EASY BULGOGI (KOREAN BBQ BEEF)



Easy Bulgogi (Korean BBQ Beef) image

Most Bulgogi recipes call for crushed pear. This is for tenderizing the meat. My boyfriend's Korean mother says Coca-Cola® can also be used for the same purpose. This recipe uses very thin-sliced meat so tenderization isn't necessary. Sugar is used instead.

¼ yellow onion, thinly sliced
2 green onions, chopped, dark green parts separated from white and light green parts
⅓ cup soy sauce
3 tablespoons white sugar
2 tablespoons toasted sesame seeds
3 cloves garlic, minced
1 tablespoon sesame oil
¼ teaspoon Korean red pepper flakes
¼ teaspoon minced fresh ginger
⅛ teaspoon ground black pepper
1 ½ pounds beef sirloin steak, cut very thin using kitchen shears
1 teaspoon honey, or to taste

Steps:

  • Combine yellow onion, white and light green parts of green onions, soy sauce, sugar, sesame seeds, garlic, sesame oil, red pepper flakes, ginger, and black pepper in a bowl until marinade is well mixed. Add steak slices to marinade; cover and refrigerate, 1 hour to 1 day.
  • Heat a skillet over medium heat. Working in batches, cook and stir steak and marinade together in the hot skillet, adding honey to caramelize the steak, until steak is cooked through, about 5 minutes. Garnish bulgogi with green parts of green onions.

1/4 pear, grated
3 garlic cloves, grated
2 tablespoons soy sauce
1 teaspoon crushed red pepper flakes or 1 teaspoon chili sauce
1 tablespoon grated peeled ginger
1 tablespoon light brown sugar
1 tablespoon toasted sesame oil
2 tablespoons vegetable oil, divided
1 teaspoon kosher salt, to taste
1/4 cup sliced scallion (for serving)

Steps:

  • Combine pear, garlic, soy sauce, pepper flakes, ginger, sugar, and sesame oil in a bowl and whisk to combine.
  • Using a sharp knife, slice meat into very thin strips.
  • Add beef and marinade to a large releasable bag, seal bag, and squish everything around until the meat is coated.
  • Toss in the fridge for 8 hours.
  • When ready to cook, let the meat sit on the counter and come to room temperature.
  • Heat one tablespoon of oil in a frying pan set over medium high heat.
  • Cook half the meat to desired doneness and set aside.
  • Repeat last two steps with the rest of the meat.
  • When ready to eat, sprinkle with green onions.

1/4 cup low-sodium soy sauce
2 tablespoons sugar
1 tablespoon Asian (toasted) sesame oil
1 tablespoon mirin (Japanese sweet rice wine)
1/4 Asian pear, coarsely grated (about 1/4 cup)
1/2 medium onion, coarsely grated (about 1/2 cup)
2 cloves garlic, minced (about 1 teaspoon)
1/2 teaspoon fresh ginger, peeled and finely grated
1 teaspoon sesame seeds, toasted , plus additional for garnish
1/4 teaspoon freshly ground black pepper
1 pound beef sirloin, trimmed of excess fat and thinly sliced
2 tablespoons vegetable oil
8 red leaf or bibb lettuce leaves, for serving
1 cup cooked white rice , for serving
1/2 cup kimchi, for serving
1 cup fresh enoki mushrooms, trimmed
4 teaspoons hot bean paste

Steps:

  • In large bowl, whisk together soy sauce, sugar, sesame oil, mirin, pear, onion, garlic, ginger, sesame seeds, and pepper. Let marinade stand 30 minutes at room temperature, then add beef and toss to coat. Refrigerate, covered, 1 hour.
  • In large skillet over moderately high heat, heat oil. Remove beef from marinade, draining it very briefly over bowl to remove excess liquid, and then cook until browned and done medium-well, 6 to 7 minutes.
  • Remove beef from heat and serve by filling each lettuce leaf with about 2 tablespoons Korean sticky rice, small handful of beef, 1 tablespoon kimchi, about 8 enoki mushrooms, and about 1/2 teaspoon hot bean paste. Serve immediately.

1 Asian pear, peeled and seeded
1 kiwi, peeled
3 tablespoons soy sauce
3 pounds beef top sirloin, thinly sliced
¾ cup brown sugar
3 (1 inch) pieces fresh ginger root, peeled
10 slices fresh ginger root
5 cloves garlic, minced
3 ½ tablespoons chili oil
2 tablespoons sesame oil
2 tablespoons honey
2 teaspoons red pepper flakes
⅛ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Place Asian pear, kiwi, and soy sauce in a blender; puree until smooth. Transfer puree to a large resealable plastic bag. Add beef slices; shake to coat thoroughly.
  • Pour beef mixture into a large bowl; add brown sugar, peeled ginger root, ginger slices, garlic, chili oil, sesame oil, honey, red pepper flakes, salt, and black pepper. Cover with plastic wrap and let marinate in the refrigerator, at least 3 hours.
  • Preheat an outdoor grill for high heat and cover grate with aluminum foil.
  • Remove beef from the bowl, discarding marinade, and cook, covered, on the preheated grill until browned, about 10 minutes. Turn beef slices and cook until second side is browned, about 5 minutes more.
