- Add the rice and cook, stirring, until it is lightly browned and smells nutty, about 5 minutes.

- Remove the pan from the heat, uncover, and lay a folded kitchen towl over the pan, and cover again to hold the towel in place. Let the rice rest for about 5 minutes.
- Remove the lid and towel, fluff the rice with a fork, and serve.

QUICK ONE POT VEGETABLE RICE
This one-pot vegetable rice is a kids' absolute favorite dish. A simple and easy recipe that can be served on its own, or with the main course. The best part is, it takes only 15 minutes to cook, uses only one pot, and is a great healthy rice dish for the family.

Steps:
- If using basmati or Asian rice it's best to wash and soak for 30 mins before cooking. Drain and set aside. Pro tip - soaking the rice makes for even cooking as well as makes it light and fluffy.
- In a skillet, saute' onions, garlic, and ginger in oil for about 2 minutes until translucent.Pro tip - Use a wide skillet for cooking rice to ensure even cooking.
- Add cinnamon, bay leaves, carrots, peas, and green beans - saute a minute more.Pro tip - we want the veggies to coat with the oil. If using frozen veggies do not cook for too long.
- Next, add the rice and cook on medium heat for two minutes so the rice is well coated with the oil.Pro tip- sauteing the rice will coat every grain with oil and lightly toast it. This makes very fluffy rice.
- Add stock, fresh herbs - and stir well. Season with salt and pepper. Bring to a boil, then lower the heat to a low simmer and cover with a lid.
- Cook on low for 15 minutes undisturbed. After 15 minutes - switch the heat off and let the rice rest for 10 minutes.Pro tip - the rice will continue to cook in the residue heat making it just right.
- When ready to serve - fluff the rice with a fork. Garnish with more fresh herbs. I like to serve it on its own with raita (recipe below) or along with the main course.

Steps:
- In a wide pan with a lid (like this one, this one, or this one), melt butter over medium-high heat. Add onion and cook, stirring occasionally, until translucent and just starting to brown, about five minutes. While onion cooks, rinse rice in a fine-mesh sieve until the water runs clear and shake out any excess water.
- Add garlic to pan and cook, stirring, until very fragrant, about a minute. Add rice and stir to coat with butter, then cook, stirring once or twice, for two minutes. Pour in stock and give it all a good stir. Bring to a boil over high heat. Then cover pan, lower heat to maintain a gentle simmer, and cook until broth is absorbed, 15 to 20 minutes.
- Off the heat, place a clean kitchen towel between the pan and the lid to absorb excess steam and let pilaf rest for 5 to 10 minutes. Sprinkle with chives and almonds if using and serve.

- Place the tomatoes, shallots, garlic, feta, lemon zest, half the dill and olive oil in a high-sided casserole dish (about 20x30cm). Season liberally with salt and pepper and toss to coat all the ingredients. Evenly place small knobs of the butter on top, using all 50g, and then place in the oven for 1 hour until the vegetables are soft and have taken on some colour.
- Remove the dish from the oven and increase the temperature to 240℃/gas mark 9/220℃ fan. Without stirring anything, sprinkle the raw rice evenly over the vegetables. Top with 1/2 tsp salt and plenty of pepper, then pour over the boiling water. Seal the dish tightly with foil (you don’t want any steam to escape) and place in the oven for 25 minutes, until the rice is cooked.
