Zest from 2 limes, finely shredded
3 limes, juiced
4 garlic cloves, thinly sliced
1 piece (2 inches) ginger, peeled and julienned
1 medium red onion, halved and thinly sliced
2 mild to spicy red chiles, halved
4 fillets (6 ounces each) black bass, halibut, or striped bass
4 heads baby bok choy (or 1 large head, quartered)
1/2 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
8 sprigs fresh cilantro

Steps:

  • Preheat oven to 450 degrees. Mix lime zest and juice, garlic, ginger, onion, and chiles in a medium bowl. Fold four 20-inch pieces of parchment in half lengthwise. Unfold, and place 1 fillet and 1 head bok choy along each crease. Rub both with 2 tablespoons oil, and season with salt and pepper. Top each fillet with some onion mixture and 2 sprigs cilantro.
  • Fold parchment over fish, making small overlapping folds along edges and sealing with a paper clip. Place on rimmed baking sheets. Roast until parchment puffs, 10 to 12 minutes. Carefully cut packets, avoiding escaping steam, and serve.

Tender, flavor-packed fish en papillote with green peppers, tomatoes, and a light lemony sauce, all cooked together in parchment parcels. I used cod fillet in this recipe, but any fish fillet that (no thicker than 1 inch) such as halibut, trout, snapper, or even salmon should work.

1 1/4 lb cod fish fillet ((1-inch thick) cut into 4 pieces)
Kosher salt and black pepper
1/2 tomato (thinly sliced into 4 rounds)
½ green bell pepper (cored, thinly sliced into 4 rounds)
½ lemon (thinly sliced into rings)
Handful pitted green olives (optional)
¼ cup extra virgin olive oil
Juice of ½ lemon
1 shallot (chopped)
2 garlic cloves (chopped)
1 tsp oregano
1 tsp paprika
½ tsp cumin

Steps:

  • Heat the oven to 425 degrees F.
  • Season the fish with kosher salt and pepper on both sides.
  • Prepare the sauce. Place the olive oil, lemon juice, shallots, garlic and spices in a small mixing bowl or measuring cup and whisk to combine.
  • Prepare 4 large pieces of parchment paper (about 12 inches or so on each side). Fold the parchment pieces down the middle to mark two halves.
  • Assemble the pouches. Place each fish fillet on the bottom half of a parchment piece. Spoon 2 tablespoons of the prepared sauce over the fish. Add 1 lemon slice, 1 tomato slice, and 1 bell pepper slice on top.
  • Fold the top half of the parchment paper over the fish and veggies and go around to fold and secure each piece of parchment around the fish and veggies creating a well-wrapped pouch.
  • Place the fish pouches on a large baking sheet. Bake on the middle rack of your heated oven for 12 to 15 minutes or until the fish is fully cooked and flakes easily.
  • To serve, leave the fish and veggies in their own closed parchment pouches and transfer each pouch to a serving plate.

1/2 red onion, julienned
1 zucchini, julienned
1 large carrot, julienned
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 (4-ounce) sole fillets, hake, flounder or other white fish
1 lemon, thinly sliced, seeds removed
8 sprigs fresh thyme
4 pats butter
1/4 cup white wine

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together the onion, zucchini, carrot and garlic. Adds the oil, season with salt and pepper, to taste, and toss to combine. Put each fish fillet in a large square of parchment paper and season with salt and pepper, to taste. Arrange the vegetables on top, dividing evenly. Top the vegetables with 2 lemon slices, 2 sprigs thyme, a pat of butter and 1 tablespoon white wine, layering in order. Fold the parchment paper around the edges tightly in 1/4-inch folds to create a half moon shape. Make sure you press as you crimp and fold to seal the packets well, otherwise the steam will escape. Arrange the packets on a baking sheet. Bake until the fish is cooked through, about 12 minutes, depending on the thickness of the fish. To serve, cut open the packets and serve directly in the parchment on a plate or remove the fish to the plate using a spatula, being sure you don't leave the juices behind.

