FANCY AND BEAUTIFUL TOMATO SALAD
Very loosely inspired by Lebanese fattoush, this is one of those dishes where you want to use only the ripest, most fragrant tomatoes in the bunch.

Steps:
- Gently toss heirloom and cherry tomatoes and 1¼ tsp. salt in a medium bowl to combine and set aside.
- Finely grate lemon zest into a small bowl, then grate in garlic; set lemon aside.
- Heat oil in a small saucepan or skillet over medium until just starting to shimmer. Add za'atar and cook, stirring occasionally, until fragrant and slightly darkened in color, about 1 minute. Add lemon zest and garlic, cook 10 seconds, then remove from heat. (You're looking to cook off the raw flavor of the garlic without losing the brightness of the lemon.) Transfer za'atar oil to a heatproof measuring cup.
- Place pita chips in a large bowl and drizzle 2 Tbsp. za'atar oil over; season with salt. Mix well with a rubber spatula, aiming to coat chips without breaking them into too many pieces.
- Cut reserved lemon in half and squeeze juice from 1 lemon half into a small bowl. Stir in honey and remaining ½ tsp. salt. Gradually add remaining za'atar oil, stirring constantly until emulsified. Taste dressing and add more lemon juice, honey, or salt if needed.
- Add feta, basil, mint, and reserved tomatoes to bowl with chips and drizzle dressing over; toss gently to combine.
- Spoon salad onto platter, making sure to leave no juices behind. Eat fast for crunchy chips or let sit for a crispy-gone-soggy experience.

HALLOUMI, CHICKPEA, AND TOMATO SALAD WITH MINT
Halloumi is the hot new cheese! Well, really, it's ancient, not new--but it is best fried or grilled, so "hot" is fair, isn't it? This fresh salad combines halloumi with tomatoes, mint, and chickpeas, Mediterranean-style.

BEAUTIFUL TOMATO AND MINT SALAD
Good enough to serve on its own, with plenty of good bread and decent white wine. Perfection satisfaction and simplicity all rolled into one. You'll never want to use basil again! The only specification is that you use the best fresh tomatoes you can find, preferably on the vine and deep deep red in colour. I prefer to chill the tomatoes to make for easier slicing, then allow the finished dish to come to room temp. Thank you sophie grigson from whom I adapted this recipe.

19 TOMATO SALADS YOU’LL LOVE EVEN MORE THAN CAPRESE
From epicurious.com
- Caprese Salad. While we encourage you to look beyond the classic Caprese when you're thinking about tomato salads, at some point in the summer, you're bound to make one.
- Oregano-Marinated Tomato Salad. Marinating sliced tomatoes in salt, pepper, olive oil, and fresh oregano intensifies their flavor and brings out their rich juices.
- Charred-Peach Panzanella With Pickled Pepper Vinaigrette. We're not sure there's a better summer dinner than this tomato and peach panzanella. It's the added details that really wow: you'll start by crisping some bacon, then char the peaches (and some bread) in the rendered fat.
- Watermelon Tomato Salad With Goat Cheese and Corn Nuts. Crunchy Corn Nuts make any salad better—but they're particularly perfect when adding a salty pop to this juicy tomato and watermelon salad.
- Late Summer Tomatoes With Fresh Herbs. Sometimes the simplest things are best, especially when you're talking about tomato recipes. This easy dish brings in parsley, mint, chives, and fresh dill to complement the ripe tomatoes.
