CREAMY POTATO AND CORN SOUP



Creamy Potato and Corn Soup image

Easy, with a bit of spice. You can also use chicken base, should you prefer it.

4 potatoes, peeled and quartered
1 (14 ounce) can whole kernel corn
½ cup chopped onion
2 tablespoons butter
1 tablespoon beef base
1 teaspoon salt
¼ teaspoon red pepper flakes
⅛ teaspoon ground black pepper
water, as needed

Steps:

  • Combine potatoes, corn, onion, butter, beef base, salt, red pepper flakes, and black pepper in a saucepan. Pour enough water over the mixture to cover by 2 inches.
  • Bring the soup to a boil, reduce heat to medium-low, and simmer until the potatoes are soft, about 20 minutes.
  • Pour soup into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

Martha's recipe was inspired by a potato puree from the restaurant Eleven Madison Park.

Number Of Ingredients 8

3 pounds Russet potatoes, peeled and cut into 2-inch pieces
1 1/2 sticks unsalted butter
4 sprigs fresh thyme
2 cloves garlic, peeled and crushed
1 1/2 cups heavy cream
1/2 cup milk
2 teaspoons sea salt
Freshly ground white pepper

Steps:

  • Fill a large pot with about 2 inches water. Set steamer basket in pot (water should not come through the holes). Bring to a boil, and then reduce to a rapid simmer.
  • Add potatoes to steamer basket and steam until tender when pierced with a knife, 25 to 30 minutes.
  • Meanwhile, melt the butter in a medium saucepan over medium heat. Simmer, whisking occasionally, until the butter is deep golden brown, 5 to 10 minutes. Place the thyme and garlic in a fine mesh sieve lined with cheesecloth. Strain the butter over the garlic and thyme into a medium bowl, add cream, and whisk to combine.
  • Remove potatoes from steamer basket. Drain, and immediately press through a medium mesh sieve into a large bowl using a rubber spatula. Fold the cream mixture into the potatoes. Press mixture through a fine mesh sieve. Season with salt and pepper and serve immediately.

Reduce heat; cook and stir until potatoes are crisp-tender, 8-10 minutes., Stir in corn and cream-style corn. Transfer to an 8-in. square baking dish coated with cooking spray., In a small bowl, combine bread crumbs and butter; sprinkle over potatoes. Bake until golden brown and potatoes are tender, 45-50 minutes. Let stand 10 minutes before serving.

Kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the corn on a baking sheet and roast for 20 minutes. Let cool. Remove the husks and silk, and then slice the kernels off the cob. Combine the kernels and butter in a blender; blend until smooth. Add salt, pepper and lemon juice to taste.

Give this silky pureed soup a touch of elegance by topping it with corn kernels and fresh fennel fronds.

2 tablespoons olive oil
1 cup chopped sweet onion
1 cup chopped peeled potato
3 to 4 sprigs fresh thyme
1 bay leaf
1 medium clove of garlic, minced
Kosher salt and freshly ground black pepper
2 1/2 cups chicken broth
2 cups frozen corn kernels, plus more, thawed, for serving
1 cup chopped fennel, plus fronds, for serving
1/4 to 1/2 cup heavy cream, as desired

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring, until tender, 3 to 5 minutes. Add the potato, thyme, bay leaf, garlic, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and 1 cup water and bring to a simmer.
  • Add the corn and fennel and simmer until the vegetables are tender, about 20 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat and let cool at least 5 minutes. Remove and discard the thyme and bay leaf and carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
  • Stir in the heavy cream and reheat the soup if necessary. Adjust the consistency and seasoning with water, salt and pepper.
  • Serve hot sprinkled with corn kernels and fennel fronds.

3 1/2 cups corn kernels from 6 to 8 ears corn
8 to 10 ounces Yukon Gold potatoes
Salt to taste
2 small shallots, coarsely chopped
2 tablespoons unsalted butter
1/2 cup dry white wine
1/2 cup light chicken stock or vegetable stock
Bouquet garni of thyme, bayleaf and tarragon
2 tablespoons mascarpone, sour cream or light sour cream

Steps:

  • Cut corn from cobs, being careful not to get too close to the cob.
  • Peel potatoes, and slice about 1 inch thick. Place in pot with corn cobs, and cover with enough water to come an inch above the potatoes. Season with salt, and bring to a simmer. Gently cook potatoes until they are tender.
  • Meanwhile sweat shallots in butter for about 3 minutes. Do not let them color. Add corn kernels, and cook slowly for 2 minutes. Add wine, stock and bouquet garni, and cook kernels until they are tender enough to purée, a matter of a few minutes.
  • When potatoes are cooked, drain them thoroughly, and discard corncobs. Put potatoes through a ricer, and set aside.
  • When corn is tender, remove bouquet garni, and purée corn in a blender.
  • Measure out 1 cup of riced potatoes (do not mash down), and fold in 2 cups corn purée with mascarpone.
  • To serve with fish, make a mound in center of plate, and top with fish.

