked for 30 minutes or until done.
- Turn halfway through baking.
- NOTE: If frying -- add coated fries to deep fryer and fry 10-15 minutes or until browned and tender.

PARMESAN PANKO CRUSTED BAKED GREEN BEAN FRIES

- Heat oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper or a silicone mat.
- In a small baking dish (room for the beans to roll around), stir together the Panko bread crumbs, parmesan cheese, garlic powder, salt, and pepper. Crack eggs into a shallow dish and whisk along with 2 tablespoons water.
- Working with three or four beans at a time, dip the beans into the egg, then roll in the crumbs, turning and rolling to coat. Gently lay beans on the baking sheet in a single layer.
- Evenly drizzle olive oil on top of fries.
- Bake for 15-20 minutes, until tender and golden brown.
- Squeeze a little lemon juice over the beans if you'd like and sprinkle with additional salt, if desired. Serve immediately.

- 1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper or brush foil lined pan lightly with oil. In a medium dish gently whisk egg whites. {Reserve the yolks for another purpose}
- 2. In another medium sized bowl add Panko, flour, grated Parmesan, and a pinch of salt and pepper, stir.
- 3. Roll a few of the asparagus in the egg whites, drain off a bit of excess and then roll in the panko/Parmesan to coat. Place on the prepared pan and repeat with the remaining asparagus.
- 4. Pop into the preheated oven and bake for 15-20 minutes flipping the asparagus over half way through. Continue to bake until the outside is lightly golden. Let cool for a few minutes before serving
