BERRY SABAYON GRATINEE

8 egg yolks
3/4 cup sugar
1 vanilla bean
1 cup Moscato d'Asti or other sparkling wine
Pinch salt
3 1/2 cups fresh raspberries, blueberries, blackberries, or sliced strawberries
Powdered sugar

Steps:

  • In a large glass bowl, whisk together the egg yolks and sugar. Split the vanilla bean in half lengthwise and scrape the seeds with the back side of a pairing knife. Add vanilla bean seeds to the egg yolk mixture and whisk to combine. Add wine, a little at a time, and whisk to combine. Add a pinch of salt and whisk again.
  • Set bowl over a pan of simmering water and whisk vigorously and constantly until the sauce is thick and fluffy, about 10 minutes.
  • Preheat the broiler.
  • Place 1/2 cup berries in the bottom of 6 shallow individual gratin dishes or ovenproof bowls. Spoon an even amount of the sabayon over each dish. Sprinkle the remaining berries evenly over the dishes. Place the dishes on a sheet pan and place on the top shelf of the oven under the broiler. Broil until the sabayon is golden brown, about 1 to 2 minutes. Sprinkle with powdered sugar and serve immediately.

  • Toss 1 quart sliced strawberries with 1 tablespoon sugar in a bowl; let macerate 10 minutes. Put 5 egg yolks, 1 egg white, 3 tablespoons sugar, 1 tablespoon marsala wine, 1/2 teaspoon vanilla and a pinch of salt in a large heatproof bowl. Set the bowl over a saucepan of barely simmering water (do not let the bowl touch the water) and whisk vigorously over medium to medium-high heat until thick and creamy, 8 to 10 minutes. Steps:

  • For the Sabayon:
  • Wash, zest and juice the orange - set the juice and zest aside.
  • (With an electric beater or by hand) Whip the whipping cream and the icing sugar, until a firm peak forms.
  • In a separate bowl (heat-proof bowl), whisk together the eggs, egg yolk, orange juice and zest. Slowly add in the sugar, whisking continuously until the mixture starts to foam.
  • Place the bowl into a stove-top bain-marie (double boiler), and keep whisking until the mixture doubles (or even triples) in volume and reaches a creamy consistency (this takes 2 to 3 minutes). Make sure the consistency is creamy enough (it should coat the whisk) as this means the eggs are cooked properly.
  • Remove from the heat and keep whisking to bring the sabayon down to room temperature (this takes 3 to 4 additional minutes). Once at room temperature, gently fold in the whipped cream with a rubber spatula.
  • For serving:
  • Wash and dry the berries. Chop them if needed (ie. strawberries). Scatter them evenly on the bottom of your serving vessels and gently pour the sabayon on top.
  • Sprinkle with a light dusting of icing sugar, and place under the broiler for 30 seconds to 2 minutes (depending on the power of your broiler) until you get a light golden hue. If you have a torch blower, this will work great too.
  • Serve immediately.

1 cup blueberries
1 cup raspberries
1 cup strawberries (thickly sliced)
2 tbsp baking sugar (regular granulated sugar works as well)
1 tbsp Cointreau (orange liqueur)
1 tbsp freshly squeezed orange juice
t tsp orange zest
4 egg yolks
⅓ cup baking sugar (regular granulated sugar works as well)
⅓ cup white wine (Marsala or Moscato d'Asti are traditional, water or lemon-lime soda works as a substitute)
1 tbsp Cointreau (or freshly squeezed orange juice)
½ tsp salt

Steps:

  • Preheat oven to 425°F.
  • Place cleaned berries in a large bowl. Add sugar, Cointreau, orange juice and orange zest and toss together.
  • Pour on a baking sheet and place in preheated oven for 10-15 minutes until the fruit is just softened. While berries are roasting, make the sabayon.
  • Mix yolks and sugar to combine and become frothy.
  • Add wine, Cointreau, and salt.
  • Mix well and place over simmering water, making sure water is not touching the bottom of the yolk mixture. Constantly whisk the mixture to incorporate air and bring it to 160°F. The sauce will become thick. If unsure, check with an instant-read thermometer.
  • Remove sauce from heat.
  • Place prepared berries in individual serving dishes and top with a generous amount of sabayon sauce. If desired, brûlée the top by sprinkling on a little sugar and quickly torching or setting under the broiler.
  • Garnish with mint and enjoy!