2 celery ribs, chopped
2 medium carrots, sliced

1 cup 2% milk
1 carton (32 ounces) chicken broth
1 pound potatoes (about 2 medium), peeled and cubed
1 can (8-3/4 ounces) whole kernel corn, drained
2 cups shredded cheddar cheese
1 tablespoon minced fresh parsley

Steps:

  • In a 6-qt. stockpot, heat butter over medium heat. Add celery, carrots, green pepper and onion; cook and stir 3-4 minutes or until onion is tender. Stir in flour and seasonings until blended., Gradually stir in milk. Add broth, potatoes and corn; bring to a boil. Reduce heat; simmer, covered, 15-20 minutes or until potatoes are tender., Stir in cheese until melted; remove from heat. Puree soup using an immersion blender. Or, cool slightly and puree in batches in a blender; return to pot and heat through. Stir in parsley.

For the puree:
5 fresh jalapeño chilies
1/4 cup olive oil
1 1/2 tablespoons fresh lime juice
1 tablespoon water
1 garlic clove, minced
1 cup packed fresh parsley leaves
For the chowder:
1 onion, chopped fine
2 ribs of celery, chopped fine
2 tablespoons vegetable oil
2 cups chicken broth
2 1/2 cups water
1 1/2 pounds boiling potatoes
1/2 pound ham steak if desired, cut into 3/8-inch cubes
4 cups fresh corn kernels including the pulp scraped from the cobs (cut from about 6 ears of corn)
2 teaspoons fresh thyme leaves, minced

Steps:

  • Make the puree:
  • Broil the jalapeños on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 20 minutes, or until the skins are blistered and charred. Transfer the jalapeños to a bowl and let them stand, covered tightly, until they are cool enough to handle. Wearing rubber gloves, peel the jalapeños, cut off the tops, and discard all but 1 teaspoon of the seeds. In a blender puree the jalapeños with the seeds, the oil, the lime juice, the water, the garlic, the parsley, and salt to taste. The puree may be made 3 days in advance and kept covered and chilled.
  • Make the chowder:
  • In a kettle cook the onion and the celery in the oil over moderate heat, stirring, until the celery is softened, add the broth, the water, the potatoes, peeled and cut into 3/8-inch cubes, and the ham, and simmer the mixture for 10 minutes. Stir in the corn and the thyme and simmer the chowder for 5 minutes, or until the potatoes are tender. In a blender or food processor purée 2 cups of the chowder and stir the purée into the remaining chowder.
  • Serve the chowder with a small dollop of the jalapeño and parsley puree swirled into it.

ANDOUILLE SAUSAGE AND CORN CHOWDER



Andouille Sausage and Corn Chowder image

This is a slightly spicy, smoky, hearty corn chowder. The recipe was given to me by a dear friend many years ago and the original source is unknown. I have adapted it to suit my family's tastes. If you prefer a thicker chowder, you can stir in a can of creamed corn. Serve this with cornbread or a crusty French loaf for a lovely meal, enjoy!

1 cup coarsely chopped onion
½ cup diced celery
¾ cup chopped green bell pepper

3 cups frozen corn kernels, thawed
2 bay leaves
2 teaspoons dried thyme
6 cups low-sodium chicken broth
3 Yukon Gold potatoes, cut into 1/2-inch cubes
1 cup heavy cream
salt and ground black pepper to taste
½ cup chopped cilantro

Steps:

  • Heat olive oil in a large pot over medium-high heat. Cook and stir onion, celery, green bell pepper, and red bell pepper in the hot oil until softened, about 5 minutes.
  • Stir garlic, cayenne pepper, and diced andouille sausage into the onion mixture; continue to cook and stir until the sausage is hot, 1 to 2 minutes more.
  • Fold corn kernels and bay leaves into the sausage mixture; season with thyme. Allow the mixture to simmer until the corn is warmed, about 1 minute.
  • Pour chicken broth into the pot; bring the mixture to a boil, reduce heat to medium-low, and cook at a simmer, stirring occasionally, about 30 minutes.
  • Stir potatoes and heavy cream to the pot, place a cover on the pot, and continue cooking at a simmer until the potatoes are tender, about 20 minutes.
  • Season the chowder with salt and black pepper.
  • Remove and discard the bay leaves.
  • Garnish with cilantro to serve.

