Steps:
- Preheat oven to 450 F.
- Spray large baking sheet with oil cooking spray.
- Cut zucchini into slices, (about 1 1/2 inches by 3/4 inch).
- Toss zucchini in a bowl with the olive oil.
- Mix dry ingredients in a plastic bag.
- Place zucchini, a handful at a time, in the plastic bag, and shake to coat.
- Bake 20 minutes.
- Turn zucchini, bake another 10 to 15 minutes, or until golden brown.
- Serve with Creamy Horseradish Dip recipe#79910 or your favorite dip.

BAKED ZUCCHINI STICKS
Steps:
- Preheat the oven to 425°F. Spray 2 large baking sheets with cooking spray and set aside.
- Cut each zucchini into 16 equal size sticks about 3-inches long and 1/2-inch thick.
- In a small bowl, beat the egg whites and season with salt and pepper. In a medium shallow bowl, combine the breadcrumbs, Romano cheese, garlic powder and mix well.
- Dip zucchini sticks into the egg whites then into the bread crumbs, a few at a time and coat well.
- Place the breaded zucchini sticks in a single layer on the prepared baking sheets and spray with more oil on top. Bake for about 22-25 minutes, or until golden brown. Serve with 1/2 cup marinara sauce for dipping if desired.
- Preheat the air fryer 400F. Air fry in a single layer, in batches, 12 to 14 minutes, turning halfway until golden.

Steps:
- Preheat oven to 400 degrees F.
- Spray a cookie sheet with cooking spray.
- Place bread crumbs, cheeses, garlic powder, oregano, basil, parsley in ziploc bag; shake well to combine.
- Set aside.
- Cut each zucchini lengthwise into 8 pieces; cut each piece in half horizontally.
- Beat egg and milk in a shallow bowl.
- Dip each piece of zucchini in egg mixture then bread crumb mixture.
- Repeat until all of the sticks are coated; place them on prepared cookie sheet.
- Bake for 10-15 minutes or until brown and tender.
- Serve with warm spaghetti sauce or ranch dressing.

- Preheat oven to 400ºF (220ºC).
- Grate zucchini into a medium bowl.
- Transfer grated zucchini into a large bowl and add parmesan cheese, garlic powder, pepper, red pepper flakes, salt, and egg. Mix together.
- Pour the mixture onto a small towel and wring the excess fluid from mix.
- Place a piece of parchment paper on a baking sheet and spread mixture evenly into a square about a ½-inch (1cm) thick.
- Bake for 35-40 minutes or until middle has thickened.
- Remove from oven and spread cheddar and mozzarella cheese over top .
- Place back in the oven at 350ºF (180ºC) for 10 more minutes or until cheese melts and is bubbling.
- Let cool for 5 minutes, then cut.
- Serve with marinara, ranch, or any sauce of your choosing!

- Cut zucchini crosswise in half, then cut each piece into 1/4-inch-thick matchlike sticks. Add cheese to coating mix in shaker bag; shake gently to combine. Whisk egg in medium bowl.
- Add zucchini, in batches, to egg; toss until evenly coated. Use tongs to add 1/4 of the zucchini to coating mix in shaker bag; close bag, then shake to evenly coat zucchini. Spread onto rimmed baking sheet sprayed with cooking spray. Repeat with remaining zucchini.

- Heat oven to 475°. Spray cookie sheet with nonstick cooking spray or line with parchment paper.
- In small bowl, combine Bisquick mix, cornmeal, salt, pepper and Italian seasoning.
- In another small bowl, beat egg. Dip zucchini slices into egg mixture; then in Bisquick mixture. Place on prepared cookie sheet. Spray zucchini with nonstick cooking spray.

- Preheat oven to 350 degrees F (175 degrees C). Spread olive oil on a large baking sheet.
- Mix water and soy flour together in a bowl to form a thick, pancake-like batter.
- Stir bread crumbs, herbes de Provence, garlic powder, salt, pepper, and cayenne pepper together on a shallow plate.
- Dip zucchini spears into the batter. Roll in bread crumb mixture to coat. Place spears cut-side down on the prepared baking sheet, all facing the same direction.