PEACHES AND BERRIES LAYERED WITH BOURBON SABAYON



Peaches and Berries Layered with Bourbon Sabayon image

Sabayon makes a luscious sauce to layer between, or mound over fresh fruit. It makes for an elegant dessert and perfect for an intimate dinner with friends or family. Sabayon with fruit tastes best when it is assembled right before serving. The sabayon and raspberry sauce can be made ahead and kept chilled in the refrigerator. Peeling and slicing the peaches will take some time, and should not be done too far in advance. Once that is complete, assembly is simple and quick. For this recipe, I selected bourbon as my spirit of choice because it pairs nicely with peaches. You can substitute Marsala or a sweet sparkling wine if you prefer. Any alcohol beverage like rum, brandy, fruit brandy, whiskey or wine should work. When selecting your spirit keep in mind how it pairs with what your are serving the sabayon with. Slivered basil leaves are also added for extra panache. Mint leaves are nice additions as well. Included is a raspberry sauce recipe adapted from, Seasonal Fruit Desserts by Deborah Madison. She makes this sauce with blackcap raspberries, or black raspberries. If you can find them, their distinctive flavor is delicious. Fresh or frozen berries can be used to make the sauce. My sabayon recipe is inspired by and adapted from Peaches and Raspberries Layered with Honey Sabayon in Seasonal Fruit Desserts by Deborah Madison.

4 egg yolks
2 TB 27 g granulated sugar
3 TB 45 ml Bourbon
1 TB 15 ml fresh squeezed orange juice
1/2 cup 125 ml heavy cream
zest from half an orange
2 cups 500 ml fresh or frozen raspberries
2 TB 27 g granulated sugar
1/3 cup 75 ml water
Lemon juice to taste (around 1 teaspoon)
6 ripe peaches
2 TB basil (thinly sliced - chiffonade (optional or substitute with fresh mint leaves))
1- 6 oz 175 g basket raspberries
1- 6 oz 175 g basket blackberries
1/4 cup 60 ml raspberry sauce

Steps:

  • Prepare a medium saucepan and fill with about an inch of water. Measure the bourbon and orange juice and keep in a measuring cup close to your work area. Add the egg yolks to a bowl that will easily fit over your saucepan, but will not touch the water. Add the sugar to the egg yolks placing the sugar to the side of the yolks.
  • Turn on the heat to medium and place your bowl over your saucepan. Vigorously whisk the egg yolks and sugar together in the bowl. Continue to whisk the eggs until it gets light and frothy. Slowly add the bourbon and orange juice and continue to whisk. The eggs should double in volume, become lighter and creamy looking. You do not want to scramble the eggs, so keep the temperature low and constantly whisk. You can move the bowl on and off the heat while you are whisking to control the temperature and make sure your water is not boiling.
  • The eggs are done when they have doubled in size, and there is no liquid left in the bowl, and everything is frothy. About 10 - 15 minutes, depending on the shape and size of your bowl and temperature. A recommended temperature when the sabayon done, is around 150F (65C) on an instant read thermometer.
  • Remove the bowl with the eggs off the heat and continue to whisk for another five minutes to cool.
  • Cover the frothy eggs with plastic wrap and place in the refrigerator.
  • Whip the heavy cream and zest from half an orange until soft peaks are formed. Fold the whipped cream into chilled sabayon. Cover with plastic wrap and refrigerate until ready to assemble.
  • Add the raspberries, sugar and water to a small saucepan. Bring the fruit to a boil and stir until the sugar is dissolved. Cook the berries at a high simmer for 3 minutes. Pour the raspberry liquid over a fine mesh strainer, catching the sauce in a bowl underneath. Press the pulp through the strainer. This will take some time, as the pulp clings to the seeds, but keep at it and you will be rewarded with a delicious berry sauce. The back side of a flat spoon is a great tool to press the pulp through the mesh. Scrape off any pulp from the underside of the strainer and add to the bowl. Discard the seeds. Cover and chill the sauce until needed. Will last 3 days in the refrigerator.
  • Fill a large stock pot with water and bring the water to a boil. Partially fill a large bowl with ice and water. Set aside near your stove.
  • Lightly score the peaches with a crisscross pattern across the pointed south pole of the fruit.
  • When the water is boiling, add the peaches and boil for 30 - 40 seconds. If your peaches are large and not as ripe, they will need the longer time. Quickly remove the peaches from the boiling water and put them in the ice bath to stop the cooking.
  • Once cooled, peel away the skin from the peach flesh starting at the crisscross center. The skin should easily peel away. Use a sharp paring knife to assist you at any stubborn parts.
  • Cut the peaches in half and slice into 1/2 inch wedges and place in a bowl. Add the basil and gently mix together. Cover with plastic wrap and refrigerate until you are ready to serve the sabayon.
  • You have at least two choices for how to present the sabayon. Use a tall wine glass or flute, and layer the sabayon between layers of fruit and raspberry sauce. Or, fill each glass with fruit and raspberry sauce, then top off the fruit with sabayon. Either way looks inviting and tastes delicious.
  • Assemble the sabayon right before you serve it for dessert.
  • Best eaten the day it is made.