4 6-ounce cod fillets (or another firm-bodied fish, such as salmon,flounder, trout, or halibut)
1/4 cup Land O Lakes® Butter with Canola Oil
2 garlic cloves (minced)
2 tablespoons chopped fresh parsley (plus additional for serving)
1 small or 1/2 large shallot
½ teaspoon kosher salt (plus additional for seasoning)
¼ teaspoon ground black pepper
1 small lemon
4 cups lightly packed tender salad greens (like spinach, arugula, radicchio, or even mixed greens)
12 cherry tomatoes (halved)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 425 degrees F.
  • In a small bowl, add the Land O Lakes® Butter with Canola Oil, garlic, parsley, shallot, 1/2 teaspoon salt, and pepper. Zest the lemon right into the bowl (reserve the whole lemon). With a fork, mash the butter with canola oil to smoothly combine all of the ingredients. Cut the whole lemon into thin slices (you will need 8 slices total for the recipe).
  • Assemble the Packets: Tear off 4 squares of parchment that are at least 12 inches on each side. Lay the sheet flat on a work surface. Place 1 cup of salad greens in the center of a sheet, leaving space at the top and bottom. On top of the greens, place 1 fish fillet so that it runs vertically top to bottom. Lightly sprinkle the fish with salt. With the back of a small spoon, spread one-quarter of the butter mixture on top of the fish. Lay 2 slices of lemon on top of the butter mixture and scatter 6 tomato halves around the fish.
  • Fold the Parchment Packets: Lift the right and left sides of the paper up and towards the center, directly above the fish. Touch the two sides together and tightly roll them, folding as you go, until you reach the fish. Now, roll and crimp the top and bottom ends, rolling them towards the counter, away from the center of the fish. When you reach the end, tuck the end underneath the fish. Place the packet on a rimmed baking sheet, using the weight of the fish to hold the ends in place (you don't want the packet to come unsealed as it bakes). Repeat with remaining three packets. Reserve any remaining lemon slices for serving.
  • Place in the oven and bake for 12 to 15 minutes, until the fish is fully cooked through and flakes easily with a fork. Serve warm with reserved lemon slices and additional fresh parsley as desired.

¾ cup basmati rice
1 cup water
1 teaspoon salt
1 bay leaf, optional
1 cinnamon stick, optional
2 white fish fillets, cod, haddock etc., from sustainable sources
½ cup coriander stalk, finely chopped
⅛ cup red onion, finely chopped
½ cup coriander, finely chopped
½ teaspoon ginger, grated
½ teaspoon garlic, minced
2 tablespoons light soy sauce
2 tablespoons sesame oil
1 lime, juiced

Steps:

  • Preheat the oven to 200˚C (400˚F)
  • Add all the rice ingredients in a small saucepan.
  • Bring to a boil, then turn down to a very low simmer before covering with a tight-fitting lid.
  • Cook for 15 minutes. While the rice is simmering, prepare the fish.
  • Take 2 large sheets of baking paper, about 20-30 cm (8-12 inches). Fold in half and cut out a heart shape.
  • Place a piece of fish on the 1 side of the heart, top with half of the coriander stalks and half of the red onions.
  • Fold the paper in half and double fold all round to seal in the fish, a bit like a pasty.
  • Place on a baking tray and bake in the oven for 8 minutes. Once the fish is in the oven remove the rice from the heat and set aside for 5 minutes more. This will further steam the rice, making it soft and sticky.
  • Meanwhile prepare the dressing. Combine all the ingredients for the dressing, mix well.
  • Serve with salads or seasonal vegetables.

You can also just eat the fish by itself. When serving the dish, do not unfold the bag, just rip it open on its side and open it up enough to eat from the bag. This keeps all the juices and flavor in one place, and it looks nice.

