BLUEBERRY OAT CAKE
This is my favorite blueberry recipe. Everyone in my family likes it, so I make it rather frequently. It's moist, nutritious and very easy to make.

- In a large bowl, beat the eggs, buttermilk, brown sugar and oil. Combine the flour, baking powder, baking soda, cinnamon and salt; gradually add to batter until blended. Fold in the oats, blueberries and walnuts if desired. , Transfer to a greased and floured 10-in. fluted tube pan. Bake at 375° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar.

BLUEBERRY AND OAT LOAF CAKE
This is a tasty snack that you can eat in the morning or afternoon. You can even have it for lunch or dinner, in case you are looking to lose weight.

Steps:
- Mix the Fresh Blueberry (1 cup) with 1/3 cup of All-Purpose Flour (1 1/3 cup).
- In a mixing bowl, add the Oats (3/4 cup), the remaining flour, Baking Powder (2 teaspoon), Egg (1), Salt (1/4 teaspoon), Milk (3/4 cup), Granulated Sugar (3/4 cup), and Oil (1/4 cup). Stir to mix.
- Fold in the blueberries.
- Spread the batter into a greased baking pan.
- Preheat the oven to 400 degrees F (200 degrees C).
- Put the batter in the oven. Bake it for 20-25 minutes, or until the pick comes out clean.
- Mix the Powdered Confectioners Sugar (1/2 cup) with the almond Almond Extract (1/2 teaspoon) and Milk (3 tablespoon) in a small bowl. Pour this over the warm cake then serve with fresh blueberries. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix flour, sugar, baking powder, and salt in a large bowl. Stir milk, oil, egg, and vanilla extract into flour mixture until batter is just blended. Gently fold blueberries into batter; pour into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes.

- Heat oven to 350 degrees. Grease bottom only of 9x5 inch loaf pan.
- Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, rolled oats, sugar, baking powder, baking soda and salt; mix well.
- In small bowl, combine milk, oil, vanilla, lemon peel and eggs; blend well. Add to dry ingredients; stir just until dry ingredients are moistened.
- Gently fold in blueberries. Pour into greased pan.
- Bake at 350 for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator.

- Preheat oven to 350 degrees. Butter and flour an 8-inch square metal baking pan, tapping out excess flour. Combine 1 cup oats and water and let stand until oats have softened, about 5 minutes. Meanwhile, whisk together flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
- Beat together butter, granulated sugar, and brown sugar in a medium bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Reduce speed to medium and beat in egg and vanilla until just combined, scraping down sides of bowl if necessary. Add flour and oat mixtures and beat on low speed until just incorporated. Fold in about half of berries.
- Spread batter in pan and sprinkle with remaining 3 tablespoons oats and sanding sugar. Scatter remaining berries evenly over top. Bake until a toothpick inserted in center comes out with moist crumbs attached, 40 to 45 minutes. Let cool on a wire rack 30 minutes; cut into squares.
BLUEBERRY LOAF CAKE
Blueberry loaf cake with cream cheese topping

- Heat the oven to 180C/160C Fan oven. Grease a 900g/2lb loaf tin then line the base and ends with grease proof paper.
- Put the butter, sugar, flour, eggs and vanilla extract into a large bowl and beat with an electric hand mixer for 5 minutes until pale and creamy - the mixture will be very thick.
- Spread one-quarter of the mix into the tin, then scatter over a third of the fruit.
- Carefully dot and spread another quarter of the cake mix on top, and scatter with another third of the fruit, repeat this step.
- Finally dot the rest of the cake mix over and gently spread with the back of a spoon.
- Bake for 1 hour until an inserted skewer comes out clean, then leave to cool.
- Mix the icing sugar and soft cheese to make the frosting then smooth onto the top of the cake. I normally start with 100g of soft cheese and add as much icing sugar as I think it needs.

The bread will be more firm after it has cooled completely.