BUTTERMILK PANNA COTTA WITH BERRIES AND VANILLA SABAYON

3/4 teaspoon powdered unflavored gelatin (1/4-ounce envelope)
1/2 cup heavy cream
1/4 cup sugar
1 vanilla bean, split lengthwise
1 cup well-shaken buttermilk
For panna cotta
1/2 cup heavy cream
3 large egg yolks
2 tablespoons sugar
2 tablespoons sweet dessert wine, such as sauterne
1 tablespoon orange liqueur such as Grand Marnier
To serve
1/2 cup mixed fresh berries such as blackberries, blueberries, and raspberries
1/4 cup fresh strawberries, hulled and quartered
Special Equipment
4 (4- to 6-ounce) ramekins, kitchen blowtorch (optional)

Steps:

  • Make panna cotta
  • In small bowl, sprinkle gelatin over 3 tablespoons water. Let stand until gelatin softens, about 1 minute.
  • In heavy, medium saucepan over moderate heat, whisk together cream and sugar. Scrape in seeds from vanilla bean; add bean. Heat, whisking occasionally, until sugar dissolves, about 2 minutes. Remove from heat and whisk in gelatin and buttermilk. Strain through fine-mesh sieve into medium, nonreactive bowl, discarding vanilla bean. Cover surface with plastic wrap and let rest at room temperature 15 minutes.
  • Divide mixture among ramekins and refrigerate until set, at least 8 hours or overnight.
  • Make sabayon
  • In medium bowl, using electric mixer or whisk, beat cream until stiff peaks form.
  • In large nonreactive metal bowl, using electric mixer or whisk, whisk together egg yolks and sugar until light and pale yellow, about 1 minute. Set bowl over saucepan of barely simmering water and whisk in wine. Cook, whisking constantly and being careful not to let mixture steam, until mixture thickens and instant-read thermometer inserted into center registers 140°F, about 5 minutes.
  • Remove bowl from saucepan and continue to whisk until mixture cools, 2 to 3 minutes. Fold in orange liqueur, then gently fold in whipped cream.
  • To assemble and serve
  • Using thin sharp knife, cut around inside edge of each ramekin to loosen. Dip bottom of 1 ramekin into bowl of very warm water 6 seconds. Place dessert plate upside-down atop ramekin and invert, gently lifting off ramekin to allow panna cotta to settle onto plate. Repeat to unmold remaining panna cottas.
  • Arrange berries atop and around each panna cotta and spoon sabayon over berries. If desired, use kitchen blowtorch to lightly brown sabayon and serve immediately.

