1 medium English cucumber
1 package (3 oz) cream cheese, softened
2 tablespoons mayonnaise or salad dressing
1/4 cup chopped fresh basil leaves
2 tablespoons finely chopped red onion
2 teaspoons grated lemon peel
1 cup frozen cooked crabmeat, thawed, flaked
2 tablespoons capers, if desired
Small basil leaves or chopped fresh basil, if desired

Steps:

  • Score cucumber lengthwise with tines of fork if desired. Cut into 36 (1/4-inch) slices.
  • In small bowl, beat cream cheese with electric mixer on low speed until creamy. Beat in mayonnaise until well blended. Stir in chopped basil, onion, lemon peel and crabmeat.
  • Spread or pipe about 1 teaspoon crabmeat mixture on each cucumber slice. Sprinkle with capers. Garnish with basil leaves.

2 tablespoons chopped fresh basil
1 pound campari tomatoes, seeded and minced
2 large seedless cucumbers, peeled and minced
1 large red onion, minced
3 cloves garlic, minced
1 teaspoon salt, or to taste
1 teaspoon cracked black pepper, or to taste

Steps:

  • Run spinach and basil through a food processor until finely chopped.
  • Mix spinach mixture, tomatoes, cucumbers, red onion, garlic, salt, and pepper together in a large bowl with an air-tight lid. Cover bowl and refrigerate salad, 8 hours to overnight.

1 (8-ounce) can tomato sauce
1/3 cup fresh lime juice
2 cups diced Roma tomatoes
1/2 cup diced cucumber
1/2 cup diced jicama
1/3 cup diced white onion
1/4 cup freshly chopped cilantro leaves
2 teaspoons Worcestershire sauce
1 teaspoon hot sauce, or more, to taste
Salt and freshly ground black pepper
Cooking spray
Olive oil
1 baguette, sliced crosswise into 1/2-inch thick rounds or ovals
2 peeled garlic cloves

Steps:

  • For the ceviche:

4 tomatoes, peeled, seeded, and quartered
2 garlic cloves, crushed
1 small cucumber, peeled, seeded, and quartered
1/2 yellow onion, peeled and quartered
1 green bell pepper, seeded and quartered
1 pinch cayenne
1 pinch cumin
1 teaspoon rice wine vinegar
3 tablespoons olive oil
salt anf fresh ground white pepper
1/2 lb fresh lump crabmeat, picked over to remove any shell and cartlidge
1 teaspoon fresh basil

Steps:

  • Place the tomatoes, garlic, cucumber, onion, bell pepper, cayenne, cumin, vinegar, and oil in a blender or food processor fitted with the metal blade and puree on high for 1 minutes, or until the mixture reaches the consistency of tomato soup.
  • Season with salt and pepper, cover, and chill in the refrigerator for at least 1 hour.
  • Place four glass serving bowls in the freezer to chill.
  • Refrigerate the crabmeat until ready to use.
  • When the soup is thoroughly chilled, remove from the refrigerator and stir well.
  • Pour equal portions into the four chilled bowls.
  • Spoon an equal portion of crabmeat into the center of each and sprinkle with the minced basil.
  • Serve immediately.