1 1/4 cups plus 1 tablespoon water, divided
4 cups corn (from 8 ears), divided
1 1/2 teaspoons sweet Spanish smoked paprika
1/4 teaspoon chopped fresh thyme
1/2 pound heirloom or cherry tomatoes, chopped or halved

Steps:

  • Cook bacon in a heavy medium saucepan over medium heat, stirring occasionally, until browned and crisp. Transfer with a slotted spoon to paper towels to drain and reserve fat in pan.
  • Cook shallot with 1/4 teaspoon kosher salt in fat in pan over medium heat, stirring occasionally, until softened. Add wine and boil over high heat, stirring and scraping up brown bits, until reduced by half, about 3 minutes. Stir in potatoes, 1/2 cup water, and 1/2 teaspoon kosher salt and simmer, uncovered, stirring occasionally, until liquid is reduced by thouree quarters and thickened, about 10 minutes.
  • Meanwhile, purée 1 cup corn with 1 tablespoon water in a blender. Force thourough a fine-mesh sieve into a bowl, pressing hard on and then discarding solids.
  • Add remaining 3 cups corn kernels to potato mixture along with paprika, thyme, remaining 3/4 cup water, and remaining 1/4 teaspoon kosher salt and simmer, partially covered, stirring occasionally, until corn and potatoes are tender and most of liquid is evaporated, 10 to 12 minutes.
  • Remove from heat and stir in tomatoes, corn liquid, 1/4 teaspoon pepper, and kosher salt to taste. Serve sprinkled with bacon.

3 cups fresh corn kernels, about 6 ears
1/2 cup chopped yellow sweet pepper
2 tablespoons olive oil
1 medium red onion, chopped
1 small hot green chili pepper, seeded and finely chopped
2 garlic cloves, minced
1 cup low sodium vegetable broth or 1 cup low sodium chicken broth
1/4 cup chopped parsley
1/4 teaspoon ground cumin
salt & fresh ground pepper
2 cups fresh corn kernels, about 4 ears
1 cup very finely chopped cooked chicken
1 large egg, lightly beaten
1/2 cup milk
2 tablespoons butter, melted
1 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 cups all-purpose flour
1 teaspoon baking powder
cooking oil, for deep-fat frying
6 fresh cilantro stems (optional)
6 whole hot chili peppers (optional)

Steps:

  • PUREE:.
  • In a large skillet bring 2 cups lightly salted water to a boil; add 3 cups corn.
  • Return to boil; cover and cook until tender, about 3 minutes.
  • Drain; cool slightly.
  • In a food processor, puree corn with the yellow pepper.
  • In the same skillet heat olive oil; add onion, chopped chile, and garlic; cook over medium heat until onions are tender.
  • Add corn puree and broth; simmer, uncovered, over low heat for 15 minutes, stirring occasionally.
  • Add the parsley and cumin; season with salt and pepper to taste
  • Cover and set aside.
  • FRITTERS:.
  • Place 2 cups corn in a bowl; lightly crush with a potato masher.
  • Stir in chicken, egg, milk, butter, 1 teaspoon salt, and 1/4 teaspoon black pepper.
  • In another bowl combine flour and baking powder; stir into the chicken mixture just until moistened.
  • In a deep-fat fryer or large saucepan heat 2 inches of oil to 375°F
  • Drop scant 1/4 cup dough, a few at a time, into hot oil.**
  • Fry for 3 to 4 minutes, turning if necessary, until golden brown and cooked through.
  • Drain on paper towels; keep warm.
  • TO SERVE:.
  • Place puree on 4 plates; arrange fritters evenly atop.
  • Garnish with cilantro and whole peppers, if desired.
  • Serve warm.
  • **NOTE : Corn may pop and cause oil to spatter; watch carefully while frying these fritters.