4 (4 ounce) fillets tilapia
salt and ground black pepper to taste
1 large tomato, chopped
3 cloves garlic, finely chopped
4 fresh basil leaves, chopped
1 ½ teaspoons capers, drained
4 teaspoons lemon juice
¼ cup butter, divided
1 cup white wine
1 tablespoon butter, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a baking sheet so that the bottoms of the packets will brown when baked.
  • Prepare 4 sheets of parchment paper by folding each sheet in half and placing a tilapia fillet centered onto one side of the fold of each sheet. Season the tilapia with salt and black pepper. Top the fillets with equal amounts of tomato, garlic, basil, and capers. Sprinkle lemon juice over the fillets. Place 1 tablespoon butter atop the fish. Drizzle white wine over the fillets.
  • Roll up the sides of the paper first, then the top, leaving 1/2-inch space along one edge; fold to seal. Grease the bottoms of the packets with 1 tablespoon butter and arrange on the baking sheet.
  • Bake in preheated oven until the fish flakes easily with a fork, 15 to 20 minutes.

2 -12 squares parchment paper
extra virgin olive oil or olive oil flavored cooking spray
8 ounces white fish fillets, 4 ounces each (such as sole or snapper)
kosher salt, to taste
fresh ground black pepper, to taste
2 ounces dry white wine
2 lemon slices
zest of one lemon
1 tablespoon butter (optional)
2 sprigs dill or 2 sprigs about 1/2 teaspoon dried dill
16 thin asparagus spears

Steps:

  • Preheat the oven to 375 degrees, F.
  • Fold each square of parchment in half and cut out a heart shape. (You have all done this before-in school when you made Valentine cards.).
  • Open each heart and brush lightly with extra virgin olive oil or spray with olive oil spray.
  • Sprinkle both sides of fish with salt and pepper; set aside.
  • Wash asparagus and break off and discard the woody ends.
  • Lightly spray olive oil on the asparagus and toss with a pinch of kosher salt and pepper and the lemon zest.
  • Divide the asparagus in half; put half of the asparagus on each of the hearts, just to one side of the center of each heart.
  • Put one piece of fish on top of each bundle of asparagus.
  • Top with one sprig of dill (or half of the dried dill), a slice of lemon and either ½ of the butter or a light drizzle of olive oil.
  • Splash half the wine on top of each piece of fish.
  • Now, to wrap up these packets: fold the top of the heart over the fish and asparagus.
  • At the top end of the heart, away from the point, fold up both edges (top and bottom) and crease well.
  • Move down about ½ inch and fold up the edges, overlapping your first fold. Continue folding and creasing all around the parchment heart until you get to the point.
  • Fold and crease the point twice.
  • You now have successfully wrapped your fish en papillote--yeah!
  • Place the packets side by side on a baking sheet, making sure the packets aren't touching.
  • Bake in the center of the oven until the packets are well puffed and the fish is cooked, about 10-12 minutes.
  • To serve, put a packet on your sweetheart's plate, place in front of her, and with a dramatic flourish and a "watch out for the steam," carefully slice the packet open with a sharp knife.
  • You watch out, too-the steam will be very hot.

2 (8-ounce) swordfish fillets, all skin removed
1 tablespoon olive oil
1/2 medium plantain, peeled and julienned
1 medium or 2 small carrots, peeled and julienned
1/2 medium zucchini, julienned
1 medium tomato, seeded and chopped
2 tablespoons hoisin sauce
1 1/2 cups diced pineapple, fresh or canned
Salt and freshly-ground pepper, to taste
1 tablespoon butter, melted
Fresh thyme sprigs for garnish
1 cup fresh, frozen or canned diced pineapple
1/2 cup diced red bell pepper
1 scallion, finely chopped
2 tablespoons chopped cilantro
1 lime, juiced
2 teaspoons olive oil
Salt and freshly ground black pepper to taste

Steps:

