Roasting turns the starch into sugar in these delicious green beans coated with a vinegar and honey mixture. Mmm...mmmmm! Adapted from Cook's Illustrated magazine.

1 lb green beans
1 medium red onion, cut in 1/2-inch thick wedges
2 tablespoons olive oil
salt and pepper
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon fresh thyme leave, minced
2 medium garlic cloves, thinly sliced
1/3 cup walnuts, toasted and chopped

Steps:

  • If you would like softer roasted green beans, you may steam them about 5 minutes before roasting.
  • Combine balsamic vinegar, honey, thyme and garlic in a small bowl and set aside.
  • Adjust your oven rack to the middle postiion; heat oven to 450*F. Line a baking sheet with foil; spread beans on the baking sheet along with the onion wedges. Drizzle with oil. Using your hands, toss to coat evenly. Sprinkle with 1/2 teaspoons salt, toss to coat, and distribute in an even layer. Roast 10 minutes. Remove baking sheet from oven. Using tongs, coat beans and onion evenly with vinegar/honey mixture; redistribute in an even layer. Continue roasting until onions and beans are dark golden brown in spots and beans have started to shrivel, 10 to 12 minutes longer. Adjust seasoning with salt and pepper and toss well to combine. Transfer to a serving dish, sprinkle with 1/3 cup toasted and chopped walnuts. Serve and enjoy!

1 lb green beans, stem ends snapped off
1 tablespoon olive oil
salt and pepper
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon fresh thyme, minced
2 garlic cloves, thinly sliced
1/2 medium red onion, cut into 1/2 inch wedge
1/3 cup walnuts, chopped and toasted

Steps:

  • Preheat oven to 450 degrees. Line rimmed baking sheet with aluminum foil. Spread beans and onions on baking sheet. Drizzle with olive oil. Coat evenly. Sprinkle with 1/2 teaspoon of salt, toss to coat and distribute in an even layer. Roast for 10 minutes.
  • While roasting, combine balsamic vinegar, honey, thyme and garlic slices in a small bowl.
  • After beans and onions have roasted for 10 minutes, remove from oven. Drizzle vinegar and honey mixture over beans and onions. Put back in the oven and continue to roast until onions and beans are dark golden brown in spots and beans have started to shrivel, about 12 to 15 minutes longer. Adjust seasoning with salt and pepper. Transfer to a serving bowl. Sprinkle with toasted chopped walnuts.

Green beans and red onion are tossed with balsamic vinegar, honey, thyme and garlic, then roasted in the oven, which develops the caramelization to the onion, and gives the green beans both great flavor and texture. Then topped with toasted walnuts, a deliciously crunchy and nutty touch!

Steps:

  • Place the oven rack to the middle. Preheat the oven to 450℉ (230℃). Line a large baking sheet with the tin foil. Spread the green beans and onion wedges on the baking sheet. Drizzle olive oil over the beans and onions, sprinkle salt and black pepper to taste, toss to coat by hands. Arrange the green beans and onions in an even single layer. Roast 10 minutes. Meanwhile add the vinegar, honey, thyme, and garlic in a small bowl, mix until well combined. Remove the baking sheet from the oven. Pour the vinegar mixture over the beans and onions, with tongs stir the green beans and onions until evenly coated. Arrange the beans and onions in a even single layer again. Return the baking sheet to the oven, and keep roasting until the beans and onions are deeply golden brown in spots and have started to shrivel, about 11 minutes. Season with more salt and freshly ground black pepper if needed. Place onto a serving platter. Top with toasted walnuts. Serve and enjoy!

1 1/2 lbs green beans, trimmed and cut diagonally into 2-inch pieces

Steps:

  • Put oven rack in middle position and preheat oven to 450°F Oil a 13- by 9-inch baking pan. After peeling onions, trim root ends, leaving onions whole, then quarter onions lengthwise. Put onions in baking pan, then drizzle with oil and vinegar, tossing to coat. Arrange onions with a cut side down and sprinkle with salt and pepper.
  • Roast, uncovered, turning over once and basting with pan juices twice during baking, until deep golden, about 30 minutes. Add water to pan and roast until onions are tender and caramelized, about 20 minutes more. Transfer onions with pan juices to a large bowl.
  • While onions are roasting, cook beans in a 5- to 6-quart pot of boiling salted water, uncovered, until crisp-tender, about 5 minutes. Drain beans in a colander, then add to onions and toss. Season with salt and pepper.

2 pounds fresh green beans, washed and trimmed
2 tablespoons butter
1 cup chopped walnuts
2 tablespoons walnut oil
2 tablespoons minced fresh parsley
ground black pepper to taste
salt to taste

Steps:

  • Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
  • Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.
  • Melt butter or margarine with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.