SABAYON RECIPE

3 to 4 cups fresh mixed berries
1/2 cup simple syrup
1 tbsp culinary grade rosewater
zest from 1 lemon
4 egg yolks
1/3 cup sugar
1/2 cup Riesling or white zinfandel wine
1 tbsp culinary grade rosewater

Steps:

  • Pour the berries into a large bowl with the simple syrup, rosewater, and lemon zest. Gently stir everything together until combined.
  • Cover the bowl with a sheet of plastic wrap and refrigerate for 1 hour. About 20 minutes before serving, remove the bowl from the fridge.
  • In a stainless steel mixing bowl, whisk together the egg yolks and sugar until light pale in color. Pour in the the wine.
  • Create a double boiler by place the mixing bowl over a saucepan that has gently simmering water in it. Continuously whisk the egg yolk and sugar mixture until the mixture is hot and thickened. The mixture should coat a wooden spoon and look frothy.
  • Distribute the berries in small bowls or glasses with warm sabayon poured over it.

SABAYON WITH STRAWBERRIES

1 to 1 1/2 pounds fresh ripe strawberries (3 pints)
1 tablespoon sugar, plus more to taste
2 teaspoons freshly squeezed lemon juice, plus more to taste
For the sabayon
6 egg yolks
1 cup sweet Marsala wine or port, sherry, or Madeira
1/3 cup sugar, plus more to taste
Drops of freshly squeezed lemon juice (optional)
For the whipped cream (for the glazed version)
1/2 cup heavy cream
1 teaspoon sugar
Special equipment:
Special equipment: A large stainless steel or copper bowl, plus a larger bowl for holding (optional)
A large saucepan of simmering water
A balloon whisk
Dessert goblets or large martini glasses, or a medium gratin baking dish (4-cup volume) or individual gratin dishes (for glazed sabayon)

Steps:

  • Preparing the strawberries:
  • About an hour before serving the dessert, rinse the strawberries (stems on) and drain them on paper towels. Slice off the stems and halve or quarter the strawberries lengthwise, depending on size, into a bowl. Sprinkle over the sugar and the lemon juice; fold gently together to blend well. Taste a strawberry, add more sugar or lemon juice if needed, and set aside to macerate.
  • Whipping the sabayon:
  • If you want to serve the sabayon warm, make it at the last minute. If you want to glaze the sabayon under the broiler, or make it ahead of time to serve chilled, have ready a large bowl (larger than the one in which you whip the sauce) partly filled with ice cubes.
  • Whisk to blend the yolks, Marsala, and sugar in the stainless-steel bowl. Rest the bowl in the saucepan over hot water. Whisk constantly for 4 to 5 minutes or more to cook the sauce, until it has the consistency of lightly whipped cream. Clear the bottom of the bowl constantly with the whisk so that the eggs do not scramble, and adjust the heat as needed. Taste the sauce - the sabayon should never get so hot that you can't stick your very clean finger in it - and whisk drops of lemon juice or more sugar if you want. When thick, foamy, and tripled in volume, remove from heat. It can be served hot as is, tepid, or cool.
  • Serving:
  • Spoon a portion of strawberries - 1/2 cup or more - into each goblet or glass, and top with 1/3 to 1/2 cup of warm or cool sabayon. Or put the sauce in the glass first, then the strawberries.
  • Variation: Strawberries Glazed with Sabayon
  • Cool the sabayon to room temperature. Whip the cream and sugar until soft peaks form, and fold the cream into the sabayon with a rubber spatula.
  • Turn on the broiler. Spread the strawberries in the baking dish in one layer (or in individual dishes). Spoon the sauce over the berries so they are completely covered and set the dish under the broiler, 5 to 6 inches from the heat. With the door open - so you can watch carefully - broil for a minute or two, turning the dish as needed to glaze evenly, until the top of the sabayon is nicely browned and slightly crusted. Serve right away.