  • Rinse fillets in cold water and pat dry. Preheat the oven to 400 degrees. On a clean dry work surface, fold a piece of parchment about 16-inches long in half. Cut 1/2 a heart shape with the fold in the center, so that when the paper is opened, you have a full heart shape. Repeat with another piece of parchment. Place the parchment hearts on a baking sheet. Brush entire surface of each heart with olive oil. On the right 1/2 of each heart, place half of the plantains and 1/4 of the carrots, zucchini and tomato. Place fillets on top of vegetables and brush with the hoisin sauce. Sprinkle diced pineapple equally over each fillet. Lay the remaining julienned vegetables over the fillets. Season with salt and pepper. Fold the left 1/2 of the parchment heart over the fish, and starting from the top of the heart, fold the paper over itself, creasing and rolling until you come to the point of the heart. Twist the point tightly to secure the pouch. Brush the outside of the parchment hearts with the melted butter. Put in the oven and bake 10 minutes. Remove from the oven. Let stand 1 minute. Place the pouch on a plate. Slice along curved edge with a sharp knife and lift the paper to reveal the swordfish. Garnish with thyme sprigs and serve immediately with pineapple salsa.;
  • Combine all ingredients in a small bowl, mixing well. Chill. Serve with swordfish papillotes;

1 square of kitchen parchment or aluminum foil, large enough to make a loose packet around the fish fillet
1 bluefish fillet
1 teaspoon grated lemon rind
1 teaspoon roughly chopped capers
Freshly ground black pepper
Watercress for garnish

Steps:

  • Preheat oven to 450 degrees.
  • Use about a third of the olive oil to smear on the parchment or foil. Place the fillet on the oiled surface, and sprinkle the rest of the oil on top. Strew the lemon rind and capers over the top, and sprinkle with freshly ground pepper to taste.
  • Draw the sides and ends of the paper or foil up over the fish to form a loose packet. Crimp the edges together to make a tight seal.
  • Place the fish on a tray or cookie sheet. Place in the oven, and bake for 10 minutes. Serve the whole packet on a dinner plate; diners open their packets at table. Garnish with watercress.

To wrap fish in parchment paper will protect the against the high heat. The steam can still escape, but the fluids and the flavours are kept inside. You can use almost any fish with this technique, but I would suggest to use whole fish. Serve the fish still wrapped in paper and "open" it on the table. A burst of wonderful flavours will escape. Serve it with some bread to dip up the wonderful flavoured juices.

1 (1 lb) sea bass (gut and scales removed)
3 sprigs fresh rosemary (about 5 to 6 inches long)
2 garlic cloves
1/2 teaspoon black peppercorns
1 tablespoon olive oil
1 tablespoon butter
2 lemon slices (optional)
salt
olive oil, for parchment paper

Steps:

  • Preheat oven (390° F, 200° C).
  • Pepare a parchment paper large enough to wrap the fish. Spread a little of the olive oil where you will put the fish on.
  • Crush the black peppercorns a little in a mortar and pestal, but it should be coarse though.
  • Remove from one rosemary sprig, the leaves. You can chop them, but I prefer to leave the small leaves as they are.
  • Clean the fish and brush both sides with olive oil. Salt to taste (inside and outside).
  • Put 2 sprigs of rosemary into the cavity and also add a small piece of butter. If you like, put 2 slices of lemon into the cavity too.
  • Sprinkle a little of black pepper and rosemary leaves onto the parchment paper and then place the fish on it.
  • Cover the fish with the rest of black pepper and the rosemary leaves.
  • Squash the garlic cloves (do not peel them) and place them on top of fish. Cut the butter into small pieces and arrange on top of fish too.
  • Wrap the parchment paper around the fish to make a package. Fold over the edges to seal the package.
  • Brush a little of the olive oil over the paper. This will protect it from burning.
  • Put the package on a baking tray and bake for about 25 minutes.
  • Serve the fish hot in the package.
  • NOTE: use smaller fish for this recipe.
