BLUEBERRY MOJITOS (PITCHER RECIPE)
These refreshing mojitos are perfect for a summer happy hour.

Steps:
- Place the sugar and the water in a small saucepan over medium heat. Bring to a boil, stir, and then remove from the heat. Let cool completely (put it in the refrigerator to speed this along). This is the simple syrup.
- Remove the mint from the stems. Slice three of the limes into eight sections each.
- Place the mint and the lime sections into a large pitcher. Use a pestle, wooden spoon, or meat mallet to crush the mint leaves and the limes. Make sure to crush each of the lime sections until they release their juice.
- Add the blueberries and crush those, too. It doesn't have to be perfect-some of the blueberries can still be whole.
- Pour in the rum and the simple syrup from step 1. Stir to combine. Refrigerate until ready to serve.
- When ready to serve, stir the club soda into the pitcher. Cut the remaining lime into eight wedges.
- Place ice in each individual glass and pour the blueberry mojito mixture over the top.
- Garnish with a lime wedge and more mint. Serve immediately.

BLUEBERRY GINGER MOJITO PITCHERS

- Peel and grate the ginger and add it, together with the sugar and cold water, to a saucepan. Bring it to the boil and stir until the sugar dissolves. Cover and let steep for 15 minutes. Strain and cool in the refrigerator when done.
- Add the blueberries, lime wedges and fresh mint leaves to the glass (or pitcher). Muddle with a wooden spoon so the blueberries are broken and the mint and lime release their juices and flavor. If assembling pitchers you can cover them at this stage and leave in the refrigerator until ready to serve.
- When ready to serve, add the simple syrup, vodka and top off with club soda. Give it a quick stir and then pour into glasses with ice cubes. Garnish with a handful of fresh blueberries and a sprig of mint.
- The recipe outlined below is for 2 tall glasses, but you can use the ratio to make pitchers (depending on how big your pitcher is double or quadruple the recipe).
- Combine the blueberries, mint leaves and lime wedges in the pitcher and muddle it in there with the back of a wooden spoon. When you are ready to serve add the vodka, ginger simple syrup and club soda. Stir and pour into glasses with a couple of ice cubes. Garnish each glass with some fresh blueberries and a sprig of fresh mint.
BLUEBERRY MOJITO

- Muddle together the mint and sugar in a cocktail shaker. Add the blueberries and lightly muddle. Add the rum, lime juice and some ice to the shaker and shake vigorously. Fill two tall glasses with ice, then pour 3 ounces club soda into each. Divide the rum mixture evenly between the glasses and stir gently. Garnish with a lime wedge, a few blueberries and a sprig of mint, and serve.
FRESH BLUEBERRY MOJITOS
Blueberry mojitos are simple to make and only require a few simple, fresh ingredients. If you cannot find fresh, sweet blueberries, thawed frozen berries work as a substitute.

- Add blueberries, lime juice, sugar and eight mint leaves to a cocktail shaker. Use the end of a wooden spoon or cocktail muddler to bash (or muddle) the mint into the lime juice and sugar. This releases oils from the mint, breaks up the blueberries and helps the sugar dissolve into the lime juice.
- Add rum, stir well, and then pour into a glass filled with ice, leaving about an inch of room then top with club soda. Serve with extra blueberries, mint leaves, and a lime slice.

MOJITOS BY THE PITCHER
I have served this to people who have sworn that they dislike mojitos and they love it. I believe it is the fresh ingredients and the use of sugar, instead of simple syrup, muddled together that makes this cocktail refreshing and delicious. It takes a little bit of work but the results are well worth it. Serve over ice.

- Chop each lime into six pieces and drop them into a two-litre jug. Add the sugar and squish the lime wedges with a muddler, or the end of a rolling pin. Keep crushing to get out all the juices.
- Pick the leaves off a mint spring and lay them on one of your hands. Clap the other hand on top to bruise the leaves ever so gently, then drop them into the jug. Repeat with the rest of the mint spring.
